GREEK HUMMUS PITA BITES
Greek Hummus Pita Bites are the perfect bite sized appetizer for your summer back yard BBQ or party. Pita bread is topped with roasted red pepper hummus and a Greek salad mixtures of tomatoes, feta cheese, kalamata olives, cucumber, pepperoncini.

Steps:
- Cut the pita bread into 16 triangles and arrange on a large platter or baking sheet.
- Spread a thin layer of the roasted red pepper hummus on one side of each pita triangle.
- In a medium mixing bowl mix together the feta cheese, tomatoes, cucumber, olives, pepperoncini, extra virgin olive oil and oregano.
- Top each pita triangle with the Greek salad mixture.
- Serve immediately or refrigerate in an airtight container.
RED PEPPER HUMMUS WITH TOASTED PITA TRIANGLES

- Preheat oven to 400 degrees F.
- Place pita triangles on a large baking sheet and spray the surface with cooking spray. Season the tops with garlic salt. Bake 6 to 8 minutes, until golden brown and crisp.
- Meanwhile, rinse and drain 1 can of the chickpeas. Place drained chickpeas in a blender and add red peppers, tahini, lemon juice, garlic, and cumin. Process until smooth. Season, to taste, with salt and black pepper. Transfer to a serving bowl and top with parsley.
- Serve hummus with toasted pita triangles arranged alongside.
DILL HUMMUS AND TOASTED PITA WEDGES

- Preheat oven to 375 degrees F. In a food processor add 1 can of beans, yogurt, olive oil, lemon juice, dill, cumin, and paprika. Pulse until smooth. Add the second can of beans and pulse until beans are incorporated but still chunky. Season with salt and pepper. Cut each pita into 6 wedges and place on a baking sheet. Brush lightly with olive oil, sprinkle with salt and bake for 5 minutes or until crisp. Serve with hummus garnished with dill and paprika.

- Preheat oven to 350 degrees, with rack in center. In a small saucepan, heat cumin and sesame oil over medium-low heat until fragrant, 5 to 6 minutes. Season with salt and pepper; add thyme, if desired.
- Brush both sides of each pita round with spice mixture. Cut rounds in half, and cut each half into 6 triangles, each about 1 inch wide.
- Place triangles in a single layer on a baking sheet, and bake until crisp and golden brown, 20 to 30 minutes. Transfer to a wire rack; let cool completely.

HEAVENLY HUMMUS
I love hummus and this recipe is one of the best I've tried. I like to spread it on pita triangles and top with cucumber, chopped kalamata olives, and feta. I think the homemade tahini paste makes it much better.

- In a food processor, puree the chickpees, tahini, 3 tablespoons olive oil, lemon juice and garlic until smooth, adding a little of the reserved liquid if the mixture seems too thick; It will be slightly grainy.
- Season with salt and pepper.
- Transfer to a shallow bowl or plate.
- Combine the paprika and the remaining 2 tablespoons of olive oil, drizzle the mixture over the top, and garnish with chipped parsley, if desired.
- Serve with pita bread triangles (I like "Recipe #179799" with parmesan cheese), cucumbers, crumbled feta cheese, and chopped kalamata olives. Chopped sun-dried tomatoes are a good addition also.
- *HOMEMADE TAHINI PASTE:.
- 4 tablespoons sesame seeds.
- 1 teaspoon sesame oil.
- 1/2 teaspoon salt.
- 1/2 cup tepid water.
- Blend sesame seeds in a blender and grind until smooth.
- Add sesame oil, salt, and then slowly add 1/4 cup of water while blending.
- Blend until completely smooth.
- Makes 1 cup tahini paste.
