Meyer Lemon Cream Sauce for Salmon image

The salmon can be cooked any way you prefer, because the star of this recipe is the lemon cream sauce made with Meyer lemon.

2 (4 ounce) salmon fillets
salt and ground black pepper to taste
2 tablespoons butter, divided
1 clove garlic
½ cup heavy cream
2 teaspoons Meyer lemon juice
¼ pinch dried dill weed

Steps:

  • Season salmon fillets with salt and pepper. Melt 1 tablespoon butter in a skillet over medium-high heat and cook salmon, skin side-up, until golden brown, 5 to 7 minutes. Turn salmon and continue cooking until skin side is slightly browned and fish flakes easily with a fork, about 5 minutes more.
  • Meanwhile, melt remaining 1 tablespoon butter in a saucepan. Press garlic into the butter using a garlic press and cook for 1 minute. Pour in cream and stir constantly for 2 minutes. Add lemon juice and dill. Be careful that the sauce doesn't break.
  • Serve sauce over salmon.

2 limes
6 cups water
1 (4-inch) piece fresh ginger, peeled and chopped, about 1/4 cup
1 teaspoon whole black peppercorns
4 (6-ounce) boneless skinless salmon fillets
1/3 cup packed fresh basil leaves
Kosher salt and freshly cracked black pepper
1/2 cup creme fraiche or sour cream

Steps:

  • Halve 1 lime and squeeze the juice into a large straight sided skillet or pot with a lid. Add 6 cups water, the squeezed lime halves, ginger, and peppercorns and bring to a boil over medium-high heat. Reduce heat to a simmer, cover, and cook for 10 minutes to infuse the water with flavor; reduce heat to lowest setting, carefully slide salmon into the water, cover, and poach until fish is just cooked through, 5 to 7 minutes. Remove the fish with a slotted spoon and cool completely before transferring to an airtight container. Add about 1/2 cup poaching liquid to the container to keep the fish moist and chill in the refrigerator until ready to serve.
  • Meanwhile, zest the remaining lime and add about 1/2 teaspoon zest to the bowl of a food processor; add the juice from half the lime to the bowl (should be about 1 teaspoon juice). Add the basil leaves, a pinch of salt and a few grinds black pepper and pulse until it begins to turn into a paste. Add the creme fraiche and puree until very smooth. Transfer to a serving bowl and refrigerate until ready to serve.
  • To serve, plate the cold salmon with a drizzle of lime basil cream over the top.

3 8-ounce bottles clam juice
3/4 cup dry white wine
3 lemon slices
3 fresh dill sprigs
4 whole peppercorns
4 6- to 8-ounce salmon fillets
Mayonnaise
1 cup mayonnaise
2 tablespoons fresh lemon juice
2 teaspoons grated lemon peel
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
Butter lettuce leaves
4 lemon slices
8 lemon wedges
Tomato wedges

Steps:

  • For salmon:
  • Combine first 5 ingredients in deep skillet. Simmer 10 minutes to blend flavors. Add salmon, cover and simmer until just cooked through, about 9 minutes per inch of thickness. Transfer salmon to plate, using 2 spatulas as aid. Reserve liquid in skillet. Cool salmon. Cover and chill until cold. (Can be prepared 1 day ahead.)
  • For Mayonnaise:
  • Boil salmon poaching liquid in skillet until reduced to 1/4 cup, about 20 minutes. Combine mayonnaise, lemon juice, lemon peel, chives and parsley in medium bowl. Mix in 1 tablespoon poaching liquid. Season to taste with pepper. (Can be prepared 1 day ahead. Cover and chill.)
  • Line platter with lettuce. Top with salmon. Make cut in each lemon slice from center to edge. Twist lemon slices and place atop salmon. Garnish with lemon wedges and tomatoes and serve with mayonnaise.

8 (3/4-inch thick) salmon steaks
1 cup chicken broth
1 small onion, thickly sliced
4 sprigs fresh parsley
4 slices lemon
salt and ground black pepper to taste
2 tablespoons butter
2 tablespoons all-purpose flour
4 teaspoons finely chopped fresh dill
1 teaspoon white sugar
¼ teaspoon salt
2 large egg yolks, lightly beaten
2 teaspoons lemon juice

Steps:

  • Rinse salmon and pat dry.
  • Combine chicken broth, onion, parsley, lemon, salt, and pepper in a large skillet. Bring to a boil. Add salmon to the skillet in a single layer. Bring back to a boil. Reduce heat, cover, and simmer until salmon flakes easily with a fork, 5 to 10 minutes. Remove salmon from the skillet and keep warm.
  • Strain cooking liquid and reserve 2 cups.
  • Melt butter in a small saucepan over medium heat. Whisk in flour, dill, sugar, and salt. Cook until bubbling, about 1 minute. Add reserved cooking liquid. Cook, whisking constantly, until sauce begins to thicken.
  • Slowly stir 1/2 cup sauce into the egg yolks. Pour back into the saucepan. Cook, stirring constantly, until thick, 1 to 2 minutes. Do not boil. Stir in lemon juice. Spoon sauce over salmon. Serve remaining sauce alongside.

Slow Cooked King Salmon With Meyer Lemon Relish image

I found this recipe simply by chance while browsing the web. This salmon melts in your mouth. Slow cooking anything makes the dish more juicy and tender. Add a pan of water to your oven, and you create a humid environment that will keep the fish very moist.

1 king salmon fillet, 2-3 pounds
extra virgin olive oil
gray salt
half cracked peppercorn
fresh ground pepper
1 large shallot, diced fine
1 tablespoon white wine vinegar
sea salt
1 large meyer lemon
1/2 cup extra virgin olive oil
2 tablespoons chopped parsley
1 tablespoon chopped chervil or 1 tablespoon chives
pepper

Steps:

  • Preheat your oven to 200 degrees.
  • Place a baking pan with a few cups of water on the bottom rack of the oven.
  • Lightly brush the bottom of a baking pan with the olive oil.
  • Brush olive oil on the salmon (all sides.)
  • Season generously with gray salt, half cracked pepper and ground pepper.
  • Place salmon in oiled baking dish and bake in oven for approximately an hour.
  • When juices begin to form on top and the salmon is a little firm - it is done.
  • Serve with freshly made Meyer Lemon Relish (recipe follows).
  • Meyer Lemon Relish:.
  • Place diced shallot in a bowl and add the vinegar and a pinch of salt. Let it sit for 10-15 minutes.
  • Cut the lemon into 8 wedges. Remove the seeds and core gently and cut each wedge in half (lengthwise)
  • Slice the wedges crosswise into thin slivers. This will make about a 1/2 cup.
  • Combine the lemon slivers, shallot and another pinch of salt.
  • Stir in the olive oil, parsley, chives and some fresh ground pepper.
  • Taste and season.

1 tablespoon minced red onion
1 1/2 teaspoons meyer lemon zest
1 tablespoon fresh meyer lemon juice
1 tablespoon extra virgin olive oil
kosher salt
fresh ground black pepper
4 fingerling potatoes, cooked and cut into bite size pieces
2 cups Baby Spinach
3/4 cup shaved fennel
2 teaspoons white wine vinegar
4 eggs
8 slices smoked salmon, paper-thin slices, rolled up (3 oz. total)

Steps:

  • In abowl, whsk together the onion, lemon zest, lemon juice, olive oil, salt, and pepper to make the dressing. Then toss with the potatoes, spinach, and fennel in a separate bowl.
  • Bring a saucepan of water to a simmer and add the vinegar.
  • Crack each egg into a small cup and add to the water one by one. Poach for one minute and 20 seconds. Remove each egg with a slotted spoon.
  • Set two salmon rolls on each plate, and top with the salad and a poached egg. Season with pepper to taste.
