PORK AND MANGO SALSA BURRITO

Steps:
- Preheat oven or toaster oven to 350 degrees. Wrap tortillas in foil and set aside.
- Heat oil in nonstick skillet and saute pork, onion, red pepper, jalapeno and cumin, stirring to break pork up into small pieces. Cook until onion is tender and pork is no longer pink.
- Season to taste with salt and pepper.
- Place wrapped tortillas in oven and heat 7 or 8 minutes, until soft and steaming.
- Meanwhile, reduce heat under pork mixture to very low and stir in yogurt, just long enough to mix thorougly. Remove from stove so yogurt will not separate.
- Spoon some of pork mixture down the center of a tortilla. Top with salsa and fold over one-third of tortilla, then fold in sides and roll to seal completely.

- Whisk the sugar, soy sauce, onion, garlic and black pepper together in a large bowl. Add the pork and toss to coat. Cover and refrigerate at least 2 hours. Overnight is best if possible.
- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Thread the pork onto the soaked skewers. Cook on the preheated grill until the pork is no longer pink in the center, 3 to 5 minutes per side.

- In a small bowl, combine the first nine ingredients. Rub over the roast. Place in a shallow baking dish; cover and refrigerate for 3 hours or overnight. - Mix together the jerk seasoning, olive oil and lime juice. Toss the chicken in it and leave to marinate in the fridge for at least 20 mins, or up to 24 hours.
- Make the salsa by mixing all the ingredients together with some seasoning - add a chopped red chilli if you like extra heat.
- Heat the grill or barbecue to Medium. Thread the chicken onto 8 metal skewers divided by the yellow peppers - aim for 3 of each per skewer. Cook for 8 mins each side until cooked through and lightly charred. Serve with the salsa and rocket leaves.

- In small glass or plastic bowl, mix jerk seasoning ingredients. Rub evenly on both sides of pork. Cover; refrigerate at least 30 minutes but no longer than 1 hour to blend flavors.

GRILLED PORK KEBABS WITH MANCHAMANTEL SAUCE

- To make the kebabs:
- Let the skewers soak in water to cover for 1 hour. Toast the chili on a baking sheet in the middle of a preheated 250°F. oven for 5 minutes and transfer to a heatproof bowl. Pour enough boiling water over the chili to cover, let the mixture stand for 30 minutes, and drain the chili. In a blender blend together the chili, the 1 cup water, the garlic, the onion, the cumin, the thyme, the orégano, the salt, the peppercorns, the oil, and the lemon juice until the marinade is smooth.
- In a large heavy-duty resealable plastic bag combine the pork and the marinade and let the pork marinate, chilled, for at least 6 hours overnight.
- Drain the pork, pat it dry lightly, and thread each skewer loosely with 3 pieces of the pork, 3 chunks of the pineapple, and 3 chunks of the red onion. Grill or broil the kebabs on an oiled rack set about 4 to 5 inches from the heat for 8 to 10 minutes on each side, or until the pork is cooked through but still slightly pink. Serve the kebabs with the manchamantel sauce.
- To make the sauce:
- Toast the chilies on a baking sheet in the middle of a preheated 250°F. oven for 5 minutes and transfer them to a heatproof bowl. Pour enough boiling water over the chilies to cover, let the mixture stand for 30 minutes, and drain the chilies. In a heavy skillet cook the garlic, the onion, and salt and pepper to taste in 2 tablespoons of the oil over moderately low heat, stirring, until the onion is soft and pale golden, add 1 tablespoon of the sugar and 1 1/2 tablespoons of the vinegar, and cook the mixture, stirring, for 1 minute. Transfer the onion mixture to a blender, add the chilies, the broth, the 1/2 cup water, the pineapple, the banana, the cinnamon, the cloves, the additional sugar and vinegar if desired, and salt and pepper to taste, and blend the sauce until it is very smooth. In the skillet heat the remaining 1 1/2 tablespoons oil over moderately high heat until it is hot but not smoking, add the sauce, and simmer it, stirring, for 5 minutes. Makes about 3 cups.

- Heat a grill to medium high.
- Grill the pineapple slices 2 minutes per side. Cut into a small dice, discarding the core.
- In a bowl, combine the pineapple, jalapeno, cilantro, lime juice, pepper, 1 tablespoon of the olive oil and 1/2 teaspoon of salt and set aside.
- Combine the chili powder and remaining salt in a large bowl.
- Add the pork and the remaining oil and toss to coat.

- Cut halloumi into 1-inch cubes. Cut onion into 6 wedges, then peel off the outer 2 to 3 layers of each wedge and set aside. Reserve inner parts for another use.
- Stir yogurt, tikka paste, garlic, and ginger together in a mixing bowl. Season with marinade salt and pepper.
- Gently fold halloumi cubes and bell peppers into the marinade. Add outer layers of onion and stir to coat. Marinate at room temperature for 1 hour, or in the refrigerator for 3 hours.
- Alternately thread halloumi, bell peppers, and onions onto skewers.
- Lightly oil a griddle pan with vegetable oil and heat over medium heat. Add skewers and cook, turning a couple of times, until halloumi and vegetables are lightly charred in places, 12 to 15 minutes.
- Sprinkle with cilantro and serve with mango salsa.

- To make the salsa, whisk the lime juice, honey, mustard and salt in a medium bowl. Add the beans, mango, bell pepper, onion, cilantro and jalapeno or green chilis. Mix well. Cover and refridgerate until ready to serve.
- Preheat the broiler.
- Add the pork, vinegar, oregano, chili powder, cumin and oil in a gallon sized zip top baggie. Shake until well mixed and coated. Thread the pork onto 4 metal skewers.
