I love pasta! And this recipe is wonderful. I adapted the recipe from BHG to add more vegetables. Hope you enjoy it as we did!

Steps:
- Cook the pasta according to the package directions.
- Drain pasta; rinse pasta with cold water. Drain again.
- In a large saucepan melt margarine or butter.
- Add onions or leeks, bell pepper, mushroms and garlic.
- Cover and cook about 5 minutes or until onions are tender, stirring occasionally. Stir in flour and aniseed.
- Add the milk and chicken broth all at once. Cook and stir until thickened and bubbly. Stir in Parmesan cheese.
- Stir in the cooked pasta, spinach, and prosciutto.
- Spoon the mixture into a 2-quart casserole.
- Cover and bake in a 350 degree F oven for 25 to 30 minutes or until heated through.
- Let stand about 5 minutes.
- To serve, stir gently and top with chopped tomato.

CHICKEN AND SPINACH PASTA CASSEROLE RECIPE

- Preheat oven to 350 degrees F.
- Spray 9x13-inch baking dish with nonstick cooking spray; set aside.
- Cook pasta according to package directions and drain.
- Place spinach on paper towel and squeeze until almost all moisture has been removed.
- Add oil to a large nonstick skillet and place over medium heat. Add onion and garlic and sauté until tender.
- Add chicken and cook until no longer pink, stirring occasionally.
- Stir in tomatoes, marinara sauce, tomato paste, basil, oregano and crushed red pepper flakes. Bring to a boil and then reduce heat.
- Simmer 5 minutes, uncovered stirring occasionally.
- Combine pasta, spinach, chicken mixture and 1/4 cup cheese in a large mixing bowl.
- Spoon into prepared baking dish and sprinkle with remaining 1/4 cup Parmesan cheese over the top.
- Bake for 20 minutes and serve.

- In a large skillet, heat oil and half of prosciutto over medium; cook, stirring occasionally, until prosciutto is crisp, 3 to 4 minutes. Drain on paper towels; crumble. In a bowl, whisk together whole eggs, yolks, and cheese.
- Cook pasta in a pot of salted boiling water 1 minute less than package instructions. Reserve 1 cup pasta water, then drain. Slowly whisk 1/4 cup pasta water into egg mixture. Add pasta and spinach to skillet, then slowly add egg mixture to pasta.
- Stir constantly over low heat until sauce thickens and clings evenly to pasta and spinach wilts slightly, 3 to 5 minutes; add more pasta water as needed to create a silky sauce. Stir in all prosciutto. Serve with more cheese and pepper.

- Heat oven to 375°F. Cook and drain pasta as directed on package. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 1/3 cup of the pasta sauce over bottom of baking dish.
- In medium bowl, mix 1 cup of the mozzarella cheese, the cottage cheese, prosciutto and spinach. Spoon scant 2 tablespoons mixture into each shell. Arrange filled shells in baking dish. Pour remaining pasta sauce over stuffed shells. Sprinkle remaining 2 cups mozzarella cheese evenly over sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Bring 1/2 cup water to a boil in a saucepan, and cook the spinach 4 to 6 minutes, until tender.
- Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and bread crumbs.
- Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. - Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- Cook spaghetti to al dente as directed on package. Drain spaghetti, and add it back to the hot pan.
- Meanwhile, in 2-quart saucepan, melt butter over medium-low heat. Stir in garlic; cook 1 minute. Stir in flour, pepper flakes, salt and pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Gradually beat in milk with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute.
