CHINESE SAUSAGE AND EGG FRIED RICE
Steps:
- Prepare all the ingredients beforehand and put them next to the wok/pan.
- Heat 1 tsp oil in the wok over medium-high, add garlic and sausage. Once the sausage turns slightly brown, remove from the wok and set aside.
- Heat the wok over medium heat. Once the wok gets hot, Add 1 tbsp oil, then the eggs and use a spatula to quickly scramble the egg. *Important* The cooking temperature is key in this step. We don't want to use high heat at the beginning because it'll quickly overcook the eggs. Stir in rice while the eggs are still runny so that it's easy to incorporate them nicely. Also if you use high heat for cold rice, it can quickly burn the rice while it's still chunky.
- Once the rice is almost broken apart, turn the heat to high. Transfer the sausage back in, add XO sauce, soy sauce, and pineapple. Keep stirring until everything is incorporated.
- Garnish with green onions.
HAWAIIAN-STYLE SAUSAGE AND RICE
I used to work where we had a lot of potluck lunches. I just brought the ingredients, already prepared, a rice cooker, and an electric frying pan. I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

Steps:
- Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
- Place sausages into a skillet with 1/2 cup water over medium heat, cover, and cook until heated through, about 5 minutes. Thinly slice sausages. Combine sausages with onion, green pepper, and celery in a large skillet over medium heat; cook and stir until vegetables start to soften, about 5 minutes.
- Stir tomatoes, beef broth, pineapple, garlic powder, black pepper, and brown sugar into sausage mixture. Cook and stir until brown sugar has dissolved and mixture comes to a simmer. Whisk reserved pineapple juice with cornstarch in a small bowl until smooth. Stir cornstarch mixture into sausage mixture and cook until sauce thickens and turns clear, about 2 minutes. Serve sausage mixture over cooked rice.

- Use a small sharp knife to cut around the edge of each pineapple half, then scoop the pineapple flesh from the halves. Discard the core and chop the fruit into small pieces. You will have about 1 1/2 cups fruit. Set aside and place pineapple halves on a plate or platter.
- In a small bowl, whisk to combine the soy sauce, hoisin sauce, rice wine vinegar and sesame oil; set aside.
- Heat 1 tablespoon oil in a large nonstick skillet over medium high heat. Add the peas, carrots and red bell pepper and cook until softened, about 3-5 minutes. Stir in the garlic, ginger and scallion whites and cook 1 more minute, then transfer to a medium bowl with a slotted spoon.
- Place skillet back over medium high heat, add 1 tablespoon oil and saute the sliced sausage until slightly browned, about 4-5 minutes. Transfer to the bowl with the vegetables with a slotted spoon.
- Return the skillet to medium high heat, add the rice and flatten in an even layer. Cook undisturbed to allow the bottom to crisp slightly, about 3-5 minutes. Stir in the cooked sausage and vegetables, 3/4 cup chopped pineapple and season with salt and pepper. Cook 1-2 minutes then stir in the sauce to combine.
- Push the rice to the sides and make a well in the center. Add about 1/2 tablespoon oil to the well and pour in the eggs. Scramble the eggs then stir to combine with ingredients in the pan.
- Spoon rice mixture into Pineapple halves and garnish with remaining chopped pineapple and sliced scallion greens.

PINEAPPLE FRIED RICE
Made with the ingredients I had on hand - simple to make, and kids love it. If using eggs, for 3 cups of brown rice you'll want at least 8 eggs (I initially did 4 because I already had chicken - and ended up not even seeing any eggs in the final product!) My friend, who prefers a saltier fried rice thought it a bit bland so I added some Soy Vey marinade while frying. You can find it at your local grocer. I read from other reviewers on other Food.com fried rice recipes that white pepper makes the dish, so I added that - and saw no diff. If you don't have white pepper I don't think it will kill you to use regular black pepper. I have also seen people add red pepper flakes to add some kick to it - I leave it out because I don't eat spicy foods. Instead of chicken I'd use Chinese sausage if I could - it's sweeter, and kids love it. Problem is that it's really oily - and we try to avoid pork. Adjust the ingredients to your taste and enjoy!

- Cut onion into slices then chop into small squares. Fry on small saucepan in 1 tablespoon butter for 15 minutes on low heat until onions turn light brown, stirring occasionally to avoid burning.
- Add brown sugar and dash of pepper and dried oregano (if you have it), and let sit for another 5 minutes before turning off heat.
- In a wok or large skillet, add 1 tablespoon oil until it lightly smokes before adding the eggs and chopped green onions. Scramble the eggs.
- Add pineapple, oyster sauce, garlic powder (I didn't have any fresh garlic on hand). Add diced chicken (or pretty much any meat of your choice) and stir evenly.
- Add rice, sugar, soy sauce (I use the Maggi Seasoning brand that comes in a square bottle - much cheaper at Asian markets, as opposed to buying it at American chains e.g. Vons or Ralphs, where they jack the price up almost double).
- Now add in the caramelized onions you've prepared in the separate saucepan and mix it thoroughly into your rice and squeeze the lime, then mix.
- Add celery (I tend to add it toward the end to keep its crispness)
- Add white pepper and salt to taste. I didn't add much salt because I figured the soy sauce and oyster sauce would be enough. Enjoy!
