POTATO LEEK AND FETA PIE
Potato Leek and Feta Pie is a simple vegetarian dish that combines an amazing filling of roasted potatoes, sautéed leeks, eggs, milk and feta; all housed within a simple pie crust. The taste is simply irresistible.

Steps:
- If using pie crust, pre heat the oven to 450 F;
- Spread the crust on your sprayed, baking dish (round 9.5 inch);
- Bake it for 10 minutes;
- Remove crust from the oven and let it cool completely;
- Lower the oven temperature to 400F;
- Peel and slice the potatoes, mix them with 1 tablespoon of olive oil, spread on a baking sheet and place in the oven together with the crust and roast for about 10 minutes.In the alternative place peeled and sliced potatoes in a saucepan with salty water and cook until almost fully cooked (depending on potatoes 10 minutes);
- In a large saucepan heat up olive oil, add onions and cook for about 3-5 minutes;
- Add chopped leeks, thyme and parsley and cook until leeks are soft (7-10 minutes);
- Combine together milk, sour cream, eggs, feta cheese, salt and pepper and set aside;
- Once potatoes are done, add to the bottom of the baking dish;
- Season with salt and pepper;
- Pour 1/3 of the milk, sour cream, egg, feta mixture on top of the potatoes;
- Add leeks on top of the potatoes and spread evenly;
- Pour the remaining milk, sour cream, egg and feta mixture on top of the leeks and spread evenly;
- Place it in the 400F oven and bake for 25 minutes;
- Remove from the oven and let cool slightly before serving.

Crisp on the outside with a creamy interior. The trick to a crisp exterior is to remove as much moisture from the cooked leeks as possible, so please don't skip the step after draining. Very mildly flavored. Serve with a dipping sauce of choice, if desired.

- Halve leek lengthwise and rinse under running water. Separate the layers to remove any sand. Cut each half down the centre and thinly slice.
- Place leeks in a pot and add enough water so that leeks float but are not covered. Cover and bring to a boil. Reduce heat to a simmer and cook until tender, 25 to 30 minutes. Drain off excess water and return leeks to the pot.
- Return the pot to the stove and simmer until all excess liquid has evaporated, stirring occasionally, 4 to 5 minutes. Transfer leeks to a bowl and add egg, bread crumbs, salt, and pepper. Divide into 4 equal portions.
- Heat enough oil in a nonstick skillet to just cover the bottom. Heat on medium-high heat until oil shimmers. Use wet hands to form each portion into a 3-inch patty.
- Place the patties into the hot skillet and cook for 2 to 3 minutes per side. Remove and place on a paper towel-lined plate. Serve warm.

- Cook the potatoes in boiling, salted water for 5-8 mins until tender, but still holding their shape. Meanwhile, melt the butter in a large saucepan. Add the leeks and thyme and soften for 10-12 mins. Drain potatoes and add to the leeks with the mustard and plenty of seasoning. Stir in the cream and leave to cool a little.
- Heat oven to 180C/160C fan/gas 4. On a floured surface, roll out the pastry to the thickness of a £1 coin. Use a side plate or a bowl as a template to cut out 6 x 15cm circles. Mix the cheese with the leek mixture and pile a mound of the mix onto the centre of each pastry circle. Brush around edges with a little egg, then bring edges together and crimp with your fingers to seal.
- Place pasties on a baking tray lined with baking parchment, brush with the remaining egg and bake for 40-45 mins until golden brown. Serve warm or leave to cool.

BAKED FETA MASHED POTATOES
We took inspiration from the wildly popular baked feta pasta recipe of TikTok fame and reimagined it to create a big-batch thanksgiving side dish. The best part is no more boiling water and crowding your stovetop. Instead, we put all the ingredients together in one dish and then bake it in the oven. Cooking the dish covered helps simmer and steam the potatoes at the same time, making them smooth and fluffy when mashed. The baked feta bubbles and melts into the potatoes to lend a subtle and delicious tanginess.

- Preheat the oven to 400 degrees F. Grease a 9-by-13-by-2-inch (3.75-quart) casserole dish with butter.
- Put the potatoes in the prepared casserole dish, add the half-and-half and stir to combine. Spread the potatoes in an even layer and place the block of feta in the center, on top of the potatoes. Season with 1 tablespoon salt and a few grinds of pepper and dot the butter over the potatoes. Cover the casserole with aluminum foil and bake until the half-and-half is simmering, the cheese is bubbling and the potatoes are cooked through and very tender when pierced with a small sharp knife, about 1 hour and 20 minutes.
- Remove and reserve the aluminum foil. Use a potato masher to mash the ingredients in the casserole dish until well combined, smooth and fluffy. Fold in the sour cream and season with salt and pepper. Cover the mashed potatoes with the reserved foil and return to the oven until warmed through, about 10 minutes. Top with the chopped chives and a few grinds of pepper.

Steps:
- Break garlic bulb open and place in roasting pan. Roast for 20 minutes or until soft. Remove (let cool) and squeeze out garlic flesh.
- Cook sweet potatoes and carrots in large pan of boiling water for 15 minutes until soft. Drain and mash. Mix this with the garlic.
- Add the leeks, feta cheese, Tabasco, cilantro & pepper to the sweet potato mixture.
- Cover and let chill for at least 30 minutes.
- Preheat oven to 375°F Shape mixture into 8 small patties and place on baking sheet.
- Bake for 15-20 minutes until hot.
- Serve with ketchup!

This pie, with its potato crust, hails from a Serbian food magazine, says Medena at www.cafechocolada.blogspot.com/ . A lovely pic of said pie sitting pretty on a springform bottom utterly had me hooked. Now I actually hope we have cold weather until I get home so I can fully appreciate this pie. Thinking this should be very adaptable for whatever cheeses one could have on hand - nice inexpensive way to use up bits.

- First wash, and cook potatoes with their skin. Peel, and mash one immediately, and let the rest (for the filling) cool down.
- Preheat oven to 390°F
- In a bowl with mashed potato, add margarine, flour, baking powder, salt, and pepper, and knead with hands to get a smooth dough. Add half of chopped up leek, knead it in, then transfer the dough to a medium sized spring form pan, spread it around to cover pan bottom with it.
- Peel and slice the remaining potatoes, or chop them up, and place them on top of the dough, along with half of chopped up leek. Sprinkle with 1/4 t sea salt and pepper.
- Mix eggs with sour cream, add a pinch of salt, and feta cheese. Pour this over the potatoes, and place the pie in the oven. Bake for about 40 minutes, depending on the oven.
- Cool a little, then remove the spring form, and serve. Best if eaten right away, as most potato dishes.
