I didn't have much luck finding a recipe online so I gave it a try and it worked out great! Crisp Pork Belly, chicharrones, chicharron, there are probably other names. I use this on corn tortillas with a pico de gallo and it was great with an extra squirt of lime.

Number Of Ingredients 6

1 1/2 lbs rind off pork belly
1 teaspoon salt
1/2 teaspoon dried chipotle powder (optional)
1 teaspoon brown sugar (optional)
2 cups water
1/4 cup vegetable oil (optional)

Steps:

  • cut the pork belly into about 1 inch cubes.
  • place into pressure cooker with about 2 C water and half the salt.
  • cook on high pressure for 80 minutes.
  • quick release the pressure.
  • simmer uncovered until all of the water has cooked away.
  • add vegetable oil if needed, to bring the oil level up to about 3/4 covering the pork.
  • simmer in oil for about 20 minutes or until the pork reaches your desired texture.
  • drain quickly and toss in seasoning while still very hot.
  • serve with fresh lime, corn tortillas, and pico de gallo, pickled onion, cilantro, and/or cotija cheese.
  • spice blend is completely up to you, salt, heat, sweetness are all good compliments.

  • In a deep pot, combine pork rinds, vinegar, garlic, peppercorns, and salt. Over medium heat, bring to a boil, skimming scum that floats on top.
  • Lower heat, cover, and continue to cook for about 40 to 50 minutes or until tender but not falling apart.
  • Drain well, discarding the liquid and aromatics. Refrigerate for about 30 minutes or until completely cooled.
  • Arrange pork rinds in a single layer on wire rack set over a baking sheet. Bake in a 200 F oven for about 3 to 4 hours or until shrunken, dry, and brittle. Remove from the oven.
