Prosciutto Wrapped Figs And Blue Cheese image

Provided by Michael Chiarello : Food Network

Categories     appetizer

Time 12m

Yield 4 servings

Number Of Ingredients 5

8 Black Mission figs
1/2 cup blue cheese, cut into cubes
8 prosciutto (thinly sliced, cut in half lengthwise)
2 tablespoons extra-virgin olive oil
Sea salt and freshly ground black pepper

Steps:

  • Preheat grill. You will need medium to high heat for grilling. The key is to crisp the prosciutto quickly and leave the blue cheese just melted with the inner part of the fig cool in temperature.
  • Cut the figs in half and place a piece of blue cheese on each fig half. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap.
  • Grill each piece until the prosciutto begins to color and crisp, about 2 minutes on each side. Remove from grill, lightly drizzle with extra virgin olive oil and season with sea salt and pepper. Serve warm.

Prosciutto, Fig and Parmesan Rolls image

This quick and easy appetizer is also incredibly elegant. Just wrap a ribbon of prosciutto around a wafer of Parmesan cheese nestled against a sliver of dried fig, and drizzle with olive or truffle oil.

Provided by Mark Bittman

Categories     quick, appetizer

Time 20m

Yield 20 rolls

Number Of Ingredients 4

10 very thin slices prosciutto
About 1/4 pound Parmesan, sliced wafer thin
8 to 10 dried figs, stemmed and cut into about 3 strips each
Truffle or olive oil

Steps:

  • Cut each piece of prosciutto in half the long way; on each piece, put a slice of Parmesan and a strip of fig. Roll up the long way, pressing so meat sticks to itself. Cover with plastic wrap if not serving right away.
  • Serve within 2 hours, drizzling truffle or olive oil on top just before serving.

PROSCIUTTO & BLUE CHEESE APPETIZER SPOONS

Prosciutto & Blue Cheese Appetizer Spoons image

Appetizer recipe to be served in Chinese soup spoons. Caramelized shallots, blue cheese and Prosciutto... Perfect flavor combination! Original recipe here: http://frenchcookingfordummies.com/2009/prosciutto-blue-cheese-appetizer-spoons/

Provided by French Cooking for

Categories     Pork

Time 35m

Yield 10 spoons, 5 serving(s)

Number Of Ingredients 6

3 prosciutto, slices
6 shallots (or 2 onions)
2 ounces blue cheese
2 tablespoons raspberry vinegar (or red wine)
1 tablespoon granulated sugar
salt & pepper

Steps:

  • Peel and chop shallots.
  • Melt butter in a frying pan over low heat. (Be careful it doesn't get brown, it's very bad for health.).
  • When butter has melt, add chopped shallots. Leave covered, stirring frequently, for about 10 minutes or until translucent.
  • Add sugar and stir. Let shallots caramelize for a couple of minutes, then add raspberry vinegar. At that time, you should probably go for medium heat. It's important when adding alcohol to get it to a smooth boil so the strong taste evaporates. When the strong smell is gone, you're done. Take pan off heat.
  • Cut prosciutto into small pieces.
  • Dice blue cheese.
  • Fill the bottom of your Chinese soup spoons with caramelized shallots. Add a dice of blue cheese and top with prosciutto pieces.
  • Serve right away.
