CARNE ADOVADA (RED CHILE AND PORK STEW)

Carne Adovada (Red Chile and Pork Stew) image

My aunt brought me a trunk load of dried red chiles and chile powder so I have been finding recipes to use them up. This was delicious a bit spicy so make sure you can take some heat before giving this one a try - or you might sub some of the New Mexico Chile Powder for California Chile powder. This makes great burritos with beans and sour cream.

Time 2h45m

Yield 6 serving(s)

Number Of Ingredients 11

3 tablespoons vegetable oil, divided
2 medium onions, chopped (about 3 cups)
6 large garlic cloves, minced
3 tablespoons flour
1 1/2 teaspoons salt
1 1/2 teaspoons ground cumin
1 teaspoon fresh ground black pepper
3 1/2 lbs boneless pork shoulder, fat trimmed and meat cut into 1 1/2-in . cubes (butt)
1 cup ground red dried New Mexico chile
4 cups reduced-sodium chicken broth (I replaced some of the broth with chicken boullion and water)
1 bay leaf

Steps:

  • Preheat oven to 350°. Heat 2 tablespoons oil in a large, heavy-bottomed, ovenproof pot over medium-high heat. Add onions and garlic and cook, stirring, until onions are golden, about 6 minutes. Remove from heat and transfer onions and garlic to a bowl with a slotted spoon.
  • In a large bowl, stir together flour, salt, cumin, and pepper. Add pork and toss to coat. Return pot to medium-high heat, add remaining 1 tablespoons oil, and, working in batches, lightly brown meat on all sides, 5 to 7 minutes per batch. Transfer meat to a separate bowl as you go.
  • Return onions and garlic to pot. Sprinkle with ground chiles and cook, stirring, 2 minutes (mixture will be thick- I added some of the broth at this point to keep the chile from burning). Add the rest of the broth, stirring to loosen browned bits from bottom of pot. Whirl sauce in a blender until smooth. Return sauce to pot and add bay leaf and reserved pork (I also added the pork bone).
  • 4. Cover pot, put in oven, and cook 1 hour. Set lid slightly ajar and cook until pork is fork-tender, about 1 hour more. Remove bay leaf and season with additional salt before serving.

PORK & HOMINY IN RED CHILES SOUP/STEW

Pork & Hominy in Red Chiles Soup/Stew image

This untried dish is reminiscent of the more common chili verde except that the stock is made from dried rather than fresh chiles. As a big fan of the smoky ancho, it appeals to me and will soon make an appearance on my dinner table. In the meantime, I'm posting here for my fellow foodies.

Time 1h35m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 lb lean pork loin, trimmed and cut into 1 inch cubes
1/4 teaspoon salt
4 cups water
4 dried ancho chiles
4 -5 garlic cloves
1 1/2 teaspoons dried oregano
1 large yellow onion, diced
1 tablespoon vegetable oil
2 cups hominy, drained
3 cups chicken broth
corn tortilla chips (optional for garnish)
diced avocado (optional for garnish)
sliced radish (optional for garnish)
lime wedge (optional for garnish)

Steps:

  • In a medium-large saucepan, add the water, salt and cubd pork. Bring liquid to a boil, then reduce to a simmer. Cook pork about 20 minuts, until it is just tender. Remove pork from water using a slotted spoon. Cover pork with a damp cloth over a bowl to keep moist.
  • In the same water used to cook the pork, add the ancho chiles. Remove from hat and allow the peppers to soak for 20 minutes. Transfer the softened chiles and liquid to a food processor or blender. Add garlic and oregano and process until smooth.
  • In the same saucepan used earlier, add the oil and saute the chopped onions, stirring often until the onions are soft and lightly browned, about 10 minutes.
  • Stir in the hominy, and the pureed peppers. Add chicken broth as needed to get the soup to reach the desired consistency or just a bit thinner than desired.
  • Stir in the reserved pork, and bring soup to a boil. Reduce heat to a simmer and cook until the pork cubes are tender, about 30 minutes. Taste and adjust seasonings as desired.
  • Laddle soup into bowls and allow diners to add condiments as desired.

1/2 teaspoon ground Mexican oregano

Place chili pods, sun dried tomatoes and 1 cup of broth in saucepan. Bring to a boil. Turn off heat, cover and allow to steep while browning the onions and meat.
  • In a heavy skillet or Dutch Oven, cook bacon until crisp. With a slotted spoon, remove the bacon from fat and set aside to drain. Green Chile Stew image

Provided by Food Network Kitchen

Time 2h55m

Yield 8 servings

Number Of Ingredients 14

2 tablespoons vegetable oil
3 pounds boneless pork shoulder, diced
Kosher salt
1 large white onion, diced
1 1/2 cups diced Hatch or Anaheim chile peppers
1 small green bell pepper, diced
1 small red bell pepper, diced
4 cloves garlic, minced
4 cups low-sodium chicken broth
1 pound Yukon gold potatoes, peeled and diced
2 15-ounce cans white hominy, drained and rinsed
1 large bunch cilantro, leaves chopped
2 tablespoons cornstarch
Flour tortillas, warmed, for serving

Steps:

  • Heat 1 tablespoon vegetable oil in a large Dutch oven over medium-high heat. Sprinkle the pork with 1 teaspoon salt. Working in batches, cook the pork, stirring, until browned, about 5 minutes. Transfer to a plate and discard the fat from the pot.

  • Whisk the cornstarch with 1/4 cup water in a small bowl until smooth. Stir into the stew along with the remaining cilantro and continue cooking, stirring occasionally, until the liquid thickens, about 5 more minutes. Serve with flour tortillas.

Yield Makes 8 to 10 servings

Number Of Ingredients 12

For pozole:
1 large head garlic
4 lb country-style pork ribs (not lean)
12 cups cold water
4 cups reduced-sodium chicken broth (32 fl oz)
1 teaspoon dried oregano (preferably Mexican), crumbled
6 dried New Mexico or guajillo red chiles* (2 oz)
1 1/2 cups boiling-hot water
1 cup coarsely chopped white onion (1 large)
1 tablespoon salt
4 (15-oz) cans white hominy (also called pozole), drained and rinsed
Accompaniments: fried tortilla strips (see cooks' note, below); 1/2-inch cubes of California avocado; thinly sliced cabbage or lettuce; chopped white onion; chopped radishes; lime wedges; crumbled dried oregano (preferably Mexican); dried hot red pepper flakes

Steps:

  • Peel garlic and reserve 2 whole cloves, then slice remaining cloves. Combine sliced garlic, pork, water, and broth in a 7- to 8-quart heavy pot and bring to a boil, skimming froth. Add oregano, then reduce heat and simmer, uncovered, skimming occasionally, until pork is very tender, about 1 1/2 hours.
  • Meanwhile, discard stems from chiles (do not seed), then soak in boiling-hot water (1 1/2 cups) in a bowl, turning occasionally, until softened, about 30 minutes (do not drain). Purée chiles with soaking water, onion, 2 teaspoons salt, and reserved garlic cloves in a blender until smooth, about 1 minute.
  • Transfer pork with tongs to a large bowl, reserving broth in pot. Shred pork, using 2 forks (discard bones). Return pork to broth, then add hominy, chile purée, and remaining teaspoon salt and simmer, uncovered, skimming froth and stirring occasionally, 30 minutes. Season with salt. 3Serve pozole in shallow bowls with accompaniments.

PORK AND CHILI STEW

Pork and Chili Stew image

This is my very-north-of-the-border take on a food I remember from living in the Southwest. The recipe is very flexible. You can use a different variety or cut of meat, add beans, or potatoes, or anything you want that can stand up to long cooking times. You can substitute dried New Mexico chilis for some or all of the Anchos, Guajillos, or Pasillas, if you wish. With a little bit of fiddling, this becomes a recipe for chili.

Provided by TheMusk

Categories     Stew

Time 4h20m

Yield 4 serving(s)

Number Of Ingredients 16

4 pork cutlets
4 -5 carrots, cut into 2 inch pieces
2 ancho chilies (dried poblano peppers)
2 guajillo chilies (a variety of dried pepper)
2 pasilla chiles (a variety of dried pepper)
1 -2 dried arbol chiles (or to taste ( omit if you want a mild stew) or 1 -2 dried chipotle chile (or to taste ( omit if you want a mild stew)
6 garlic cloves, finely diced
1 tablespoon ground cinnamon
2 tablespoons oregano
1 tablespoon cumin seed
2 tablespoons olive oil
2 tablespoons brown sugar (or piloncillo, if you have it)
salt
1 -4 cup stock (as needed to cover food in crockpot) or 1 -4 cup water (as needed to cover food in crockpot)
3 tablespoons red wine
3 tablespoons quick-cooking grits (more or less as needed for thickening, or use Masa Harina, if you have it)

Steps:

  • Remove the stems and seeds of the dried Ancho, Guajillo, and Pasilla peppers. Remove the stems, but do not de-seed, the Arbol or Chipotle peppers (unless you want to cut down on the heat they give the stew).
  • Toast the peppers in the oven to crisp briefly if needed, then grind the peppers to a medium-fine powder. I usually use a coffee grinder.
  • Put the olive oil into the bottom of a crockpot. Add the ground chilis, garlic, cinnamon, oregano, cumin, salt, pork, and carrots. Add stock or water sufficient to cover the ingredients, then add the brown sugar.
  • Cok for 2 hours on high. Then add the wine, and slowly add grits sufficient to thicken the gravy.
  • Cook another 2 hours on low.
  • Serve over rice. Fresh fruit makes a good accompaniment.

PORK AND GREEN CHILI STEW

Pork and Green Chili Stew image

This is a great winter recipe - especially for us Wisconsin-ites! Warms you up...My husband found it on Art Bell's website a few years back - I lost my original copy off the computer,so I can't credit the original chef, but luckily had written it down for a friend, who copied it for me. I've changed it somewhat, like the hominy in it...it's definitely adjustable for those of you who like more "heat" when you eat.

MEXICAN PORK AND GREEN CHILE STEW

Mexican Pork and Green Chile Stew image

Here's my version of a traditional Mexican 'Guisado de Puerco en Chile Verde' (Green Chile and Pork stew). It is bursting with flavor, and is mildly-spicy. Serve with hot corn or flour tortillas with butter, or black beans and white rice.

Provided by Seanzilla

Categories     Soups, Stews and Chili Recipes     Stews     Pork

Time 1h

Yield 6

Number Of Ingredients 12

2 tablespoons vegetable oil
1 cup all-purpose flour
2 ½ pounds lean boneless pork, cut into 1-inch cubes
1 ½ cups diced onion
1 clove garlic, minced
1 (14.5 ounce) can no-salt-added diced tomatoes
1 (4 ounce) can chopped green chilies
2 tablespoons minced fresh cilantro
¼ cup cold water
1 tablespoon cornstarch
1 cup shredded Mexican cheese blend
2 tablespoons chopped fresh cilantro, or to taste

Steps:

  • Heat oil in a large Dutch oven or large pot over medium heat.
  • Spread flour into a wide, shallow dish; add pork and turn to coat, shaking off excess.
  • Cook coated pork in hot oil until completely browned, 5 to 7 minutes. Stir onion and garlic in with the pork; continue cooking and stirring until the onion softens, about 5 minutes. Pour diced tomatoes, green chilies, and 2 tablespoons cilantro over the pork mixture; stir. Place a cover on the Dutch oven and simmer the mixture until pork is tender and no longer pink in the center, about 40 minutes.
  • Whisk cold water and cornstarch together in a small bowl; stir into the liquid in the Dutch oven and continue cooking until the sauce thickens, 5 to 10 minutes.
  • Remove Dutch oven from heat; let dish rest 10 to 15 minutes. Ladle into bowls and top with cheese and desired amount of cilantro to serve.
