1 can (8 ounces) unsweetened pineapple chunks
1/2 cup water
1/2 cup soy sauce
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon paprika
1 pound beef top sirloin steak, cut into 1-inch pieces
16 medium fresh mushrooms
1 large onion, cut into chunks
1 medium green pepper, cut into 1-inch pieces
1/2 cup butter, melted

Steps:

  • Drain pineapple, reserving juice; refrigerate the pineapple. In a large resealable plastic bag, combine the water, soy sauce, garlic powder, salt, ginger, paprika and reserved pineapple juice; add steak. Seal bag and turn to coat; refrigerate for at least 30 minutes. , Drain and discard marinade. On metal or soaked wooden skewers, alternately thread the steak, mushrooms, onion, green pepper and pineapple. Grill, covered, over medium-hot heat or broil 4-6 in. from the heat for 4-5 minutes on each side or until meat reaches desired doneness, basting frequently with melted butter.

2 tablespoons brown sugar
2 tablespoons vegetable oil
2 teaspoons ground ginger
1 teaspoon minced garlic
1/2 teaspoon pepper
1 pound beef top sirloin steak, cut into 1-inch cubes

Steps:

  • Drain pineapple, reserving juice. Refrigerate the pineapple. In a small bowl, combine the pineapple juice, soy sauce, brown sugar, oil, ginger, garlic and pepper. Reserve 1/3 cup marinade for basting and 1/3 cup for serving; cover and refrigerate., Pour the remaining marinade into a large resealable plastic bag; add beef cubes. 1 vanilla bean
8 ounces dark brown sugar, approximately 1 cup firmly packed
1/2 cup freshly squeezed lime juice
Pinch kosher salt
1 whole pineapple
8 (12-inch) metal skewers

Steps:

  • Split open the vanilla pod and scrape out the pulp, and add the pod and the pulp to a small saucepan along with the brown sugar, lime juice, and salt. Whisk together and place the mixture over medium high heat and bring to a boil, stirring just until the sugar has dissolved. Remove from the heat and allow to sit for 2 hours before using. Remove the vanilla pod. Once cool, place the syrup in a squeeze bottle or other sealable container. Store in the refrigerator.
  • Preheat grill on high.
  • Peel and remove the core from the pineapple. Cut the pineapple into eighths, lengthwise, and remove any prickly brown eyes.
  • Thread the pieces of pineapple onto the skewers lengthwise. Coat the skewered pineapple on all sides with the syrup. Grill on all sides until golden brown, approximately 4 minutes per side, 12 minutes total, or until the pineapple is tender. Serve with any remaining sauce.

1/2 cup hot (spicy) honey
1/2 cup orange juice
2 tablespoons olive oil or vegetable oil
1 1/2 teaspoons kosher salt
1 teaspoon red curry seasoning
1/2 teaspoon freshly ground black pepper
1 1/2 pounds beef tenderloin, cut into 1-inch chunks
4 pineapple rings (canned or fresh), cut into 1-inch chunks
Yellow rice, for serving, optional

Steps:

  • Add the honey, orange juice, olive oil, salt, red curry seasoning and black pepper to a medium bowl. Whisk until the honey and oil are dispersed. Reserve 1/4 cup of the marinade, then divide the remaining marinade in half between two resealable plastic bags. Add the beef chunks to one bag and the pineapple to the other bag. Seal both bags and let rest at room temperature for 2 hours. If you are using wooden skewers, soak them in water while the beef and pineapple are marinating.
  • Preheat the grill to 400 degrees F.
  • Remove or strain the beef and pineapple chunks from the bags and discard the marinade. Pat everything dry. Build the skewers by alternating between the beef and pineapple, placing 3 to 4 pieces of each on each skewer. Place them over the direct heat of the grill and cook on each side for 1 to 2 minutes. Brush the skewers with the reserved marinade. Remove from the grill and serve with yellow rice, if using.

4 ounces large shrimp, peeled and deveined
8 (1 inch) cubes fresh pineapple
8 (1 inch) pieces red bell pepper
2 each bamboo skewers, soaked in water for 20 minutes
1 serving cooking spray

Grilling does great things to chunks of fresh, sweet pineapple, condensing and caramelizing their fruity, sugary juices. In this fun, kid-approved dessert, the pineapple is given a double dose of coconut - a slick of coconut oil before grilling and a shower of shredded coconut afterward. Then, the hot, singed pineapple is laid on a bed of mini marshmallows, which get a little gooey from coming in contact with the heat. Eat this in bowls as is, or add some chopped pecans and coconut ice cream or sorbet for contrasting textures and temperatures.

1 pound fresh pineapple, cut into 1 1/2-inch cubes (about 2 cups)
2 tablespoons coconut oil
Ground cinnamon
2 cups mini marshmallows
Sweetened shredded coconut, for garnish
Coconut sorbet or ice cream, for serving (optional)
Toasted chopped pecans, for garnish (optional)

Steps:

  • Heat the grill to high. As the grill is heating, thread pineapple chunks onto metal or pre-soaked wooden skewers (see Tip), leaving space in between each piece for maximum browning. Brush all sides of the pineapple chunks with coconut oil and dust with cinnamon.
  • When the grill is hot, lightly brush the grates with oil, and add the pineapple skewers. Cook, rotating them carefully every few minutes, until they are evenly browned and slightly charred in places, about 4 to 8 minutes.
  • While the pineapple is grilling, divide marshmallows across 4 bowls. Remove pineapple from the grill and, using a fork, immediately slide the pineapple off the skewers and onto the marshmallows. Let sit for a few minutes for the hot pineapple to soften the marshmallows.
  • Sprinkle each serving with shredded coconut, and top with pecans and small scoops of coconut sorbet or ice cream, if using.

3 lbs boneless beef sirloin (cubed into 1 - 1-1/2-inch pieces, can use up to 4 pounds beef)
1 large fresh pineapple (peeled, core removed and cut into large chunks)
3 green bell peppers, cut into 1-inch pieces
2 red onions, cut into 1-inch pieces
10 long metal skewers

Steps:

  • In a small bowl, mix together soy sauce, honey, vinegar, ginger, garlic, oil and green onion.
  • Transfer marinade to a large heavy-duty ziploc freezer bag or a glass dish.
  • Add in the cubed beef; seal bag and turn to coat beef well.
  • place in the fridge for a minumum of 8 hours or overnight (overnight is better).
  • When ready to grill, drain the marinade and discard.
  • Skewer beef, pineapple chunks and veggies in an alternating pattern.
  • Grill over hot coals for about 18-20 minutes.
