SPICY COLLARD GREENS
Steps:
- Trim the thick stems and any wilted or yellow parts of the leaves form the collards. Cut the leaves crosswise into 1/2-inch strips. Wash them in plenty of cold water and drain them well. You will have about 12 cups of shredded leaves.
- Heat the oil in a large deep pan over medium-high heat. Add the red pepper flakes and stir until fragrant. Add the greens and cook, tossing and stirring, until they are coated with oil and pepper and wilted but maintain their vibrant color, about 4 minutes. Transfer to a serving bowl, season with salt and serve.
GINA'S BEST COLLARD GREENS

Steps:
- Thoroughly wash collard greens. Be sure to pull leaves apart and remove any sand. Chop collard greens.
- In a medium saucepan, bring 4 cups of salted water to a simmer. Place smoked ham hocks in salted water and cover for about 90 minutes. Cook ham hocks until slightly tender. In the same saucepan, add remaining ingredients and collard greens.
- Cover and cook greens for 1 to 1 1/2 hours.
COLLARD GREENS
Steps:
- In a high-sided skillet, cook the bacon over medium heat until brown, about 5 minutes. In the same pan add the onions and saute until translucent, about 5 minutes.
- Strip the leaves from the tough stems of the collard greens. Stack the leaves, roll them up and cut them into thin strips.
- To the skillet with the bacon and onions, add the garlic and red pepper flakes, brown sugar, cider vinegar, salt and pepper, to taste. Add the greens, stir and cover the skillet. Cook for 15 minutes, stirring halfway though. Collards are done when tender and no longer bitter. Remove from heat to a serving bowl. Serve the greens with the Light and Crispy Fried Chicken, if desired.
BILLY'S FAVORITE SMOKY COLLARD GREENS
Here's a great way to get a smoky flavor in your greens without using ham hocks. This recipe will work with any type of greens, but you may need to adjust the cooking time.

- Heat oil in a large pot. Saute onion and garlic until onions are translucent. Place chopped collard greens in pot, and add water to cover. Stir in brown sugar, molasses and liquid smoke. Season with salt and pepper. Bring to a boil, reduce heat, and simmer 30 to 40 minutes, or until greens are tender.

BEST EVER COLLARD GREENS
This is my own recipe for collard greens. Once I made them this way my husband won't let me cook them any other way. People who don't typically like greens like these. It is also good with turnips and mustards. I add some of the turnip root if I use turnips.

SWEET AND TANGY COLLARD GREENS
On New Year's Day, Julia Sullivan, chef at Henrietta Red in Nashville, TN, makes black-eyed peas and these collard greens. "It's something my mom has always done, and I think my grandparents, too. It's a superstitious thing. The black-eyed peas bring good luck, and the greens symbolize money." Finishing these collard greens with vinegar means they tend to be on the acidic side. If you like yours sweeter, add less vinegar and up the sugar.

- Heat oil in a large heavy pot over medium. Add bacon, if using, and cook, stirring occasionally, until some of the fat begins to collect in the pot and bacon starts to look shiny, about 5 minutes. Add onion and cook, stirring occasionally, until golden and softened, 5-7 minutes. Add garlic and red pepper flakes and cook, stirring, until fragrant, about 30 seconds.
- Working in batches, add collard greens to pot, letting greens wilt slightly after each handful before adding more. Add broth, bring to a simmer, and cook, stirring often, until greens wilt and lose about half of their original volume, about 4 minutes. Reduce heat to medium-low, partially cover pot, and simmer gently, stirring occasionally, until greens are tender and liquid is almost completely evaporated, 25-30 minutes. Stir in vinegar and sugar and cook another minute to allow sugar to dissolve; season with salt and pepper.
BOOZY BRAISED COLLARD GREENS

- Remove stems from greens and discard. Roll up like a cigar and slice into ribbons.
- In a large pot over medium heat, add bacon, onion, and garlic. Render bacon until crisp and the onion is tender, about 6 minutes.

Place greens into boiling water, remove pot from heat, and let sit 2 to 3 minutes. Drain and let cool. Heat oil in a large saute pan and cook garlic gently until it begins to turn light brown, being careful not to burn. Add blanched greens, vinegar, sugar 2 teaspoons salt and 2 teaspoons pepper.

SICILIAN COLLARD GREENS WITH PINE NUTS AND RAISINS

- Use a sharp knife to cut out the central rib and stem from each collard leaf. Rinse the leaves in a sink of cool water, lifting them into a colander to drain a bit (you want some water to remain on the leaves).
- Toast the pine nuts over medium heat in a dry skillet for about 5 minutes or until golden.
- Shake the pan often to keep the pine nuts from burning. Transfer to a plate, and set aside.
- Place the garlic and oil in a large skillet, and saute over medium heat for 1 minute or until the garlic is fragrant.
- Add the damp collards and stir, then cover the pan and cook for 2 minutes longer.
- Add the raisins and pine nuts, and stir. Cover and cook for 2 minutes.

- Combine water, ham hocks, and salt in a large pot; bring to a boil. Boil for 30 minutes. Remove from heat. Remove ham hocks from the water and discard.
- Add collard greens, sugar, and red pepper flakes to the water. Simmer over low heat until greens are tender, 2 1/2 to 3 hours. Serve immediately.

PINEY COLLARD GREENS
Steps:
- Generously coat the bottom of a large pot with the evoo Add garlic, basil, Grill Mates Garlic & Onion, and Spike seasoning to pot. Let sit for about a minute just to get the oil hot and the garlic to begin to infuse Add greens from bowl, allowing some of the water to stay on the greens. You don't want too much water, so that the greens are being boiled, but you need enough water to prevent the greens from burning and to create enough steam to cook them. The amount of water does not have to be exact and the amount of water the sticks to the greens when taken out of the bowl of water is usually enough. If throughout it cooking, it seems like there is not much steam in the pot, add about a tbsp more. Don't mix right after adding greens. You want the garlic to slightly brown, and therefore stay on the bottom of the pot for about 5 min (you can eyeball the brownness of the garlic, too). After garlic is beginning to brown, mix the contents of the pot so the greens are coated. The cooking time is about 25 minutes, but varies depending on whether you like your greens soft or chewy. Chewy? Cook about 10 min longer. When greens are almost done cooking, place pine nuts in a skillet over low-med heat to toast for about 2-3 minutes (or until slightly brown). Make sure not to burn them by shaking skillet to brown all sides. When greens reach desired consistency, serve on plate and add pine nuts. Add desired amount of pepper to top it off!
SCOTT'S SPICY CREAMED COLLARD GREENS
We tried to duplicate a spicy collard green recipe from one of our favorite restaurants in North Carolina. They no longer serve this as a side, but the chef did tell us the ingredients... without quantities! After some tinkering, we have come close to what we once ordered every visit.
