½ cup all-purpose flour
1 teaspoon salt
½ teaspoon paprika
1 egg
2 tablespoons milk
6 skinless, boneless chicken breast halves
4 tablespoons butter
½ pound fresh mushrooms, sliced
¼ cup chopped onion
1 cup chicken broth
½ cup white wine
2 tablespoons lemon juice
1 tablespoon cornstarch
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • In a shallow dish or bowl, mix together flour, salt and paprika. In a separate dish or bowl, mix together egg and milk. Dip chicken pieces in egg mixture, then in seasoned flour.
  • In a large skillet, heat butter or margarine over medium-high heat. Saute chicken pieces until golden brown. Add mushrooms and onion and saute for 3 to 5 minutes.
  • In a medium bowl combine the broth, wine, lemon juice and cornstarch. Mix together and pour mixture over chicken and mushrooms. Reduce heat to medium low and let chicken mixture simmer for 25 minutes or until chicken is cooked through and juices run clear. Sprinkle with parsley and serve.

3 to 4 pork tenderloins (about 1 pound each), cut into 1-inch slices
1 cup all-purpose flour
1/4 cup butter, cubed
1/4 cup canola oil
1 cup white wine or chicken broth

1 to 2 garlic cloves, minced
1/2 teaspoon salt

Steps:

  • Dredge pork slices in flour. In a large skillet, heat butter and oil. Brown pork on both sides in batches; remove and keep warm. Stir in the wine, water, onion, garlic and seasonings into drippings. Return pork to skillet, layering if necessary. ½ cup all-purpose flour
salt and ground black pepper to taste
3 tablespoons unsalted butter
2 tablespoons sliced shallots
⅓ cup dry white wine
¼ cup chicken stock
1 tablespoon fresh lemon juice
¼ cup chopped fresh parsley
1 tablespoon lemon zest
1 tablespoon capers

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Pound pork chops between 2 sheets waxed paper or plastic wrap until very thin, about 1/8 inch.
  • Mix flour, salt, and pepper together in a shallow bowl. Dredge both sides of each pork chop through flour mixture, shaking off any excess flour.
  • Heat butter in a large skillet over medium heat until butter starts to sizzle. Add shallots and pork chops in 1 layer, working in batches if needed. Cook pork chops until golden brown and almost cooked through, 3 to 4 minutes per side. Transfer pork chops to a baking dish and lightly tent with aluminum foil, reserving the shallots and browned bits of food in the skillet.
  • Bake pork chops in the preheated oven until cooked through, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Pour wine and chicken stock into the skillet and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon. Reduce heat and simmer until sauce is reduced by half, 2 to 5 minutes. Stir lemon juice into sauce.
  • Drizzle sauce over pork chops and top with parsley, lemon zest, and capers.

4 cups broccoli florets, halved or quartered if large (8 ounces)
3 tablespoons unsalted butter
1/4 cup chopped fresh parsley
1/4 teaspoon grated lemon zest, plus 3 tablespoons lemon juice
Freshly ground pepper
4 bone-in pork chops (1/2 inch thick; about 6 ounces each)
1 tablespoon all-purpose flour
3 tablespoons extra-virgin olive oil
1/3 cup dry white wine
2 tablespoons drained jarred capers

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs for al dente, adding the broccoli in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and broccoli and return to the pot. Add 1 tablespoon butter, 2 tablespoons parsley, the lemon zest and a big pinch each of salt and pepper. Stir well, adding the reserved cooking water as needed to loosen.
  • Meanwhile, season the pork chops on both sides with salt and pepper. Dust with the flour, shaking off any excess. Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook until well browned and just cooked through, about 4 minutes per side. Remove to a plate and tent with foil to keep warm.
  • Carefully add the wine to the skillet, scraping up the browned bits from the pan. Cook until reduced by about half, then stir in the lemon juice and capers; return to a simmer. Remove from the heat and swirl in the remaining 2 tablespoons each butter and parsley until the butter is melted. Pour in any accumulated juices from the plate of pork. Season the sauce with salt and pepper.
  • Divide the spaghetti and broccoli among plates and top each serving with a pork chop. Spoon the sauce on top.

3 tablespoons butter
1/2 teaspoon dried thyme
1/2 teaspoon salt

1 small onion, sliced

1-1/2 teaspoons cornstarch

Steps:

  • Cut tenderloin widthwise into fourths. Slice each piece in half but do not cut all the way through; open and flatten each piece. Melt butter in a large skillet; add pork. Pork Piccata with lemon and Capers is a deliciously simple Italian-American classic dish made from tender pork tenderloin slices

1-3- pound tenderloin roast thinly sliced
Kosher salt
1½ cups all-purpose flour
8 tablespoons unsalted butter
6 tablespoons extra-virgin Olive Oil
4 lemons (juice of)
⅔ cup chicken stock
1 ounce white table wine (do not use cooking wine)
¼ cup Spanish Capers (rinsed)
¼ cup chopped fresh parsley
2 lemons (sliced thinly )

Steps:

  • You will need to either have your butcher slice your tenderloin roast into thin slices before you bring home, or slice the tenderloin roast yourself using a very sharp knife into 1/2 of an inch thick slices.
  • Season the thinly sliced and lightly pounded pork tenderloin slices with coarse kosher salt and freshly ground pepper.
  • Dredge the pork tenderloin slices in the all-purpose flour and shake off the excess all-purpose flour.
  • Melt two tablespoons of butter with two tablespoons of authentic olive oil.
  • When the unsalted butter and authentic olive oil start to lightly bubble or sizzle, add three pieces of dredged pork tenderloin and cook for about 5 minutes.
  • When pork is browned, flip and cook the other side of pork tenderloin for 5 minutes. Remove the pork from metal skillet and transfer to a serving platter.
  • Melt two more tablespoons butter and add another two tablespoons of olive oil.
  • When butter and oil start to sizzle, add the other three pieces of pork tenderloin and brown both sides using the same method as above. Remove the cooked pork tenderloin from the heat and add pork tenderloin to the serving platter.
  • Continue the above process with the last two tablespoons of unsalted butter and two tablespoons of authentic olive oil till all the pork tenderloin slices are done.
  • Add the freshly squeezed lemon juice, chicken stock, splash of white table wine, and the Spanish capers to the metal skillet.
  • Return to the stove and bring to a light boil, scraping up browned bits from the metal skillet for extra flavor. Check for seasoning. Return all the cooked pork tenderloin slices to the metal skillet and simmer for about 4- 5 minutes.
  • Remove the pork tenderloin and place on a clean platter.
  • Add the remaining two tablespoons of the unsalted butter to the sauce and whisk.
  • Pour the sauce over the pork tenderloin slices and garnish with fresh parsley and lemon slices.

2 tbsp unsalted butter
2 tbsp extra-virgin olive oil, plus more for finishing
1 pint thinly sliced baby bella mushrooms
2 tbsp capers
2 garlic cloves, grated or minced
juice and zest from 1 lemon
1 lb fresh baby spinach
16 oz pasta, like spaghetti, thin spaghetti, angel hair, or linguine
salt and pepper, to taste
fres chopped parsley, for garnish

Steps:

  • Add the butter and olive oil to a large skillet over medium heat.
  • Bring a large pot of salted water to a boil. Once boiling drop the pasta and cook at least 2 minutes less than the packages instructions.
  • While the pasta cooks, add the mushrooms to the skillet and cook until caramelized, about 10-12 minutes.
  • Reduce the heat in the skillet to low. Add the garlic, capers, lemon zest, and lemon juice. Mix to coat. Add the spinach on top of the mushrooms and piccata sauce. Cover with a lit until the pasta is cooked.
  • Once the pasta is about cooked through, remove the lid and use tongs to transfer the noodles into the large skillet. Mix to combine. Cover with lid and cook for 2 minutes until the noodles are tender and the spinach is wilted.
  • Season with salt and pepper. Add fresh chopped parsley as a garnish and then serve.

PORK PICCATA WITH LEMON CAPER SAUCE

Four 6 oz / 170 g boneless pork chops or 8 3 oz / 85 g thin sliced boneless pork chops, about 1 1/2 lbs / 680 g total
1/2 cup / 75 g cassava flour (I like this one)
1/2 tsp fine sea salt
3 tbsp / 45 ml lard or avocado oil, divided
1/4 cup / 48 g rinsed & drained salted capers (I like these)
1/2 cup / 120 ml dry white wine
1/2 cup / 120 ml chicken broth, divided
2 tbsp / 30 ml fresh lemon juice (about 1 medium)
1 tsp / 4 g cassava flour
1 packed tbsp / 5 g fresh minced parsley

Steps:

  • Preheat the oven to 225 F / 110 C. Line a baking tray with foil and place an oven safe cooling rack on top. Place the tray in the oven to warm.
  • If you're using typical pork chops that are about 1 inch / 2.5 cm thick, cut them in half through the middle, making sure each piece is edged with a little fat. You don't need to do this with the thinner chops. Place each piece of pork chop between two layers of parchment paper and use the flat side of a meat tenderizer to pound them into 1/4 inch / 6 mm thick pieces.
  • Combine the cassava flour and salt in a bowl. Dip each piece of pork into the seasoned flour to lightly dredge and coat evenly, shaking off the excess before transferring to a plate.
  • Heat a large skillet or saute pan over medium heat. Once the pan is hot, add half of the fat or oil and heat until it begins to shimmer. Add half of the pork pieces and cook until lightly golden brown, about 3 minutes. Flip the pork pieces and cook for another 2 minutes. Transfer the browned pork to the rack in the oven. Add the remaining fat or oil to the pan and repeat the process for the remaining pieces of pork, then transfer them to the oven to keep warm.
  • Add the capers to the pan and cook for 30 seconds or so. Add the white wine, half of the chicken broth and the lemon juice, stirring up any browned bits from the bottom of the pan. Cook, bubbling gently, until the sauce reduces a little, about 2 minutes.
  • Mix the cassava flour together with a little cold water and whisk together to make a slurry. Add the cassava slurry to the pan and stir continuously until you have a smooth but overly thickened sauce. Add the remaining chicken broth to the pan and stir to combine and thin down the sauce. Taste and add additional lemon juice, if you like. If the sauce is too thick, add another splash or two of water or chicken broth, to taste. Stir in the fresh parsley and remove the sauce from the heat.
  • Pour a little of the lemon caper sauce over each piece of pork. Garnish with extra parsley and lemon slices if you like. Serve immediately.

1 ½ pound pork tenderloin
¼ cup flour
1 tablespoon parmesan cheese
1 teaspoon Italian seasoning
salt and pepper
4 tablespoons of butter
4 tablespoons of olive oil
2 teaspoons of minced garlic
1 cup dry white wine
¾ cup stock
¾ heavy cream
the juice of 2 lemons
2 tablespoons of capers
1/2 pound angel hair pasta

Steps:

  • Slice the pork tenderloin into 1/2 inch medallions.
  • Salt and pepper both sides of the medallions.
  • Place the medallions in a zip top bag, leave it open, and gently pound the tenderloins thin.
  • Combine the flour, parmesan cheese and Italian seasoning on a plate with a fork.
  • Press the pork tenderloin medallions in the flour mixture. Be sure to cover all side with flour.
  • Transfer to a clean plate.
  • Heat the butter and olive oil in a heavy bottom, wide pan over medium high heat.
  • Sear the medallions in the oil and flip to the second side when the first side has some lovely color on it. Remember what I always say, color equals flavor!
  • Remove from the pan and place on a clean plate, cover with foil.
  • Deglaze the pan with a cup of dry white wine. Deglazing a pan is adding a liquid to a hot pan to help lift the delicious, caramel bits of flavor off the bottom of a pan.
  • Add the heavy cream.
  • Add chicken stock.
  • Here is where that tangy layer of flavor that lemon piccata is known for. Juice 2 lemons and add them to the sauce.
  • Add 2 tablespoons of capers to the sauce. If you have never had capers before this is a great dish to try them in.
  • Bring the sauce to a boil and add the pork tenderloin medallions back into the sauce.
  • Allow the sauce to reduce and concentrate its flavors.
  • Serve over cooked angel hair pasta.

  • Prepare the pork medallions. Remove the silver skin (the silver membrane found on part of the exterior of the tenderloin) by running a sharp knife underneath it and cutting it off the meat. Slice the tenderloin into 1-inch slices. Pound these slices gently with a meat pounder until they are approximately ¾-inch thick. Season the pork medallions with salt and pepper. Lightly dredge the pork in the flour and shake off any excess.
  • Heat a large skillet over medium-high heat. Once the pan is hot, add the olive oil and sear the pork in batches for about 1½ to 2 minutes per side. Remove the pork and place on a platter, covered with aluminum foil, in the oven to keep warm.
  • Reduce the heat to medium, add the lemon slices to the pan and brown lightly. Then, add the shallots and garlic to the pan and cook for another minute, taking care not to burn the drippings in the skillet. Add the chicken stock and simmer, scraping up any brown bits on the bottom of the skillet, until the liquid has reduced by half – about 8 minutes.
