- 1. Heat the oil in a large stock pot over medium heat. Add the onions, garlic, ginger, basil, salt, black pepper, and cumin and saute until the onions have softened. 2. Stir in the carrots and saute for 5 minutes. Using a spatula, push the mixture to the edges of the pot. Add the pork chops and brown them on each side. 3. Add the broth, lentils and tomato paste and stir to combine. 4. Cover and simmer for 50 minutes. 5. Remove the pork chops from the pot. Using two forks, pull the meat from the bones. Discard the bones. Lightly shred the meat and return it to the soup. 6. Add the lime juice and chili flakes and stir into the soup, then remove the pot from the heat. Serve hot.

A great lunch soup full of protein. I make a batch of this and warm it up all week.

- Heat the olive oil in a large pot over medium-high heat until it begins to smoke. Season the beef with salt and pepper, then gently place into the hot oil, and brown on all sides, about 8 minutes. Once browned, remove the beef and set aside, reserving the remaining oil in the pot. Stir in the celery, carrot, onion, garlic, cilantro, and oregano; cook and stir until the onion has softened and turned translucent, about 8 minutes more.
- Pour in the chicken broth, tomatoes, and browned beef. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the meat is beginning to turn tender, about 1 hour.
- After the soup has simmered 1 hour, add the lentils, recover, and continue simmering until the lentils are tender, about 40 minutes. Season to taste with salt and pepper, then stir in the parsley. Sprinkle with Parmesan cheese to serve.

- Into a casserole, brown salt pork cubes over medium heat.
- Remove and, if desired, reserve salt pork cubes.
- Saute chopped onion and leek in salt pork fat.
- Stir in lentils.
- Pour in broth; bring to a boil.
- Lower heat; mix in minced celery and carrot, crushed garlic, bay leaf and chopped parsley.
- Simmer for 1 hour or until lentils are tender.
- Season.
- Serve really hot, garnished if desired with reserved salt pork cubes.

ROASTED PORK WITH LENTILS

- Preheat the oven to 450 degrees F. Combine the lentils, squash, bay leaves and 2 1/2 cups water in a saucepan. Bring to a boil, then reduce the heat to medium low, cover and cook until tender, about 25 minutes.
- Meanwhile, mix the mustard and thyme in a small bowl; brush all over the pork. Place the pork on a baking sheet and sprinkle with the breadcrumbs. Transfer to the oven and roast until a thermometer inserted into the thickest part registers 145 degrees F, 20 to 25 minutes.
- Meanwhile, combine the bacon, shallots and celery in a medium skillet and cook over medium heat, stirring occasionally, until the bacon is crisp and the shallots are golden, about 8 minutes. Add the wine and cook until it evaporates, about 5 more minutes. Stir in the parsley.
- Remove the pork from the oven, cover loosely with foil and let rest 5 minutes. Divide the lentil mixture among plates. Slice the pork and serve with the lentils. Spoon the bacon mixture on top.

- In a large pot, brown the salt pork over medium heat.
- Remove the bits and saute the onion and carrot about five minutes in the fat from the pork.
- Add the garlic and saute a minute longer.
- Re-add the pork bits as well as the parsley, lentils, and water or stock.
- Bring to a boil, then reduce heat to low.
- Simmer about 45 minutes to an hour, or until the lentils are soft and cooked through, but not falling apart.
- Season with salt and pepper to taste, and serve with a crusty bread or crackers.
