I think that I got this recipe from a Hungry Jack box. Anyway, it quick and tasty, and you should try it!

4 (6 ounce) boneless skinless chicken breasts
1/4 cup Italian dressing
salt and pepper, to taste
paprika, to taste
1/2 cup instant potato flakes

Steps:

  • Preheat oven to 350. Spray 9x13 baking dish with nonstick cooking spray.
  • Cut any visible fat from chicken.
  • Place Italian dressing in a large bowl. Place potato flakes in a separate large bowl.
  • With one hand (your 'wet hand'), coat chicken with dressing. Sprinkle with salt, pepper, and paprika to taste with your 'dry hand'.
  • Place chicken breast in potato flake bowl. With dry hand, coat chicken well with potato flakes.
  • Place breasts in a baking dish. Bake in oven for 40-45 minutes until chicken is no longer pink.

3 1/2 lbs frying chickens, cut up
1/3 cup butter, melted

Steps:

  • Heat oven to 375°F Line a 9x13 baking pan with foil. Spray with cooking spray.
  • In medium bowl, combine potato flakes, Parmesan cheese and garlic salt. Mix well.
  • Dip chicken pieces into the butter, and then roll in potato flake mixture to coat. Place in pan. Bake for 45 to 60 minutes or until chicken is tender and golden brown.

5 pounds chicken parts
1 cup water
6 potatoes, quartered
2 tablespoons olive oil
2 teaspoons crushed dried rosemary
2 teaspoons crushed dried thyme
salt and ground black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the chicken pieces in a large baking dish; pour the water into the bottom of the dish. Arrange the potatoes around and over the chicken pieces. Drizzle the olive oil over the mixture; season with the rosemary, thyme, salt, and pepper.
  • Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).

⅓ cup grated Parmesan cheese
1 teaspoon garlic salt
1 (3 pound) chicken, skin removed, cut into pieces
⅓ cup butter, melted

Steps:

  • Heat oven to 375 degrees F (190 degrees C). Grease or line with foil a baking sheet or a 13 x 9 inch baking pan.
  • In a medium bowl, combine potato flakes, Parmesan cheese, and garlic salt. Stir until well mixed.
  • Dip chicken pieces into melted butter or margarine, and roll in potato flake mixture to coat. Place in prepared pan.

  • Cut each chicken breast horizontally to obtain two large, thinner pieces. Cut these slices in two vertically, so that you have 4 pieces of schnitzel from 1 chicken breast, each piece should weigh approximately 50 g/ 1.7 oz. If the chicken breasts are smaller, cut them only once horizontally and tenderize gently. Place each chicken piece between two sheets of plastic foil and tenderize slightly using a meat mallet or a heavy saucepan. Sprinkle the chicken generously with salt and pepper.
