This French-accented potato salad is tossed with shallots, white wine, celery leaves, vinegar, and olive oil and served warm.

2 1/2 pounds Yukon gold potatoes
Coarse salt
3 tablespoons roughly chopped shallots
2 tablespoons white wine
2 tablespoons white-wine vinegar
Freshly ground pepper
3 tablespoons extra-virgin olive oil
1/3 cup loosely packed celery leaves from inner stalks, torn in half

Steps:

  • Place potatoes in a stockpot, and add enough cold water to cover by 4 inches. Bring to a boil over high heat, and add salt; reduce heat, and cook until potatoes are easily pierced with a fork, about 20 minutes. Drain; let cool slightly. Peel potato, and cut into quarters or eighths.
  • Meanwhile, in a large serving bowl, combine shallots with wine and vinegar. While still warm, add potatoes to bowl; season with salt and pepper. Drizzle in oil; toss to coat. Sprinkle with celery leaves, and serve immediately.

1 lb. fingerling potatoes, halved
2 Tbs. dry white wine
1 Tbs. white wine vinegar, more to taste
1 Tbs. minced shallot
1-1/2 tsp. Dijon mustard
1 tsp. minced garlic
1/4 tsp. granulated sugar
Kosher salt
3 Tbs. extra-virgin olive oil
Freshly ground black pepper
3 Tbs. sliced scallions
2 tsp. thinly sliced chives
1 tsp. minced fresh tarragon

Steps:

  • Put the potatoes in a pot of cold, well-salted water. Bring to a boil, and cook until tender, about 10 minutes. Drain and transfer to a clean kitchen towel to dry.
  • In a medium bowl, combine the wine, vinegar, shallot, mustard, garlic, sugar, and 1/2 tsp. salt. Whisk in the oil and season to taste with pepper. Add the potatoes, toss gently, and let sit for 5 minutes.
  • Just before serving, stir in the scallions, chives,and tarragon; season to taste with salt and more vinegar.

Salt to taste, if desired
1/3 cup corn, peanut or vegetable oil
1/4 cup finely chopped shallots
3 tablespoons finely chopped parsley
1/3 cup dry white wine at room temperature
Freshly ground pepper to taste
1 tablespoon red-wine vinegar

Steps:

  • Bring enough water to a boil to cover the potatoes when they are added. Add potatoes and salt. Bring to a boil and cook until the potatoes are tender but not mushy, about 20 minutes. Drain. While they are still hot, cut them into slices 1/4 inch thick. There should be about 5 1/2 cups.
  • Put the hot potato slices in a deep skillet or kettle and add the oil, shallots and parsley. Place the skillet on the stove and cook, stirring gently, about 1 minute. Add the wine, pepper and vinegar, then stir. Serve.

1/3 cup fruity olive oil
2 tablespoons soy or walnut oil
1 tablespoon minced shallot
1/3 cup coarsely chopped scallion, white and green parts
1/3 cup loosely packed chopped herbs, dill, parsley, tarragon

Steps:

  • In a large saucepan, cover the potatoes with about 4 quarts water, 4 t salt and bring water to a boil.
  • Lower the flame so that the potatoes cook at a medium simmer until they are easily pierced with a fork, approximately 20 minutes.
  • Drain and rinse briefly under cool water for 1 minute.
  • While the potatoes are still warm, cut them into thirds and add the remaining ingredients except for the scallions and herbs.
  • IT IS IMPORTANT TO ADD THE DRESSING WHILE THE POTATOES ARE STILL WARM SO THAT THE FLAVORS ARE ABSORBED.
  • Add the scallions and herbs after the salad has cooled or they will discolor.
  • Serve at room temperature or chilled.

1/4 cup dry white wine
4 tablespoons vegetable or olive oil

Steps:

  • Preheat oven to 200 degrees.
  • Rinse potatoes and place them in a large saucepan with cold water to cover. Bring to a boil and simmer for 20 minutes or longer, depending on the size. Do not overcook.
  • Drain potatoes, and when they are cool enough to handle, peel them and cut them into 1/4-inch slices. Place them in a heat-proof mixing bowl. Sprinkle with salt and pepper, wine and oil. 2 pounds small red potatoes scrubbed and quartered
1 pound bacon, chopped
2 tablespoons red wine vinegar
3/4 cup mayonnaise
3 tablespoons whole-grain mustard
6 scallions, chopped in 1/4-inch segments
1 red onion, diced
2 tablespoons sugar
Salt and pepper
2 hard boiled eggs, chopped

Steps:

  • Place potatoes in cold water in a medium saucepan. Bring to a boil and turn down the heat to medium, letting them cook until fork tender, about 15 minutes. In a skillet, saute bacon on low heat until crispy. Place bacon on a paper towel and discard the grease. Drain the potatoes, but DO NOT rinse them under cold water. Rather let them cool for about 6 to 8 minutes on a sheet pan. In a small bowl combine vinegar, mayonnaise, mustard, scallions, onion, sugar, and salt and pepper. Transfer potatoes to a mixing bowl and sprinkle bacon and hard boiled eggs over them. Then fold mayonnaise mixture into the potatoes and serve at room temperature.

Simple and relatively low-fat. You can either boil the potatoes on the stovetop or cook them in the microwave in a dish with 1/3 cup water. The latter takes about 16 minutes in MY microwave but I know this varies from oven to oven. May be served warm or chilled in the refrigerator. Whether to peel the potatoes before cubing them is up to you (I don't usually when making them for myself but do when I'm serving company.)

1/4 cup dry white wine
1/4 cup olive oil
4 green onions
2 tablespoons Dijon mustard

3 1/4 pounds of 2 1/2-inch-diameter red-skinned potatoes

Steps:

  • Whisk first 7 ingredients in large bowl to blend. Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.)
  • Cook potatoes in large pot of boiling salted water until just tender, about 35 minutes. Drain. Return potatoes to pot. Place pot over low heat until liquid from potatoes evaporates, about 2 minutes.
  • Cut warm potatoes into 1/3-inch-thick slices. Add to dressing. Toss gently to coat. Let stand at least 1 hour at room temperature. Toss again and serve.
