1 1/4 pounds thin asparagus spears, washed and dried
1 lemon, juiced
Extra-virgin olive oil, for drizzling
1/4 pound thinly sliced prosciutto di Parma

Steps:

  • For asparagus, snap off tough ends of spears where they naturally give when bent. Place spears into 1-inch of boiling water. Cover the pan and cook asparagus for 3 or 4 minutes, until spears are just tender but remain bright green in color, about 3 to 4 minutes.
  • Drain and cold shock the spears in a colander under cool water. Return cooked asparagus to skillet and coat with lemon juice and a drizzle of extra-virgin olive oil.
  • Remove bundles of several spears at a time from the pan and wrap with sliced prosciutto. Pile assembled bundles on a serving plate.

1 tablespoon olive oil
16 spears fresh asparagus, trimmed
16 slices prosciutto

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
  • Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

¼ teaspoon red pepper flakes
12 spears asparagus, trimmed
6 slices prosciutto
salt and ground black pepper to taste
1 tablespoon balsamic vinegar, or to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine olive oil and red pepper flakes. Place asparagus on a baking sheet and drizzle olive oil mixture over top; mix together with your hands to coat.
  • Cut each slice of prosciutto in half lengthwise. Wrap a strip of prosciutto around each asparagus spear, angling as you wrap to cover most of the asparagus. Arrange on the baking sheet and season with salt and pepper.
  • Broil in the preheated oven until prosciutto is sizzling and crispy and asparagus is tender, 5 to 7 minutes.
  • Transfer asparagus to a serving platter. Drizzle with balsamic vinegar and serve immediately.

1 clove garlic, crushed
1 tablespoon minced fresh chives

3 slices thin prosciutto, cut in half crosswise
3 tablespoons cream cheese or 3 tablespoons goat cheese, divided
18 stalks asparagus
blanched Italian parsley (to garnish)

Steps:

  • Combine the olive oil, vinegar, mustard, and garlic in a bowl; whisk well.
  • Stir in the chives and salt and pepper.
  • Sread each piece of prosciutto with 1/2 tablespoon of cheese.
  • Roll 3 stalks of asparagus in each half of prosciutto.
  • Top with vinaigrette.

20 paper-thin slices prosciutto
4 ounces fresh baby arugula (about 4 cups)
12 ounces Gorgonzola cheese, crumbled
3/4 cup dried currants

Steps:

  • Working with 1 slice of prosciutto at a time, cut prosciutto crosswise into 3 rectangles. Space prosciutto pieces 2 inches apart on work surface. Arrange 3 arugula leaves side by side atop each prosciutto piece, allowing tops to extend 1 inch over 1 long side of prosciutto. Top each with about 1 teaspoon cheese. Press generous 1/2 teaspoon currants into cheese atop each prosciutto piece. Starting at 1 short end of each prosciutto piece, roll up tightly, jelly-roll style. Transfer to platter. (Can be made 4 hours ahead. Cover rolls tightly and refrigerate.)

1 tablespoon white wine vinegar
1/2 lb thin asparagus, ends trimmed about 2 inches (about 24 spears)
sea salt, to taste
fresh ground pepper, to taste
2 cups loosely packed arugula leaves, washed, drained, and stems removed
1 medium lemon, juice of (about 3 tablespoons)
3/4 cup pecorino cheese, half shaved into thin slices and half grated
6 ounces prosciutto (12 thin slices)

Steps:

  • Preheat grill to medium-high heat.
  • Drizzle 1 tablespoon olive oil and vinegar over asparagus; toss lightly to coat. Season with sea salt and pepper.
  • Grill asparagus, uncovered, at medium-high heat, turning often, 4 minutes or until spears are tender, turn bright green, and begin to char slightly. Remove from grill, and set aside.
  • Toss arugula with remaining 1 tablespoon olive oil, lemon juice, and grated cheese. Season with sea salt and pepper.
  • Place 4 slices of prosciutto flat on a work surface, and top each with 2 asparagus spears, 4 to 5 arugula leaves, and 1 slice of pecorino; roll into a spiral, leaving spears and tips of arugula showing.
  • Repeat procedure with remaining ingredients.
