8-10 sheets of phyllo pastry
200g feta cheese, crumbled (7 ounces)
3/4 of a cup heavy cream
100g grated Parmesan or Regato or kefalograviera (3.5 ounces)
100g grated Gouda cheese or Emedal cheese (3.5 ounces)
100g ricotta cheese or anthotiro (3.5 ounces)
2 large organic eggs, beaten
2 tbsps fresh mint (optional)
olive oil or melted butter
sesame seeds (optional)
freshly ground pepper

Steps:

  • If you choose to prepare this Greek tiropita recipe with commercial phyllo dough, it is important to thaw completely the phyllo dough by putting it in the fridge from the previous day. For the beginners at working with phyllo, check the handling tips before starting.
  • Prepare the filling for the tiropita. This traditional tiropita recipe, calls for three different kind of cheese for extra flavour! Use a fork to crumble the feta cheese into a large bowl and add the beaten eggs along with the rest of the grated cheese and heavy cream. Chop some fresh mint and add to the mixture. Season with freshly ground pepper and blend well with a spoon. Place the mixture in the refrigerator for 20-30 minutes.
  • For this tiropita recipe you will need a large baking tray, approx. 20*30 cm. Using a pastry brush, butter the bottom and sides of the tray. Place one sheet of phyllo at the bottom of the pan and with a cooking brush sprinkle some olive oil or melted butter. Repeat the procedure, adding 4-5 more sheets of phyllo dough. You will use 5-6 phyllo sheets for the bottom of the tiropita.
  • Pour in the feta cheese mixture and smooth with a spatula. With a knife trim some of the excessive phyllo, and fold the excess phyllo sheets flaps over the mixture. Top the tiropita with 4-5 more phyllo sheets, making sure to oil or butter each one, before adding the other; roll in the edges. Brush the top with oil or butter, sprinkle with water and sesame seeds. If using commercial phyllo dough to make this tiropita recipe make sure to scar the top with a sharp knife, to help release the steam.
  • Bake the tiropita in a preheated oven at 180C for 45-50 minutes, until the phyllo is crisp and golden. Let it cool down for a while before serving. Enjoy!

This is an authentic recipe for "tyropita", or Greek feta cheese pie. Layers of crispy phyllo and a simple filling of feta cheese. You don't need anything more!

14 ounces feta cheese, crumbled
2 eggs
10 sheets phyllo dough, thawed if frozen
½ cup olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans.
  • Mix feta cheese and eggs together in a bowl for the filling; set aside.
  • Lay out 1 sheet of phyllo on a work surface and brush liberally with olive oil. Top with another sheet and brush with oil. Repeat for a total of 4 sheets, but do not brush the top of the fourth sheet. Transfer the stack of oiled sheets to one of the greased cake pans. Drape over the bottom of the pan, trying not to be too perfect about it; you want some folds and wrinkles in the phyllo.
  • Spread 1/2 of the filling over the phyllo in an even layer. Fold the overhanging phyllo over the filling, again letting natural folds and wrinkles occur. Loosely lay 1 sheet of phyllo over the top, brush with oil, and use the oiled brush to pat down the sides all around the circumference of the cake pan.
  • Repeat with remaining phyllo, oil, and filling to assemble the second pie.
  • Bake the cheese pies in the preheated oven until the tops are a deep golden brown, 45 to 60 minutes. Let cool for 20 minutes before slicing. Serve warm or at room temperature.

250gr (1/2 lb) phyllo pastry, crumbled
350gr ( 0.7 lb) Feta cheese
150gr (0.3 lb) Greek yoghurt
3-4 eggs
80gr (0.2 lb)unsalted butter
30gr ( 0.1 lb) diced butter
30gr sunflower
1/2 tsp salt
1/2 tsp black pepper (optional)
Egg wash:
1 egg
1 tbsp water
For this recipe you will need a 35x25cm or 9.9x13.7 inches baking dish.

Steps:

  • To prepare this Greek Feta cheese pie (Tiropita) with phyllo start by buttering the baking dish and preheating the oven to 180c or 356F. Melt the butter and set it aside. Whisk three eggs and set them aside too.
  • To prepare the filling, in a mixing bowl, combine crumbled Feta cheese, greek strained yoghurt, melted butter, sunflower oil, whisked eggs and seasoning. Should you wish to taste the seasoning on the filling, do so prior to adding the whisked eggs. Remember that tanginess of Feta differs between brands, and you may wish to add more salt. Mix the ingredients until combined.
  • Lay two phyllo sheets on the bottom on the baking dish side by side making sure the bottom and the sides of the baking dish are covered. Set aside one phyllo sheet for the outermost pie layer. Take a couple of tablespoons worth of filling and spread it evenly all over the phyllo sheet. Repeat the process until you have run out of either filling or phyllo pastry sheets. Lay the last phyllo sheet on the pie tucking in the corners.
  • Prepare the egg wash by whisking an egg with one tablespoon of water. Pierce the pie evenly and brush with the egg wash. Lay evenly the diced butter on the top phyllo. Bake the Greek Feta cheese pie (Tiropita) with phyllo at 180C (360F) for 55-60 minutes. Cover with foil at around 35 minutes to achieve a nice golden colour.

Nonstick cooking spray or butter, for the baking dish
1/2 cup pine nuts
2 tablespoons (1/4 stick) unsalted butter
1 tablespoon olive oil
2 yellow onions, diced
2 garlic cloves, minced
Three 20-ounce bags frozen chopped spinach, thawed and squeezed of excess water
4 extra-large eggs, lightly beaten
2 cups crumbled feta cheese
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 tablespoon freshly ground black pepper
2 teaspoons kosher salt
Pinch nutmeg
8 sheets frozen phyllo dough, thawed
3 tablespoon unsalted butter, melted
2 teaspoons za'atar (if you can't find za'atar, use sesame seeds)

Steps:

  • For the spinach and cheese mixture: Preheat the oven to 375 degrees F. Grease a 13-by-9-inch baking dish with cooking spray or butter.
  • In a large dry skillet over medium heat, lightly toast the pine nuts. Remove and reserve. In the same skillet, melt the butter with the olive oil. Add the onions and saute until translucent, about 10 minutes. Add the garlic and saute 2 to 3 minutes. Stir in the spinach. Cook until tender and any excess water evaporates, about 5 minutes. Remove from heat and let cool.
  • In a large bowl, mix the eggs, feta, ricotta, Parmesan, pine nuts, pepper, salt and nutmeg. Add the reserved spinach mixture and stir to combine. Transfer to the baking dish, pressing to make sure it is even.
  • For the phyllo dough crust: Layer sheets of phyllo onto the spinach mixture, brushing each sheet with melted butter before adding the next. Fold the edges to make a crust and brush with butter. Sprinkle with za'atar or sesame seeds. Bake until golden brown, 55 to 60 minutes.

Steps:

  • Preheat oven to 375°. In a large skillet, cook chicken and onion over medium-high heat 7-9 minutes or until chicken is no longer pink, breaking up meat into crumbles; drain. Stir in seasonings. Add spinach; cook and stir until liquid is evaporated. Transfer to a large bowl; cool slightly. Stir in beaten eggs and cheese., Layer 10 sheets of phyllo dough in a greased 13x9-in. baking dish, spritzing each with cooking spray. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Spread spinach mixture over phyllo. Top with remaining sheets of phyllo, spritzing each with cooking spray. Cut into 8 rectangles., Bake, uncovered, 35-40 minutes or until golden brown. If necessary, recut rectangles before serving.

Cheese pie, pita sirnica or cheese burek is a great flaky pie with a rich egg and cheese filling.

8 ounces feta cheese
12 ounces farmers cheese (or ricotta)
8 ounces sour cream
4-5 eggs
1/2 teaspoon salt
1 box phyllo dough (16-18 sheets, about 1 pound)
5-6 tablespoons butter
2-3 tablespoons oil (vegetable, canola, sunflower or coconut )
1 cup milk
2 tablespoons butter

Steps:

  • Filling: In a large bowl, combine filling ingredients. Whisk until ingredients are completely integrated. Heat oven to 390°F (200°C).
  • Assembly: Grease a baking pan. Layer one phyllo sheet on the bottom of the pan. Brush a thin layer of (butter and oil) coating over the sheet. Add another sheet of phyllo on top of the first one and repeat the coating.
  • Grab a generous amount of filling (about 4 tablespoons), and spread evenly over the top sheet. Layer two sheets on top of the filling, coating each before adding the next layer (just like in step two). (If phyllo is larger than the pan, you can fold, crumple or cut it until it fits.) Top with the filling again and spread it evenly. Repeat phyllo, coating and filling layers until you run out ingredients. Make sure the last, top, pie layer has at least 2-3 sheets of phyllo. Brush it with coating last time and put the pan in the oven.
  • Bake 15 min. Rotate the pan and continue baking another 15-20 minutes. Monitor the pie so it doesn't blush too much (or burn). If it blushes too much lower the temperature to 360°F (180°C) or cover with foil.
  • Topping: In a small pan combine milk and butter. Warm up the milk just until the butter melts. Take the cheese pie out of the oven. Using a teaspoon distribute the topping evenly over the pie. Turn the oven off and return the pie inside for a few minutes.
  • Serve 20-30 minutes (an hour is even better!) after baking. Store in a cool place (outside) for up to a day. Transfer to the fridge for up to 2-3 days. (Cover in plastic wrap.) Use your favorite reheating method, or eat cold. Do not freeze.

12 ounces ricotta cheese

1/2 teaspoon fresh parsley (finely chopped)

  • Preheat oven to 375 degrees.
  • Combine crumbled feta and ricotta cheeses.
  • Add eggs and beat thouroughly, then parsley and mix well.
  • Lay 1 sheet of phyllo dough in a 9x9 in baking dish and brush lightly with melted butter.
  • Lay another sheet of phyllo dough on top, brush with butter, and repeat with four more sheets of phyllo.
  • Spread cheese mixture into pan and place another 6 sheets of phyllo in the same process as before.
  • Place in a preheated 350 degree oven for 30 to 40 minutes.

  • Preheat oven to 350°F/180°C. Butter a large shallow baking pan or jelly roll pan. Place a sheet of phyllo on a clean work surface, near the baking pan. Sprinkle lightly with feta. Scrunch the phyllo together across the wide side so that it bunches up and resembles a pleated surface. Lift this carefully and place along the short side of the baking pan. Repeat with remaining phyllo and cheese, placing each scrunched piece of feta-sprinkled phyllo snugly next to the previous one until the surface of the pan is covered.
