SUNNY'S PORK KEBABS AND BAKED PINEAPPLE RICE



Sunny's Pork Kebabs and Baked Pineapple Rice image

1 cup pineapple juice
1/4 cup soy sauce
1/4 cup packed brown sugar
2 tablespoons grated fresh ginger
2 tablespoons vegetable oil
1 tablespoon gochujang (Korean chili paste)
1 clove garlic, grated on a rasp grater or finely minced
1 1/2 pounds pork tenderloin, cut into 1-inch cubes
Kosher salt and freshly cracked black pepper
Kosher salt and freshly cracked black pepper
Sunny's Baked Pineapple Rice, recipe follows, for serving
1 cup jasmine rice, rinsed
4 pineapple rings, cut into chunks
1/2 cup coconut milk
2 tablespoons unsalted butter
1 teaspoon kosher salt
Freshly cracked black pepper
1/4 cup toasted almond slivers
2 scallions, white and green parts, finely chopped

Steps:

  • In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ginger, vegetable oil, gochujang and garlic. Pour into a large resealable plastic bag and add the pork, moving the bag around to ensure the marinade coats all of the pork. Seal the bag and refrigerate for 1 1/2 hours.
  • After 1 1/2 hours, remove the bag with the meat from the refrigerator and let sit at room temperature for 30 minutes. If using wooden skewers, soak in water at this point.
  • Heat a grill or grill pan to medium-high heat.
  • Remove the pork from the marinade and discard the marinade. Thread 5 to 6 pork cubes on each skewer. Season the pork on all sides with a pinch of salt and a few grinds of black pepper. Grill and flip to cook on all sides until cooked through, 2 to 3 minutes on each side. Serve immediately with Sunny's Baked Pineapple Rice (or cover with aluminum foil until serving).
  • Preheat the oven to 350 degrees F.
  • Put the rice and pineapple in an 8-by-8-inch baking dish. In a medium pot on high heat, add the coconut milk, butter, salt, some black pepper and 1 cup water. Cook until the butter melts and the mixture is just below simmering. Pour over the rice and immediately cover tightly with aluminum foil. Bake until the rice is tender and the water is absorbed, 35 to 40 minutes.
  • Add the almonds and scallions, fluff with a fork and serve warm.

10 bamboo skewers, soaked in water for 30 minutes

Steps:

  • Whisk the sugar, soy sauce, onion, garlic and black pepper together in a large bowl. Add the pork and toss to coat. Cover and refrigerate at least 2 hours. Overnight is best if possible.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.

3/4 cup finely chopped onion
1/2 cup soy sauce
1/4 cup sesame seeds, toasted
1/4 cup water
3 tablespoons sugar
4-1/2 teaspoons minced garlic
1-1/2 teaspoons ground ginger
1/8 teaspoon cayenne pepper
2 pork tenderloins (3/4 pound each), trimmed

Steps:

  • In a large resealable plastic bag, combine the first eight ingredients. Cut pork into 1/4-in. thick slices; add to marinade. Seal bag and turn to coat; refrigerate for at least 1 hour. Drain and discard marinade. , On each of six long metal or soaked wooden skewers, thread beef. Grill, covered, on an oiled rack over medium heat or broil 4 in. from the heat for 9-12 minutes or until meat is tender, turning once.

This is such an easy quick recipe. Season, skewer and grill - that is all you need to do. The rice cooks as you cook the pork, add a nice salad with a sesame vinaigrette for a great dinner. Now I like my own vinaigrette, but Kraft makes a good Asian Toasted Sesame Dressing I really like. Add to some bagged lettuce for a NO WORK dinner.

Number Of Ingredients 13

2 lbs pork tenderloin, cut in 1 1/2-inch cubes
16 -20 small cremini mushrooms
16 -20 small white pearl onions (you can always use a bit bigger variety, cut in half if you prefer that)
3 tablespoons olive oil
salt
pepper
1/2 cup plum sauce (I use a bottled plum sauce from the Asian aisle in almost any major grocery store, and in Asian Mark)
1 tablespoon sesame oil (light)
jasmine rice, you can use your favorite (cook according to directions)
chicken broth (I use chicken broth to cook the rice in versus water for more flavor)
1 teaspoon sesame oil (light)
4 scallions, fine chopped
1 tablespoon fresh cilantro, fine chopped

Steps:

  • Pork, Mushrooms and Onions -- Bring to room temp, or let it rest to take the chill off and cut into 1 1/2" cubes. Clean the mushrooms and peel the onions. You can leave them whole if small enough or you can cut them in half - either way. Toss into a large bowl with the olive oil, salt and pepper and coat well.
  • Skewer -- Don't forget to soak your bamboo skewers in water for about 20-30 minutes so they do not burn, or you can also use metal skewers. I use 3-4 pieces of pork; 2-3 mushrooms and a couple of onions per skewer. Should make around 8-12 skewers, depending on the size of the skewer you are using.
  • Sauce -- In a small bowl, microwave the sesame oil and plum sauce just for a few seconds to warm up which makes it easier to brush on.
  • Rice -- Just cook in chicken broth if possible according to package directions, water will work just fine, but broth adds a little more flavor. Once done, toss in the sesame oil, scallions and cilantro.
  • Grill -- Outside or inside, medium high heat, grill the skewers. I continually brush on some of the sauce as I grill the kabobs to make sure they are covered well. They take around 10-15 minutes until done, but the pork is still pink.
  • Serve -- Serve 1-2 skewers per person over the rice and enjoy! It is a very simple, quick dinner with great flavor.

1 pork tenderloin (1 pound), cut into 1-inch cubes
16 medium fresh mushrooms
1 large red onion, cut into wedges
8 cherry tomatoes
Hot cooked rice, optional

Steps:

  • In a small saucepan, combine cornstarch and brown sugar. Stir in the broth, soy sauce, garlic and ginger until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Set aside half of the sauce for serving; keep warm., On eight metal or soaked wooden skewers, alternately thread the pork, mushrooms and onion. Grill, covered, over medium heat for 10-15 minutes or until meat is no longer pink, basting frequently with remaining sauce and turning once., Place a tomato on the end of each kabob. Grill 1-2 minutes longer or until tomatoes are heated through, turning occasionally. Serve with reserved sauce and rice if desired.

1 (2 lb) boneless pork, cut into 40 1 inch pieces (shoulder or butt is nice)
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 tablespoon dried hot chili flakes
1/4 cup canola oil
1/4 cup ketchup
2 tablespoons white vinegar
2 tablespoons brown sugar
2 teaspoons soy sauce
1 teaspoon grated ginger
1/2 teaspoon salt
1/2 teaspoon sesame oil
1 (5 lb) ripe pineapple, peeled,cored and cut into 30 wedges
1 pint cherry tomatoes
3 green bell peppers, cut into 1 inch chunks

Steps:

  • In a large bowl whisk together the balsamic vinegar, garlic, chili flakes and canola oil-add pork chunks, toss well, and if you have a freezer bag pour into that-remove as much of the air as you like and place in the fridge overnight-turnning a few times.
  • At this point you can also freeze for later use.
  • If using wooden skewers pre-soak 1 hour before using, and you will need 14.
  • In a large bowl whisk together the ketchup, vinegar, brown sugar, soy, ginger, salt and sesame oil.
  • Preheat your grill to medium high.
  • Skewer the pork, pineapple, tomatoes and peppers, repeat until all skewers are done.
  • brush skewers with the ketchup/soy sauce and place kebabs on grill, basting often and turning twice.
  • Test one for pork doneness.

1/3 cup honey
1 can (8 ounces) pineapple chunks in juice, drained and coarsely chopped (juice reserved)
Coarse salt and ground pepper
1 pork tenderloin (1 pound), cut into 1 1/2-inch cubes
2 medium red bell peppers, cut into 1 1/2-inch pieces
2 scallions, thinly sliced

1/4 cup ketchup
2 tablespoons distilled vinegar
2 tablespoons sugar
2 teaspoons soy sauce
1/2 teaspoon salt
1/4 teaspoon Oriental sesame oil
a 4-pound pineapple, peeled, cored, and cut into thirty 3/4-inch-thick wedges
ten 10-inch wooden skewers, soaked in water for 30 minutes

Steps:

  • In a large bowl whisk together the red-wine vinegar, the garlic paste, and the red pepper flakes, add the vegetable oil in a stream, whisking, and whisk the marinade until it is emulsified. Add the pork, stirring to coat it with the marinade, and let it marinate, covered and chilled, for at least 6 hours or overnight.
  • In a bowl whisk together the ketchup, the distilled vinegar, the sugar, the soy sauce, the salt, and the sesame oil until the sugar is dissolved and reserve the sauce.
  • Drain the pork, reserving the marinade, and thread it and the pineapple, alternating them, onto the skewers, using 4 pieces of pork and 3 pieces of pineapple on each skewer. Brush the kebabs with some of the reserved marinade and grill them on a rack set 5 to 6 inches over glowing coals, basting them for the first 10 minutes with the reserved marinade and turning them, for 20 to 25 minutes, or until the pork is just cooked through but still juicy. Brush the kebabs with the reserved sweet-and sour sauce and grill them, turning them, for 2 minutes more. (Discard any remaining marinade; do not serve it as an accompaniment.)
