PROSCIUTTO WRAPPED FIGS AND BLUE CHEESE

- Preheat grill. You will need medium to high heat for grilling. The key is to crisp the prosciutto quickly and leave the blue cheese just melted with the inner part of the fig cool in temperature.
- Cut the figs in half and place a piece of blue cheese on each fig half. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap.
- Grill each piece until the prosciutto begins to color and crisp, about 2 minutes on each side. Remove from grill, lightly drizzle with extra virgin olive oil and season with sea salt and pepper. Serve warm.
PROSCIUTTO, FIG AND PARMESAN ROLLS

- Cut each piece of prosciutto in half the long way; on each piece, put a slice of Parmesan and a strip of fig. Roll up the long way, pressing so meat sticks to itself. Cover with plastic wrap if not serving right away.
- Serve within 2 hours, drizzling truffle or olive oil on top just before serving.

- Place the bread on a baking sheet, brush with the olive oil and season with salt and pepper. Toast until golden around the edges, 8 to 10 minutes.
- Spread each piece of bread with some of the blue cheese and divide the prosciutto and figs among them. Drizzle with honey and scatter thyme leaves over the top. Transfer to a platter before serving.

- lay wonton wrapper on flat surface. Place one 1 x 1 inch piece of prosciutto on wrapper, top with 1/2 chopped fig and top with crumbled blue cheese. Fold wrappers over to meet in middle and then fold sides in to close. Place folded side down on sprayed baking pan. Bake for 12-15 minutes at 350 degrees

- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, feta cheese, carrot, garlic powder, egg yolk, basil, and parsley together in a bowl.
- Place a wonton wrapper on a work surface and wet the corners of the wrapper with a moist finger. Spoon 1 teaspoon of filling in the center of the wrapper; fold wrapper over the filling, sealing the edges shut. Repeat with remaining wrappers and filling. Place wontons on a baking sheet and brush with soy sauce.
- Bake in the preheated oven until corners of wontons are brown, 10 to 12 minutes.

Steps:
- Peel and chop shallots.
- Melt butter in a frying pan over low heat. (Be careful it doesn't get brown, it's very bad for health.).
- When butter has melt, add chopped shallots. Leave covered, stirring frequently, for about 10 minutes or until translucent.
- Add sugar and stir. Let shallots caramelize for a couple of minutes, then add raspberry vinegar. At that time, you should probably go for medium heat. It's important when adding alcohol to get it to a smooth boil so the strong taste evaporates. When the strong smell is gone, you're done. Take pan off heat.
- Cut prosciutto into small pieces.
- Dice blue cheese.
- Fill the bottom of your Chinese soup spoons with caramelized shallots. Add a dice of blue cheese and top with prosciutto pieces.
- Serve right away.

- Place 12 skewers (4 inches each) in water to soak for at least 10 minutes. Heat a grill pan over medium-high heat.
- Slice the figs through the center vertically without cutting all the way through. Carefully open each fig, and place a slice of cheese and a pecan piece inside each. Gently squeeze figs to enclose the cheese. Wrap figs horizontally with a strip of proscuitto and skewer to secure. Brush the figs with oil and place on the grill. Cook, just until grill marks begin to appear, about 1 1/2 minutes. Turn and repeat with opposite side.
- Transfer to a serving platter, and lightly drizzle with honey. Serve warm or at room temperature.

- Lay 1 wrap on chopping board and spread blue cheese evenly over.
- Sprinkle with half the mozzarella.
- Lay fig slices even over the cheeses, then the proscuitto.
- Sprinkle the remaining mozarella over the proscuitto and cover with the other wrap.
- Heat a large frypan with a little oil then lay the wraps in the pan.
- Cover and fry for 2-3 minutes on one side.
- Gently flip and cook another 2-3 minutes.
