Potato rounds are piled with a creamy dressing and plenty of crunch in these potato salad bites that are easy to assemble once all the chopping is done!

6 russet potatoes, scrubbed and thinly sliced
3 tablespoons olive oil, or as needed
salt and ground black pepper to taste
½ cup mayonnaise
½ cup sour cream
2 tablespoons Dijon mustard, or more to taste
2 tablespoons apple cider vinegar
1 teaspoon balsamic vinegar
1 pinch paprika
salt and ground black pepper to taste
1 cup finely chopped celery
¾ cup finely chopped radishes
½ (14 ounce) jar cornichons, finely chopped
3 sprigs dill, divided
2 green onions, finely chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with silicone baking mats.
  • Divide potato slices between the baking sheets. Drizzle olive oil over slices and season with salt and pepper.
  • Roast in the preheated oven until slightly softened, about 10 minutes. Rotate and switch baking sheets on the oven racks. Continue roasting until tender, about 10 minutes more. Let cool completely.
  • Whisk mayonnaise, sour cream, Dijon mustard, apple cider vinegar, balsamic vinegar, paprika, salt, and pepper together in a bowl to make dressing.
  • Mix celery, radishes, and cornichons together in a bowl. Chop leaves from 1 sprig of dill and mix into the bowl.
  • Spoon 1/2 teaspoon of the dressing over cooled potato slices. Top with 1 teaspoon of the celery mixture. Sprinkle green onions on top. Garnish each slice with a small frond of dill from the remaining 2 sprigs.

2 tablespoons baking powder
1 teaspoon salt
¼ cup sugar
¼ cup butter or margarine
1 ½ cups leftover mashed potatoes
1 egg, beaten
⅓ cup cold water
⅓ cup milk
2 tablespoons milk, or as needed

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a medium bowl, stir together the flour, baking powder, salt, and sugar. Cut in butter, until pieces of butter are no larger than peas. Use a fork to stir in mashed potatoes, breaking them up into chunks. Make a well in the mixture, and pour in egg, water and milk. Stir into a loose dough using the fork.
  • Turn dough out onto a floured surface, and knead for 6 or 8 times so the dough holds together. Pat the dough out to about 3/4 inch thickness, and cut into circles with a biscuit cutter or drinking glass. Place biscuits onto an ungreased baking sheet. Brush the tops with 2 tablespoons milk.
  • Bake for 15 to 20 minutes in the preheated oven, or until bottoms are golden.

1 package (20 oz) refrigerated mashed potatoes (about 2 cups)
1 cup frozen sweet peas (from 1-lb bag)
1/3 cup chopped red onion
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
1 cup Progresso™ plain bread crumbs
2 eggs
2 tablespoons milk
Cooking spray
Tomato chutney or Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil or cooking parchment paper; spray foil or paper with cooking spray. In medium bowl, mix potatoes, peas, onion, coriander, cumin, salt and red pepper.
  • Place bread crumbs in shallow bowl. In another shallow bowl, beat eggs and milk with fork or wire whisk. Shape potato mixture by tablespoonfuls into about 1-inch balls. Roll balls in bread crumbs to coat, then dip into egg mixture and coat again with bread crumbs. Place on cookie sheet. Spray tops of balls with cooking spray.
  • Bake 10 to 14 minutes or until light golden brown and hot. Serve warm with chutney.

12 small red potatoes (1 1/2 to 1 3/4 inches in diameter)
1 teaspoon salt
1 hard-cooked egg, finely chopped
1/4 cup chopped celery
3 tablespoons dill pickle relish
2 tablespoons mayonnaise or salad dressing
1 teaspoon yellow mustard
1/4 teaspoon pepper
2 medium green onions, thinly sliced (2 tablespoons)
3 radishes, thinly sliced (1/4 cup), if desired

Steps:

  • Heat over to 400°F. Place potatoes in ungreased 15x10x1-inch pan. Bake 30 to 40 minutes or until tender. Cool 10 minutes or until cool enough to handle.
  • Cut potatoes in half. With melon baller, scoop out insides of potatoes into medium bowl, leaving 1/4-inch lining of potato flesh around edges of shells. Sprinkle shells with 1/2 teaspoon of the salt. To potato flesh in bowl, add remaining 1/2 teaspoon salt and remaining ingredients except onions and radishes; mix well, breaking up potatoes.
  • Cut very thin slice off bottom of each potato shell so potatoes will stand upright. Fill each potato shell with about 1 tablespoon filling mixture. Top with onions. Cover; refrigerate about 1 hour or until chilled. Garnish with radish slices.

Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
1 container (16 ounces) sour cream
6 ounces cheddar cheese, shredded (2 cups)
6 scallions, finely chopped (1 cup), plus more for garnish
12 ounces bacon, cooked and crumbled (1 1/2 cups)

Steps:

  • Preheat oven to 425 degrees with racks in upper and lower thirds. Place potatoes in a saucepan; cover with 2 inches of cold water. Season generously with salt and bring to a boil, then reduce heat to a simmer and cook until a knife pierces potatoes easily, 10 to 12 minutes. Drain; let cool 10 minutes.
  • Drizzle each of 2 rimmed baking sheets with 2 tablespoons oil. Arrange potatoes on sheets, tossing to coat; lightly crush each with the heel of your hand or back of a spatula to about 1/2 inch thick. Season with salt and pepper; roast, flipping halfway through, until golden and crisp, 30 to 35 minutes. Use immediately.
  • Meanwhile, in a medium bowl, combine sour cream, cheese, scallions, and bacon; season with salt and pepper. Top each potato with 1 to 2 teaspoons sour-cream mixture. Garnish with more scallions.

2 large eggs
1/4 cup vegetable oil
3 tablespoons matzo meal
1 teaspoon salt
1/2 teaspoon baking powder
1 small onion
1 1/4 pounds yellow-fleshed potatoes such as Yukon Gold

Steps:

  • Preheat oven to 400°F and grease 36 1 3/4- by 1-inch muffin cups (see note, above).
  • In a large bowl whisk together eggs, oil, matzo meal, salt, and baking powder. Grate onion on large holes of a 4-sided grater and whisk into egg mixture. Working quickly, in 2 batches, peel and quarter potatoes and in a food processor finely chop. Add potatoes as chopped to egg mixture and stir until coated well.
  • Working quickly, spoon a rounded tablespoon potato mixture into each muffin cup and bake in upper and lower thirds of oven, switching position of pans halfway through baking, until golden brown, about 30 minutes.
  • Cool potato bites in pans on racks 2 minutes. Run a thin knife around edge of each cup and transfer potato bites to a serving plate. Potato bites may be chilled, covered, 2 days or frozen 1 month. Reheat potato bites on a baking sheet in a 400°F oven until crisp, 10 to 15 minutes.

10 small red potatoes
1/4 cup chopped pimiento-stuffed olives
2 teaspoons minced fresh parsley
1 teaspoon finely chopped onion
1/2 cup mayonnaise
1-3/4 teaspoons Dijon mustard
1/8 teaspoon pepper
1/4 teaspoon salt
Paprika
Parsley sprigs, optional

Steps:

  • Place the potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 12-15 minutes or until tender. Drain and immediately place potatoes in ice water; drain and pat dry., Peel two potatoes; finely dice and place in a small bowl. Cut the remaining potatoes in half. With a melon baller, scoop out pulp, leaving a 3/8-in. shell; set shells aside. Dice pulp and add to the bowl. Stir in the olives, parsley and onion. Combine the mayonnaise, mustard and pepper; gently stir into potato mixture. , Sprinkle potato shells with salt; stuff with potato salad. Sprinkle with paprika. Chill for at least 1 hour before serving. Garnish with parsley if desired.
