800 g cubed lamb ((good quality, don't go cheap on this or it'll be full of cartilage))
1 large onion
2 cloves garlic
1-2 tsp ají
1/2 tsp cumin
Salt
Pepper
1 cup beer
1/2 cup white wine
1/2 bunch largecoriander ((about 1 packed cup))
1 large white potato
1/2 cup green peas

Steps:

  • Peel and chop onion, peel and crush garlic.
  • Wash coriander and add stalks and all into blender. Add 1/2 cup white wine and blend until smooth.
  • Heat a large heavy bottomed lidded pan over medium heat. Once hot, add a little flavorless oil (such as avocado oil or sunflower seed oil).
  • Add chopped onion and garlic to hot oil and stir until onions are translucent.
  • Add ají, coriander wine, beer, cumin, salt and pepper and bring to the boil.
  • While bringing to the boil, peel potato and cut into 1/2" (1 cm) cubes.
  • Add cubed lamb and potato cubes to boiling broth and turn heat to high to get back to boiling again quickly.
  • Once boiling, reduce heat to low, cover and let cook for at least 45-60 minutes.
  • Add peas, season with more salt/pepper/ají to taste and stir well.
  • Serve over white rice.

1 bunch cilantro
A drizzle of olive, coconut, or vegetable oil
1 pound boneless lamb - stew meat is perfect!
1 medium red onion, diced
1 teaspoon garlic, minced
1 teaspoon ground cumin
2 teaspoons ají amarillo paste (see notes)
7-8 ounces beer (see notes)
1 cup beef, lamb, chicken broth or stock
1 teaspoon dried oregano leaves
1 cup diced carrot
1 cup frozen and thawed peas (see notes)
sea salt and fresh ground pepper

Steps:

  • Combine cilantro leaves (thin stems are fine) with about 1/2 cup broth or water in a blender or food processor. Purée until smooth.
  • Season cubed lamb with salt and pepper. Sear in the hot oil.
  • Add the onion, garlic, cumin and ají amarillo paste. Cook an additional 4-5 minutes until fragrant and onion softens.
  • Scoop into the slow cooker. Add cilantro purée, beer, broth or stock, oregano leaves, and diced carrots.
  • Cover and cook on "high" 3-4 hours or "low" 6-8 hours.
  • Add peas, season, and taste. Add additional broth or stock as needed. Return to "high" to heat peas through.
  • Garnish with chopped cilantro. Serve with salsa criolla, rice, boiled potatoes, and/or white beans.
  • Enjoy!

  • Enjoy!
  • My favorite side with Seco de Cordero is a simple mushy white beans. I use canned cannelini, but navy or northern are great too. Cook them in olive oil with some sautéed onion, garlic, cumin or oregano, salt and pepper. Use a potato masher to partially mash them.
  • Peruvians are likely to serve this lamb stew with boiled potatoes and white rice (kinda carb heavy!). Simple white rice is perfect!
  • I've not tried it, but I'm guessing quinoa would be a great side as well!
  • As you can see in the photo above, I topped my lamb stew with salsa criolla (my recipe minus the tomato). This would be fairly authentic!

2 lb lamb meat(shoulder or leg)
1/2 c vinegar
1 tsp cumin
3 clove garlic, minced
1/4 c vegetable oil
1 large red onion, chopped
1 medium aji pepper/jalapeño, chopped fine
4 Tbsp vegetable oil
1 bunch cilantro
1 bottle beer
1-2 c chicken/beef stock
5-6 medium yellow potatoes

Steps:

  • 1. Cut the meat into approximate 2 inch cubes.
  • 2. Mix the vinegar with the garlic, cumin, 1/4 cup of vegetable oil, and some salt and pepper. Pour over the meat. Let the meat marinate at room temperature for 30 minutes to an hour.
  • 3. Purée the cilantro (stems removed) with some water in a blender until you get a smooth paste.
  • 4. Heat the 3-4 tablespoons of oil in a large pot on high heat. Brown the meat on all sides. Remove the meat to a plate.
  • 5. Lower the heat and add the onion and aji pepper to the pot with the leftover marinade. Cook until soft and fragrant, about 5 minutes.
  • 6. Add the meat back to the pot along with the beer, the cilantro purée and the cup of stock. Cover and cook over low heat until the meat is tender, about an hour.
  • 7. Peel and quarter the potatoes and add them to the stew; continue to cook over low heat until potatoes are tender, about 30 minutes more, adding chicken broth if needed.
  • 8. Serve warm over rice.

PERUVIAN LAMB STEW SECO DE CORDERO

8 large cloves garlic
2 teaspoons coarse sea salt
I tablespoons ground cumin
1 teaspoon freshly ground black pepper
1/2 cup red wine vinegar
3 tablespoons olive oil
I (7 to 8 pound) lamb shoulder, bones and fat removed, cut into 2 1/2-inch chunks
3 jalapeno peppers, stemmed, seeded if desired, and finely chopped
4 medium onions, finely chopped
2 teaspoon coarse sea salt
I 1/2 cups beer
8 cups beef or chicken stock preferably homemade
6 large boiling potatoes, peeled and quartered
I bunch cilantro, leaves only, finely chopped

Steps:

  • In a mortar and pestle or food processor, pound the garlic, salt, cumin, and black pepper to a paste. Mix in the vinegar, and then blend in the olive oil. Transfer the mixture to a large shallow earthenware dish, and place the lamb in the marinade, turning to evenly coat all the chunks. Marinate at room temperature for 2 to 3 hours.
  • Remove the lamb from the marinade with a slotted spoon, reserving 1/2 cup of the marinade. In a large heavy casserole, heat the 3 tablespoons olive oil over high heat. Brown the lamb, turning with tongs to sear all sides evenly. This will take about 20 minutes (if the lamb does not fit all in one layer, brown in 2 batches, otherwise the meat will steam rather than sear). Transfer the lamb to a plate with a slotted spoon and set aside. Reduce the heat to medium-high and add the jalapenos, onions, and salt. Saute, stirring frequently, for about 10 minutes, or until the onions are golden. Add the beer and lower the heat so that the liquid is simmering. Cook for about 15 minutes, or until all of the beer has evaporated. Return the browned lamb, along with the accumulated juices from the plate, to the pan. Add the stock and stir to mix. Bring up to a boil, then reduce the heat and simmer the dish, covered, for about I hour and 20 minutes, or until the meat is tender.
  • Add the potatoes, cover the pan again and cook for about 20 minutes more, or until the potatoes are tender (you may need to add a little more stock or water to keep them from scorching). Add the reserved 1/2 cup of the marinade and the cilantro, stir to mix, and cook for 1 minute more. Serve from the casserole.

2 large carrots, sliced

4 fresh button mushrooms, sliced

½ cup beer
3 tablespoons Worcestershire sauce
1 large sprig fresh rosemary

Steps:

  • Heat oil in large skillet over medium-high heat. Add lamb and onions. Cook until lamb is brown and onions are soft, about 5 minutes. Transfer mixture to a slow cooker.
  • Add carrots, celery, mushrooms, potatoes, tomato paste, beef broth, beer, Worcestershire sauce, rosemary, salt, and pepper; stir to combine and close slow cooker.
  • Cook on High for 7 hours. Add peas and cook an additional 15 minutes. Season with salt and pepper.

ABGOOSHT (PERSIAN LAMB AND CHICKPEA STEW)



Abgoosht (Persian Lamb and Chickpea Stew) image

Iran's most beloved and ubiquitous peasant dish, abgoosht (or "meat water") is made with inexpensive, bony cuts of meat, which take a back seat to the broth and the sheer ceremony involved in serving it all. Once the stew is cooked, it is divided into two parts: The meat, potatoes and beans are pulled from the stock and mashed into a meat paste, goosht kubideh. Simple to prepare, the dish turns into an occasion for a gathering, as the broth and meat paste are served with piles of warm flatbread, pickles and fresh herbs, palate cleansers that offset the richness of the dish.

2 1/2 pounds bone-in lamb shank
1 teaspoon ground turmeric
Fine sea salt and freshly ground black pepper
1/2 cup dried chickpeas
1/2 cup dried white beans, such as navy or cannellini
2 large yellow onions, quartered
1/4 cup tomato paste
3 large russet potatoes (about 2 pounds)
6 Omani (dried Persian) limes, rinsed and punctured multiple times with a fork
Persian liteh pickles, for serving
Salad-e Shirazi, for serving
Warmed sangak bread or other freshly baked flatbreads, for serving
Assorted fresh herbs (such as mint, tarragon and basil), scallions and radishes, for serving (optional)
Doogh (Persian yogurt drink), for serving (optional)

Steps:

  • The night before you plan to cook, season the lamb with turmeric, 1 teaspoon salt and 1/2 teaspoon pepper. Cover and refrigerate. Place chickpeas and beans in a medium bowl; add 3 cups water and a generous pinch of salt. Refrigerate overnight.
  • To cook: Set a large Dutch oven or soup pot over high heat. Add lamb, onions, tomato paste and 8 cups water. Drain chickpeas and beans and add to pot. Bring to a boil, stir to dissolve tomato paste, and cover pot partially with a lid. Reduce heat and simmer stew for 2 hours.
  • Peel potatoes and cut into 1-inch pieces. Add potatoes and Omani limes to pot and continue simmering until potatoes and meat are both completely tender, about 1 hour. Taste and adjust the seasoning of the broth with salt and pepper.
  • Remove limes from pot, and one by one, juice them into the soup through a sieve by pressing down on them with a spoon. (Avoid letting the seeds through the sieve, as they can be bitter.) Taste the broth after juicing each lime and add just enough so that the broth is tangy and bright.
  • Use the sieve to remove the meat, potatoes and beans from the pot and transfer them to a large bowl. Use a fork to pull the meat off the bones. If any of the bones have marrow, use a skewer to remove it and add to the bowl. Use a potato masher to mash meat, beans and potatoes into a soft, uniform paste - this is called goosht kubideh, literally "mashed meat." If the mixture appears dry, add a few spoonfuls of broth and continue to mash until unctuous and smooth. Taste the paste and adjust the seasoning with salt, pepper and Omani lime juice, as needed.
  • To serve, bring broth and goosht kubideh to the table, along with bowls of liteh pickles, salad-e Shirazi, warmed sangak bread, fresh herbs and, if you like, doogh. All of the sides serve as palate cleansers to balance the richness of the dish.
  • Traditionally, the broth is eaten first with sangak bread, which can hold up to the broth without disintegrating. Typically, the bread is torn into bite-size pieces and added to broth to soak for a couple of minutes before digging in. This process is called tilit.
  • Serve the goosht kubideh separately after everyone has had a bowl of broth. Traditionally the meat paste is made into small sandwiches with fresh herbs, and eaten with alternate bites of salad-e Shirazi and liteh pickle. Leftover goosht kubideh makes for a great sandwich or baby food, and freezes well for up to 2 weeks.

PERUVIAN LAMB OR GOAT STEW

I ate this stew with a mountain guide named Chi Chi on my way to explore some ruins in the Andes. I was sworn to secrecy as to exactly where these ruins were, but you can surmise from this recipe that it was near a place that had cheap Mexican beer and fresh cilantro. To make this goat stew, simply replace the word 'lamb' with 'goat' when you are making it.

5 garlic cloves
2 teaspoons ground annatto seed
3 lbs lamb chops
1 lb lamb rib
3 teaspoons coarse grain mustard
1/2 teaspoon salt
1 1/2 teaspoons ground black pepper
1 (12 ounce) bottle mexican pilsner beer
1 bunch cilantro
1/4 bunch parsley
1 tomatoes
1 onion
1 1/2 teaspoons cumin
1 (8 ounce) can chicken broth
1/2 cup oil
1 1/2 lbs yucca root

Steps:

  • Slice lamb into about 4 ounce size pieces, place the bones aside, but do not dispose of them.
  • Lay lamb chunks flat in a flat bottom bowl or pie dish.
  • Mix together 2 cloves diced garlic, 1 tspn. annatto, 1/2 tsp salt, 1/2 tsp pepper, 1/2 cup of the beer and 2 tsp of the mustard.
  • Pour evenly over your lamb.
  • Spread the last tsp of mustard over the top of the lamb meat.
  • Let stand for 2-4 hours.
  • Place in blender 1/2 tomato, the onion coarsely chopped, the cilantro, parsley, 1 tsp of the cumin and 1/4 cup of broth/stock.
  • Mix until well blended.
  • Peel yucca root and slice into 1 inch cubes.
  • Place cubes in a pot full of water and bring to a boil.
  • Boil until yucca is easily penetrated with a fork, then set aside.
  • Once the meat is marinated, place oil in pan and heat.
  • When oil is warm, add the meat without the marinade.
  • Sear the outside evenly and place aside. Now add the vegetable blend to the pan and fry for about 1 minute.
  • Add the meat back in, stir and cook for another 5 minutes over medium high heat. Add the marinade left over, the bones you set aside before and the rest of the broth/stock.
  • When stew comes to a boil, reduce heat to medium, add the rest of the chopped tomato and leave to simmer for about 1 hour or until meat is very tender.
  • Stir occasionally. At this time, add the rest of the cumin, annato, pepper and beer.
  • Bring heat back up to med-high and bring to a boil. Leave boiling for 2 minutes, then reduce heat to low.
  • Add yucca root and stir.
  • Let sit for 5 more minutes, then remove from heat.
  • Serve with spiced rice.

When simmered in pork and sofrito broth, the potatoes soften and soak up flavor while imparting their starchiness to the stew for a thick, creamy comfort dish.

1 1/2 cups papa seca (Peruvian freeze-dried yellow potatoes), available at Latin markets or online
7 cups water, divided, plus more as needed
1 tablespoon canola oil
8 ounces pork belly
1 red onion, trimmed and peeled, about 1½ cups chopped
4 cloves garlic, peeled, about 2 tablespoons minced
Kosher salt
1/2 cup aji amarillo (yellow pepper) paste, available at Latin markets or online
1/4 cup aji panca (Peruvian pepper) paste, available at Latin markets or online; reduce amount for less heat
1/3 cup red wine, any kind, dry or sweet
1 1/4 ounces 72% dark chocolate, chopped
2 teaspoons sugar
1 pinch cumin
1 sprig oregano, about 1 tablespoon chopped, leaves only
1/4 cup roasted peanuts (salted), toasted in dry pan over medium-low heat for 3?4 minutes
Steamed white rice, for serving (optional)
1/2 red onion
1 lime
Cilantro leaves, roughly chopped

Steps:

  • Papa seca: In a dry Dutch oven over medium-high heat, add the papa seca and toast until fragrant and light brown in spots, 5 minutes. (If you find small rocks or impurities while toasting, remove and discard.) Fill a medium bowl with 3 cups of water; add the toasted papa seca and stir to submerge. Set aside to soak, 30 minutes. Meanwhile, wipe the pot clean and prepare the pork belly.
  • Pork belly: In the same Dutch oven over medium heat, add canola oil. Slice pork belly into 1-inch chunks, removing and discarding any skin. When oil is shimmering, add pork in an even layer and brown, 5 minutes on each side. Meanwhile, prep sofrito ingredients.
  • Sofrito: Finely dice the onion; chop the garlic. When pork belly is brown on both sides, transfer to a plate and set aside, leaving the rendered fat behind. Reduce heat to low; add onion and garlic, along with a pinch of salt, and stir to combine. Sauté until brown and caramelized, stirring occasionally, 20-30 minutes.
  • Add aji amarillo and aji panca pastes to the caramelized sofrito. Turn heat to high and toast, stirring continuously to prevent burning, 5 minutes. Add wine and deglaze the pan; reduce, stirring, until the moisture has been cooked out and the mixture is dark and paste-like, 5 more minutes.Add the pork and stir to coat; then add the papa seca, including the soaking liquid. Add enough water to submerge all the ingredients in liquid, about 3 more cups. Turn heat to high and bring to a boil, then reduce heat to low and simmer gently, uncovered, until potatoes are soft and pork is tender, stirring occasionally. Total cooking time will be 1½-2 hours, but check stew after 1 hour. Add 1 cup water to thin the stew. Continue cooking, adding water as necessary, until pork is tender and potatoes are soft, 30-45 more minutes.
  • After 1½-2 hours, stew should be thick and creamy; add a few tablespoons of water to thin, if necessary. Heat stew to a low simmer, then add chocolate, sugar, a pinch of salt, and cumin. Pick leaves from oregano sprig, roughly chop, and add to stew; roughly chop toasted peanuts and add to the stew. Stir to combine. When the chocolate is melted and fully incorporated, season to taste with salt and serve. Serving suggestion: Chef Ramirez serves carapulcra with white rice on the side, and tops each bowl of stew with salsa criolla: shaved red onions tossed in fresh lime juice, cilantro, and salt to taste.
