QUICHE

Quiche image

The feeling for this deep dish quiche is totally adaptable-throw in asparagus tips, broccoli, and whatever cheeses you have in your fridge-and the filling can be made ahead of time.

Categories     おせち     brunch     breakfast     main dish

Time 1h45m

Yield 8 servings

Number Of Ingredients 11

3/4 lb. thick cut, peppered cacon
1 stick butter
1 whole large (or 2 medium) onions, very thinly sliced
2 boxes (5 ounces each) white mushrooms, washed and sliced
1 can (14-ounce) quartered artichoke hearts

With a slotted spoon, add mushroom mixture into egg/cream mixture. Stir together. Add bacon and stir. Add parsley or chives, if desired.Pour into pie crust and press to submerge ingredients. Cover loosely with foil, place on a baking sheet, and bake at 400 degrees for 1 hour. COWBOY QUICHE

Cowboy Quiche image

Provided by Ree Drummond : Food Network

Time 1h50m

Yield 10 servings

Number Of Ingredients 13

1 unbaked Pam's Pie Crust, recipe follows
All-purpose flour, for rolling
8 slices bacon, fried until chewy
2 yellow onions, sliced
2 tablespoons salted butter
8 large eggs
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper, to taste
2 cups grated sharp Cheddar
2 1/2 cups all-purpose or pastry flour
1 teaspoon kosher salt
1 tablespoon sugar
1 cup (2 sticks) cold salted butter, cut into chunks

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll out the pie dough on a floured surface. Gently lay it in a deep-dish pie pan and press it into the grooves of the pan. Cut off the excess. Set aside.
  • Chop up the bacon into bite-sized pieces.
  • Fry the onions in the butter in a heavy skillet over medium-low heat until deep golden brown, 12 to 15 minutes.
  • Meanwhile, mix the eggs, cream and some salt and pepper together in a large bowl. Add the bacon, onions and cheese and stir to combine.
  • Pour the mixture into the pie shell. Cover lightly with aluminium foil, place on a sheet pan and bake for 45 minutes.
  • Remove foil and bake until the quiche is set and the crust is golden brown, about 10 minutes more.
  • Allow to sit for 10 minutes. Fit for a king or a cowboy.
  • Lightly mix 2 cups of the flour with the salt and sugar in a mixing bowl or a food processor. Cut the butter into the flour using a pastry cutter or by pulsing the food processor. (The mixture should look like large crumbs and begin to cling together in clumps.)
  • Add the remaining 1/2 cup flour and mix lightly or pulse two or three times so as not to overmix the flour. Tip into a bowl. Sprinkle 1/4 cup cold water over the dough and mix with your hands or a wooden spoon until the dough holds together. Shape the dough into two discs.
  • Wrap the dough in plastic wrap and store in the fridge until ready to use. It can also be frozen for up to 6 months.

PAIGE'S QUICHE

Paige's Quiche image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h50m

Yield 8 to 10 servings

Number Of Ingredients 18

2 tablespoons salted butter
2 yellow onions, sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 homemade or store-bought pie crust (enough for a deep-dish pan), recipe follows
All-purpose flour, for rolling
1 1/2 cups heavy cream or half-and-half
8 large eggs
Kosher salt and freshly ground black pepper
2 cups grated fontina cheese
8 slices ham, cubed
3/4 cup vegetable shortening, such as Crisco
1 1/2 sticks (3/4 cup) cold salted butter
3 cups all-purpose flour
1 large egg
5 tablespoons cold water
1 tablespoon white vinegar
1 teaspoon kosher salt

Steps:

  • Set a large skillet over medium-low heat and add the butter. Fry the onions in the skillet, stirring occasionally, for about 10 minutes. Add the red and green bell peppers and continue to cook until the onions are deep golden brown, at least another 5 to 10 minutes (maybe longer). Set aside to cool.
  • Preheat the oven to 400 degrees F.
  • Roll out the pie crust on a floured surface and press it into a large, fluted, deep tart pan (or a deep-dish pie pan).
  • Whip the cream, eggs and some salt and pepper in a large bowl, then mix in the cheese, ham and onion-pepper mixture. Pour into the pie crust.
  • Put the pan on a rimmed baking sheet, cover lightly with aluminum foil and bake for 40 to 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, 10 to 15 minutes longer. (The quiche will still seem slightly loose, but will continue to set once removed from the oven.) Allow to sit for 10 to 15 minutes before cutting.
  • If using a tart pan, remove the quiche from the pan. Cut into slices with a sharp serrated knife and serve!
  • In a large bowl, gradually work the shortening and butter into the flour with a pastry cutter until it resembles a coarse meal, 3 to 4 minutes. In a small bowl, beat the egg with a fork and pour it into the flour/shortening mixture. Add the cold water, white vinegar and salt. Stir together gently until the ingredients are incorporated.
  • Separate the dough into 2 pieces and place each piece into a large ziptop bag. Using a rolling pin, slightly flatten each ball of dough into a disc (about 1/2 inch thick) to make rolling easier later. Seal the bags and place them in the freezer until you need them. If you will be using the dough immediately, it's still a good idea to put it in the freezer for 15 to 20 minutes to chill.
  • The dough can be wrapped in plastic wrap for storage; it will keep up to a week in the fridge or up to 6 months in the freezer.

SPINACH MUSHROOM QUICHE

Spinach Mushroom Quiche image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 10

2 tablespoons olive oil
8 ounces sliced button mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
1 store-bought pie crust
One 10-ounce box frozen chopped spinach, thawed, drained and pressed to remove any water
6 ounces Gruyere, grated
1 1/2 cups half-and-half
8 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic and thyme. Cook, stirring occasionally, until the mushrooms have browned, 5 to 6 minutes. Season with a pinch of salt and pepper. Remove the skillet from the heat.
  • Press the pie crust into a deep, 9-inch tart pan with a removeable bottom (or a deep-dish pie pan). Layer the mushrooms and spinach into the crust and top with the cheese.
  • Whisk together the half-and-half, eggs and a good pinch of salt and pepper in a large bowl. Pour the egg mixture into the crust.
  • Place the pan on a rimmed baking sheet. Lightly cover the pan with aluminum foil and bake for 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, another 10 to 15 minutes. Let the quiche sit for 10 to 15 minutes, then remove from the pan, slice and serve.

COWGIRL QUICHE

Cowgirl Quiche image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 2h5m

Yield 8 servings

Number Of Ingredients 16

3 cups all-purpose or pastry flour, plus more if needed for rolling
1 tablespoon chopped chives
1 teaspoon salt
3/4 cup cold salted butter, cut into chunks
3/4 cup cold vegetable shortening, cut into chunks
1 tablespoon distilled white vinegar
1 large egg, lightly beaten
2 leeks, tops and bottoms trimmed, cut in half lengthwise
16 ounces white mushrooms, sliced
2 tablespoons salted butter
1 cup heavy cream
8 large eggs
2 cups grated Swiss cheese
Salt and freshly ground black pepper
1 tablespoon pesto
8 thin slices prosciutto (or any good ham), chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • For the chive pie crust: Mix the flour, chives and salt in a bowl. Add the butter and vegetable shortening and work them into the flour using a pastry cutter until the mixture resembles tiny pebbles. Using a fork, stir in the vinegar, beaten egg and 5 tablespoons cold water. Stir the mixture until just combined. Shape the dough into 2 discs. (You'll only be using 1 disc for this recipe. You can wrap the additional dough in plastic wrap for storage; it will keep up to a week in the fridge or up to 6 months in the freezer.)
  • Have ready 2 sheets of parchment paper that are each at least 12 inches square. Place the disc of dough between them. (If the dough is sticky for any reason, don't worry. Just sprinkle some flour on the parchment to get started. You shouldn't have to add much for it to stop sticking.) Starting at the center, roll the pin out to the edge. Turn the dough and parchment as necessary and continue rolling, always from the center to the outer edge. After a couple of rolls, lift the parchment paper away from the dough to loosen and replace the parchment. Flip the whole thing and loosen the other paper sheet. Continue rolling until the dough is large enough for your pie pan.
  • For the filling: Slice the leeks thinly, and then soak them in cold water for about 10 minutes to remove any grit or dirt. Drain well.
  • Put the mushrooms on a large baking sheet. Roast until golden brown, 15 to 20 minutes. Set aside.
  • Meanwhile, in a large skillet over medium heat, saute the leeks in the butter until golden brown and beginning to caramelize, 8 to 10 minutes. Set aside.
  • For the quiche base, add the cream and eggs to a medium bowl and whisk them to combine. Stir in the leeks, mushrooms, grated Swiss and some salt and pepper. Mix in the pesto and prosciutto. The mixture should be very thick!
  • Pour the mixture into the pie shell, then cover loosely with a sheet of aluminum foil to prevent it from getting too brown on top. Bake for 45 minutes, then remove the foil and bake for an additional 10 minutes. Remove from the oven and allow the quiche to sit for at least 10 minutes before serving.
  • Place the quiche on a cutting board and slice wedges with a serrated knife. Delicious for breakfast, and even better for lunch with a salad and a bunch of juicy grapes!

SPINACH QUICHE

Spinach Quiche image

This classic spinach quiche recipe has a buttery, flaky crust, a generous amount of frozen spinach, onion, peppers, and a rich custard egg filling with cheese.

Categories     Easter     Mother's Day     spring     breakfast     brunch     eggs

Time 2h

Yield 6-8 servings

Number Of Ingredients 14

1 refrigerated pie crust (from a 14-oz. box)
2 tbsp. butter
1 small yellow onion, chopped
1 small red bell pepper, chopped
2 garlic cloves, chopped
4 large eggs
1 1/4 c. half-and-half
1/2 c. sour cream
1 1/2 tsp. salt
1/4 tsp. black pepper
Pinch of ground nutmeg
1 10-oz. package frozen chopped spinach, thawed and squeezed dry
1 c. shredded sharp cheddar cheese
1/4 c. finely shredded parmesan cheese

Steps:

  • Preheat the oven to 375° with a baking sheet on the center rack. Fit the pie crust into a 9-inch pie plate (about 1-inch deep). Fold the edges of the crust under and crimp as desired. Chill in the refrigerator while preparing the filling.
  • Melt the butter over medium heat in a medium skillet. Add the onion and bell pepper. Cook, stirring now and then, until softened, about 10 minutes. Add the garlic and cook, stirring often, until fragrant, about 2 minute. Remove from heat.
  • Whisk together the eggs, half-and-half, sour cream, salt, pepper, and nutmeg in a large bowl. Stir in the spinach, cheddar cheese, parmesan cheese, and bell pepper mixture. Pour into the prepared crust.
  • Place the quiche on the preheated baking sheet and bake until it has puffed in the center, is just set and the crust is golden, 40 to 50 minutes. Transfer the quiche to a wire rack to cool. Serve warm or room temperature.

PIONEER WOMAN QUICHE

Pioneer Woman Quiche image

This is my favorite Pioneer Woman Quiche recipe! A buttery, crispy and flaky pie crust is topped with a creamy egg filling, along with ham, cheese, and herbs! It's perfect for the weekend and holidays.

Provided by Mohamed Shili

Categories     Sides

Time 3h50m

Number Of Ingredients 12

1 1/4 cups (177g) unbleached all-purpose flour, scoop, and level to measure
1/2 tsp granulated sugar
1/2 tsp (scant) salt
10 Tbsp (141g) unsalted butter, very cold, cut into small cubes
2 - 4 Tbsp ice water
5 large eggs
1 1/4 cups heavy cream (or half and a half)
1 1/4 cups chopped ham
1 cup shredded cheese (cheddar, swiss, or gruyere)
1/3 cup chopped green onions
2 Tbsp chopped parsley
Salt and freshly ground black pepper, to taste

Steps:

  • Mix flour, sugar, and salt together in a medium mixing bowl.
  • Cut butter into the flour with a pastry cutter until it looks like a coarse meal with some larger butter clumps scattered throughout.
  • Pour one tablespoon of water at a time into the mixture, stirring and mixing after each addition, until the mixture just moistens (when pressed with your hand, the mixture should hold together).
  • Using a clean work surface, dump the mixture into a round disk and press it together well into a round disk. Spread out into a disk about 6 inches in diameter and wrap in plastic wrap or move into a container.
  • Place in refrigerator for one hour.
  • Roll chilled dough into an approximately 13-inch circle on a floured surface. Using a rolling pin, wrap dough around the pan, and then transfer to a 9 to 9 1/2-inch deep-dish pie pan.
  • Unroll the dough into the pan, then shape it into the pan. Leave about 1 inch of overhang on uneven edges, then fold overhang underneath. Decorate the edges as desired.
  • Freeze for 20 minutes or refrigerate for 1 hour. Pre-heat oven to 350 degrees while moving oven rack one level below center.
  • Wrap the crust with aluminum foil, pressing it directly against the bottom and side surfaces and folding the foil over the edges to prevent over-browning. Place pie weights, beans, or sugar inside the crust.
  • Bake the crust on a baking sheet for 25 minutes in a preheated oven.
  • Remove the foil and beans. Fork-prick the bottom and sides of the pie and continue to bake until the crust is dry about 10 more minutes.
  • Prepare the quiche filling while the crust is baking.
  • Mix the eggs well with a fork in a mixing bowl.
  • Add heavy cream, ham, cheese, green onions, and parsley, and season to taste with salt and pepper. Stir the mixture until well combined.
  • Place mixture into pie crust. Preheat the oven to 350 degrees (one level below the center of the oven) and bake for 45 - 55 minutes, until the center is barely set. Tent the crust edges with a pie shield or foil ring to prevent excessive browning during the last 15 minutes of baking.
  • Allow the pie to rest for a few minutes before slicing. Keep warm.
