Whole fish (such as this butterflied trout or pink-fleshed arctic char) are as easy to poach as fillets. This recipe works with almost any variety. Serve chilled over greens with horseradish for lunch. For dinner, serve warm with pureed vegetables on the side.

8 cups water
2 cups white vinegar
9 peppercorns
1 fresh bay leaf
1 carrot
1 leek
2 butterflied whole trout
5 tablespoons olive oil

Steps:

  • Simmer 8 cups water, 2 cups white vinegar, 9 peppercorns, 1 fresh bay leaf, and 1 carrot and 1 leek (each sliced) for 10 minutes in a large straight-sided skillet. Add 2 butterflied whole trout. Simmer for 10 minutes, until opaque, and transfer to a platter with a large spatula. Whisk 4 tablespoons poaching liquid with 5 tablespoons olive oil. Drizzle over trout.

1 1/4 cups fish stock or 1 1/4 cups chicken stock
kosher salt
1 cup couscous
1 cup diced blanched mixed vegetables (such as carrots, celery, zucchini, scallions, yellows squash, and red pepper)
1 egg
1/4 cup dill or 1/4 cup fresh parsley leaves
lemon juice, to taste

Steps:

  • Preheat the oven to 400 degrees F.
  • To make the couscous: Bring the stock to a boil in a saucepan over high heat. Add a pinch of salt and the couscous. Stir the couscous and return to boil for 1 minute. Remove the pot from the heat, cover let stand for 5 minutes, then fluff the couscous with a fork. Mix in the diced vegetables, egg and herbs. Season the couscous with salt and lemon and allow to cool.
  • To prepare the trout: Season the trout on both sides with salt and pepper. Lay fish skin side down. Spoon about 1/4 of the couscous onto the large end of each fillet. Fold the tails over (to make a tidy packet) and secure with toothpicks.
  • Melt the butter in a large ovenproof skillet over medium heat. Add the shallots and cook until they are soft, about 7 minutes. Add the trout, wine, lemon juice, and saffron. Season the shrimp with salt and pepper and lay them on the trout bundles. Add the herb sprigs, cover the pan and put it in the oven. Cook until the trout is flaky and the shrimp are opaque, about 5 minutes. Transfer the trout and shrimp to serving plates.
  • To make the sauce: return the poaching liquid to a burner and simmer over high heat. Remove the herb sprigs and add the cream. Reduce the sauce until it coats the back of a spoon, about 3 minutes.
  • Spoon sauce onto each of the plates. Garnish with dill, lemon, and chopped parsley and serve.

2 cups water
1/4 cup sherry vinegar
1/2 cup sliced spring onions
1/2 carrot, thinly sliced
1/2 celery rib, thinly sliced
1 thyme sprig
2 (8-ounce) whole trout, cleaned
Fine sea salt and freshly ground white pepper
Pinch cayenne pepper
5 tablespoons unsalted butter

Steps:

  • Place the water, sherry vinegar, spring onion, carrot, celery, and thyme in a pot and bring to a simmer. Simmer for 10 minutes. Season the trout on the outside and in the belly with salt, pepper and a pinch of cayenne. Place in the simmering court bouillon and poach for 7 minutes, or until a skewer inserted in the thickest part of the flesh comes out warm.
  • Remove the fish with a slotted spoon and set aside on a warm platter. Strain the cooking liquid and return 1/2 cup to the pot. Bring the court bouillon to a boil and add the butter slowly, 1 tablespoon at a time, whisking constantly. Continue whisking until all the butter is absorbed. Season, to taste, with salt and pepper.
  • To serve, place a trout on each plate and spoon the sauce over each. Serve immediately.

Dry vermouth or white wine
2 whole trout, dressed, with or without heads
1/2 cup sour cream
1 to 2 tablespoons drained white horseradish
1 tablespoon minced dillweed
2 small Kirby cucumbers, sliced as garnish, if desired

Steps:

  • Bring enough vermouth or wine to rolling boil to cover trout halfway. Add trout and return to rolling boil. Turn off heat; cover pan and allow trout to cook in hot liquid 12 to 14 minutes. Remove from pan and cool. When cool enough to handle remove skin of the fish.
  • Combine sour cream, horseradish and dill weed for dressing.
  • Trout may be served cool or cold with sour cream dressing. Garnish with cucumber slices, if desired.

Steps:

  • Preheat oven to 450°F. Melt 1 tablespoon butter in heavy large skillet over medium heat. Add sliced leek and carrot strips; sauté until crisp-tender, about 5 minutes. Open fish flat and arrange skin side down in large roasting pan. Sprinkle fish with salt and pepper and 1 1/2 teaspoons minced fresh thyme. Top with leek and carrot mixture and bay leaves. Dot with 2 tablespoons butter. Pour Riesling over fish.
  • Bake fish until just opaque in center, about 15 minutes. Transfer fish and vegetables to plates. Tent with foil to keep warm. Pour pan juices into heavy medium saucepan. Boil until reduced to 3/4 cup, about 6 minutes. Discard bay leaves. Add remaining 3 tablespoons butter and 1/2 teaspoon thyme and whisk just until butter is melted. Season to taste with salt and pepper. Pour sauce over fish and serve.

2 tablespoons butter
2 tablespoons chopped green onion
1 tablespoon chopped fresh parsley
2 cloves garlic, chopped
½ cup sliced mushrooms
⅓ cup white wine
1 ½ teaspoons lemon juice
¼ teaspoon cayenne pepper
¼ teaspoon salt
4 artichoke hearts in water, drained and halved
½ cup chopped cherry tomatoes

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Arrange trout fillets in a large baking dish.
  • Melt butter in a large skillet over medium heat; cook and stir green onion, parsley, and garlic until fragrant, 1 to 2 minutes. Stir in mushrooms and continue to cook until just softened, 1 to 2 minutes more. Add white wine, lemon juice, salt, and cayenne pepper. Remove from heat and gently stir in artichoke hearts; pour mixture over trout.
  • Bake in preheated oven until fish flakes easily with a fork, about 20 minutes. Remove baking dish from oven and scatter tomatoes over fish.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Return baking dish to oven and broil until fish is browned, 1 to 2 minutes more.

Shallow-Poached Fish Fillets image

This recipe can be found in "Martha Stewart's Cooking School" and is a wonderful quick and easy dinner choice.

4 ounces kumquats, halved
1 tablespoon unsalted butter
1 medium shallot, minced
1/2 cup dry white wine
1/2 cup fresh tangerine juice (from 2 to 3 tangerines)
4 medium fish fillets such as turbot, sole, or flounder (each about 4 ounces and 1/4-inch thick), or substitute 8 small fillets
Coarse salt
2 tablespoons chiffonade of mint, plus whole leaves
6 tablespoons (3/4 stick) unsalted butter, well chilled and cut into small cubes
6 kumquats, thinly sliced
Freshly ground pepper

Steps:

  • Prepare poaching liquid: Gently squeeze kumquats over a measuring cup to release juice. Melt butter in a large skillet over medium heat. When it is foamy, sweat the shallot until it is softened but not taking on any color, about 2 minutes. Add wine, tangerine juice, and kumquats (and juice) and bring to a simmer.
  • Poach fish: Fold thin ends ("tails") of fish fillets under a little so the fillets have a more uniform thickness. Season with salt, then gently slide the fillets into the simmering liquid. The fish will not be completely covered with liquid but should be in a single layer. Cover with a parchment-paper round and reduce heat so the liquid is barely moving (just under a simmer). Poach until fish is opaque throughout and flaky to the touch. (Check after 1 minute, but it may take up to 5 minutes.) Use a slotted fish spatula (or other long spatula) to transfer fish to a platter. Cover with parchment paper and set in a warm spot until ready to serve.
  • Make buerre blanc: Pour the cooking liquid through a fine sieve to strain out the solids, pressing on the fruit to extract as much liquid as possible. Return liquid to skillet and boil over moderate heat until reduced to about 3 tablespoons, 2 to 3 minutes. Turn off heat and gradually add the butter, whisking in a few cubes at a time. If butter isn't melting, return pan to moderate heat and swirl to hasten melting. Whisk until each addition is incorporated before adding more. When all of the butter has been added, stir in the sliced kumquats. You should have about 1/2 cup sauce. Season with salt and pepper.
  • Serve: Drizzle buerre blanc over fish, and garnish with mint.

This is a South East Asian inspired dish. You can use other types of fish besides trout but I think it works best this way. I've used cod before for this. The flavours merge wonderfully in the coconut milk... Very nice with sticky rice.

1 fillet rainbow trout
250 ml coconut milk
250 ml chicken stock
1 stalk lemongrass
3 cm gingerroot
4 kaffir lime leaves
1 tablespoon palm sugar
1 tablespoon fish sauce
1 lime, juice of
2 tablespoons coriander
2 small red chili
2 spring onions

Steps:

  • Combine the coconut milk and chicken stock in a pan on a medium heat.
  • Crush the end of the lemon grass stalk and add to pan.
  • Roughly slice ginger (leave skin on) and add to pan.
  • Thinly slice kaffir lime leaves and add to pan.
  • Thinly slice chillis and add to pan.
  • Add palm sugar and fish sauce to pan.
  • Let mixture simmer for twenty minutes so that the flavours infuse in the liquid. Do not boil.
  • Slice fish fillet into large pieces.
  • Add fish to pan and cook gently for another ten or fifteen minutes until fish is cooked.
  • Add the chopped up spring onions, coriander and the lime juice, stir to combine for a few minutes.
  • Remove lemon grass stalk and ginger pieces.
  • Serve.

Chop the carrot, celery, leek and onion. Add all the ingredients together for the poaching liquor. Add the 750ml of water and bring to the boil. Remove from the heat and allow to cool and infuse. Once cool, bring the poaching liquid back to the boil and turn down the heat to a gentle simmer. Add both sea trout fillets to the liquor, skin side up.
