PICKLED GARLIC
These pickled garlic cloves take a long time, but they're easy to make and are a real treat.

Steps:
- Place garlic cloves in a medium bowl, first cutting the large cloves in half. Mix in the red bell pepper.
- In a large saucepan over medium high heat, place the distilled white vinegar and white sugar. Wrap ground dry mustard and celery seed in a spice bag, and place in the liquid mixture. Bring to a boil. Boil 5 minutes. Stir in garlic and pepper. Continue boiling 5 minutes. Remove from heat and discard spice bag.
- Place garlic and peppers in sterile containers to within 1 inch of the top. Fill with remaining liquid to within 1/4 inch from the top. Seal and store in the refrigerator approximately three weeks before serving.

PICKLED GARLIC
This recipe is not suitable for shelf-stable canning. If you make this recipe, you MUST store it in the refrigerator. Even if you seal the jars with a water bath. Refrigerate!

- Combine canning salt and vinegar in a large saucepan. Bring to boil; reduce heat and simmer 10 minutes (180 degrees).
- Meanwhile, pack garlic into 4 sterilized pint jars (about 8 ounces per jar) leaving 1/2-inch of headspace. Add 1/4 teaspoon red pepper flakes and 1 head of dill to each jar. (If using fresh dill, add 1/2 cup to each jar.)
- Using a ladle, divide hot pickling liquid between the 4 jars, leaving 1/2-inch of headspace. Remove air bubbles, clean jar rims, center lids on jars, and adjust band to fingertip-tight.
- Chill in the refrigerator until pickled as desired (I recommend at least 3 weeks in the refrigerator). Store in refrigerator for up to 4 months (see notes) or seal jars following the instructions below (the pickled garlic must still be refrigerated; it will not be shelf-stable).

GREAT GRANDPA'S GARLIC PICKLES
These pickles have a really great kick to them! This is a recipe of my great grandpa's who is 96.

- Pour the jar of pickles and the liquid into a large bowl. Stir in the sugar, hot pepper sauce, garlic and red pepper. Return to the pickle jar and refrigerate for at least 1 day before serving to soak up the flavors.

PICKLED GREEN TOMATOES
Wedges of large green tomatoes and whole small tomatoes both make delicious pickles. Kept in sealed canning jars, their flavor will continue to develop over several months.

- In a large bowl, combine onion, bell pepper, and tomatoes. Pack mixture into 3 one-quart or 6 one-pint canning jars. Place a garlic clove and a red chile in each jar, and set aside.
- In a large saucepan, combine sugar, salt, vinegar, mustard seeds, cloves, celery seeds, and allspice. Bring to a boil over medium-high heat; stir until sugar dissolves. Pour mixture over produce, leaving a 1/2-inch space at the top of each jar. Wipe rims of excess; screw on lids.
- Bring a large stockpot of water to a boil. Using canning tongs, gently place jars in boiling water, making sure the water covers the jars (if not, add additional water to cover). Let jars sit in gently simmering water for 10 minutes. Remove; let cool slightly. Check seal by pressing in center of lid. If it doesn't pop back, it is properly sealed. If it does, return jars to water for 10 more minutes. Let sealed jars cool completely.
- Let pickled tomatoes stand until flavors have melded, at least 2 weeks.
SIMPLE PICKLED GARLIC

- Peel cloves; if large, cut in half lengthwise.
- In a non-reactive saucepan, combine vinegar, sugar and salt.
- Bring to boiling and stir until sugar dissolves.
- Drop garlic into mixture and cook, uncovered, over high heat 1 minute, stirring occasionally.
- Remove from heat; let cool.
- Store in tightly covered jar in refrigerator for 3 months or longer.
- To make a crisper, slightly spicier garlic pickle, add 1/16 to 1/8 teaspoon alum and 1/2 teaspoon crushed red peppercorns.

Steps:
- In a medium saucepan combine 1 teaspoons.
- of the salt with the vinegar, sugar, garlic, bay leaves, onions, peppercorns and dill seed.
- Place the pan over moderate heat and bring liquid to a boil.
- Reduce heat to low, cover the pan and simmer for 30 minutes.
- Meanwhile, half fill another medium pan with water and bring to boil over moderate heat.
- Add remaining salt and beans and cook for 3 to 5 minutes.
- Remove the pan from heat and drain beans.
- Place them upright in dry, clean jars.
- Set aside.
- Remove vinegar mixture from heat.
- Strain the mixture over the beans up to the top of jars.
- Seal, and boil in a hot water bath for 10 minutes Store in a dark, cool place.
