SUPER FOOD PROTEIN BARS



Super Food Protein Bars image

The combination of crunchy toasted seeds, creamy nut butter, chewy millet and dates make this protein bar both energizing and satisfying. There's no need to turn on the oven, this bar sets up in the freezer and can be stored there for up to 3 months, meaning you'll always have a healthy snack on hand.

Number Of Ingredients 16

2 cups puffed millet
1 cup mixed toasted seeds, such as sunflower, sesame and pumpkin seeds
1 cup mixed toasted seeds, such as sunflower, sesame and pumpkin seeds
1/2 cup ground flax seeds
1/2 cup quick-cooking oats
1/4 cup unsweetened shredded coconut
1/4 cup hemp seeds
2 tablespoons chia seeds
2 teaspoons maca root powder, optional
10 pitted medjool dates (about 1 cup)
3/4 cup almond or sunflower seed butter
1/4 cup raw cacao or cocoa powder
1/4 cup extra-virgin coconut oil
1/4 cup brown rice syrup
1 tablespoon vanilla extract
3/4 teaspoon sea salt

Steps:

  • Line a 13-by-9-inch pan with parchment paper and set aside. In a large bowl combine the millet, flax seeds, oats, coconut, hemp, chia and maca if using.
  • Roughly chop the dates and add to a food processor with the almond butter, cacao, coconut oil, brown rice syrup, 4 teaspoons water, the vanilla extract and salt, and blend until combined. Add to the dry mix and mix until completely combined. Press evenly into the prepared tray and freeze until completely cold and firm, 2 hours.
  • Remove and slice into 24 1-by-2-inch bars. Store in an airtight container in the freezer for up to 3 months.

3/4 cup(s) powdered milk

1/3 cup(s) raw chopped almonds
1/4 cup(s) dried cranberries
1 1/2 cup(s) brown puffed rice
6 tablespoon(s) sesame hemp seeds
2 tablespoon(s) organic cane sugar
2 tablespoon(s) flax, hemp, grape seed, or any organic oil
5 tablespoon(s) whole food protein powder (I use Warrior Food brand)

Steps:

  • Directions Combine peanut butter, honey and oil in medium-sized bowl until thoroughly mixed. Reserve 2 Tbs. non-fat milk powder and 2 Tbs. sesame/hemp seeds, combine in a separate bowl with 2 Tbs. sugar; set aside. Slowly mix the remaining non-fat milk powder, protein powder and sesame/hemp seeds into the almond butter dough. Fold in dried cranberries, brown puffed rice, and chopped almonds. put dough in a pan/baking sheet and flatten to 1/2 to 3/4 in. thick - you can add more non-fat milk powder if the dough is too sticky. I add more hemp seeds on the outside of my bars and cut them when solid. Store in the fridge or freezer (I put them on freezer paper in the fridge.. when they are cold, tear the paper and wrap them in smaller pieces to take with you!) cut into 12 bar shape pieces
