PINEAPPLE RUM COCKTAIL

This pineapple rum cocktail is a stunning mixed drink with a tropical flair! Use any type of rum you have (even pineapple rum).

Ingredients

6 large leaves mint
1 teaspoon sugar
2 lime wedges
2 ounces golden (aged), dark, white, or pineapple rum*
1 1/2 ounces pineapple juice
1/4 ounce Maraschino liqueur
2 shakes orange bitters (optional but recommended)
For the garnish: Mint, lime wedges, and/or pineapple slice

Steps:

In a cocktail shaker, muddle the mint with the sugar and lime wedges.
Add the rum, pineapple juice and Maraschino liqueur to the cocktail shaker. Fill it with ice and shake until cold.
Strain the drink into a glass. Shake on the bitters if desired. Garnish with mint, a lime wedge and a pineapple slice.

1 small bunch mint
2 tablespoons sugar
1 (20-ounce) can crushed pineapple
1 cup dark rum
1/2 to 1 cup ginger ale
Ice

Steps:

In a large pitcher, muddle the mint and sugar together to bruise the mint and release its flavor. Add in the crushed pineapple and its juice along with the rum. Top off the spritz with ginger ale, to taste. Stir and serve in glasses filled with ice.

4 cups cubed fresh pineapple (1 inch)
40 fresh mint leaves
2/3 cup superfine sugar
1/8 teaspoon kosher salt
1-1/2 cups light rum
Ice cubes
7 cups club soda, chilled
GARNISH:
Fresh pineapple slices and additional fresh mint leaves

Steps:

Place the first 5 ingredients in a blender; cover and process until pureed. Transfer to a 1-1/2-qt. pitcher; stir in rum. Pour 1/3 cup mixture into each glass. Add ice; pour 1/2 cup soda over ice. Garnish with pineapple slices and additional mint leaves.

Steps:

Place pineapple in a large glass container. Pour in rum, covering pineapple completely.
Store container on a cool, dark shelf, stirring and tasting once a day, until rum reaches desired flavor, at least 1 week but preferably 2.
Strain out pineapple before serving.

3 lemons, juiced
1 cup white sugar
½ cup honey
6 slices lemon
1 (2 liter) bottle carbonated water

Steps:

To make the pineapple lemon syrup: In a large saucepan over medium heat, combine pineapple juice, lemon juice, sugar and honey. Bring to a boil, and cook for 1 minute. Allow to cool, then refrigerate overnight.
Fill 6 glasses with ice. Place a slice of lemon in each glass. Pour in 2 fluid ounces pineapple lemon syrup. Fill glasses to the top with carbonated water; stir.
