- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
- In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.
- In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter between prepared pans.
- Bake in preheated oven until toothpick comes out clean, about 1 hour.

PUMPKIN GINGER BREAD PUDDING

- Squash: Preheat the oven to 375 degrees F.
- Cut the squash in quarters and remove the seeds. Brush the insides with a little oil and arrange them on a baking sheet, skin side up. Roast in the preheated oven until the squash is soft all the way through, about 1 hour. Remove from the oven and let cool. (This can be done 1 or 2 days ahead.) When the squash is cold, remove it from the skin and puree in a food processor. You'll need 2 1/2 cups of squash puree for this recipe. If the mixture is dry while pureeing, add a ladleful of the pudding mixture.
- Pudding: Preheat the oven to 350 degrees F.
- In a large bowl, combine the heavy cream, eggs, brown sugar, spices, and vanilla and mix well. Stir in the pumpkin puree. Combine the bread, raisins and ginger in the baking dish. Pour the pudding mixture over the bread to cover and let it sit for 15 minutes.
- Cook's Note: You may not use all of the filling. Add more filling if there's room in the dish, once the bread has soaked.
- Bake in the preheated oven until the custard is set, about 20 to 25 minutes.
- It's fall in a dessert! To serve, spoon the pudding into bowls and sprinkle a dusting of confectioners' sugar on top.
PUMPKIN, GINGER AND PORT WINE BREAD
This bread is awsome with left over turkey,cranberry sauce and mayo. Of course you can also and use cream cheese or butter.

- Preheat oven to 350 degrees. Grease and flour three loaf pans. In a very large bowl mix flour, baking powder, salt, baking soda, ginger, cinnamon, nutmeg and cloves.whisk together.
- In another large bowl combine pumpkin, eggs, oil, sugar and wine and beat until well-blended.
- Pour pumpkin mixture over the dry ingredients, beat with mixer on high speed. Stir in nuts, ginger and cranberries.
- Divide batter between loaf pans.
- Bake 50 to 60 minutes, until loaves begin to pull from sides of pan and a wooden skewer (inserted in the center of breads) comes out clean. Cool in pans on a rack for 15 minutes. Invert onto rackst and completely cool.

SQUIDGY PUMPKIN & GINGER LOAF
Use up your Halloween pumpkin leftovers in this dense, sticky loaf cake which pairs the sweet earthiness of squash with warming ginger

- Put the pumpkin or squash in a microwave- proof bowl with a dribble of water. Cover with cling film, pierce with a couple of holes and cook in a microwave on High for 5-10 mins, or until the pumpkin is soft and mashable. Drain off the water and mash until smooth. Put the treacle, syrup, sugar and milk in a pan and heat gently until the sugar has dissolved.
- Heat oven to 180C/160C fan/gas 4. Grease and line a 900g loaf tin with a strip of baking parchment. Sift the flour, bicarb, spices and a pinch of salt into a bowl together. Tip in the diced butter and rub with your fingertips until no big lumps remain.
- Whisk the mash and the egg into the lukewarm syrupy mixture, then stir everything into the dry ingredients. Pour the batter into the prepared tin, scatter with most of the crystallised ginger and bake for 45 mins until a skewer poked into the centre comes out with just moist crumbs attached. Scatter over the remaining sliced ginger to stick, then cool in the tin. This cake tastes delicious once thoroughly cooled and sliced, but even better if wrapped in parchment and foil, and left for a couple of days to mature. Perfect with a cuppa, smeared with some butter.

- Preheat oven to 350°. In a large heavy saucepan, melt butter over medium heat. Heat 5-7 minutes or until golden brown, stirring constantly. Remove from heat. Transfer to a large bowl; cool slightly. Add sugar, pumpkin and eggs; beat until well blended., In another bowl, whisk flour, cinnamon, nutmeg, baking soda, baking powder and salt; gradually beat into pumpkin mixture. Fold in walnuts and ginger., Transfer to five greased 5-3/4x3x2-in. loaf pans. Place cookies, brown sugar, flour, cinnamon and nutmeg in a food processor; pulse until cookies are finely ground. - Preheat oven to 375 degrees. Butter and flour two 8 1/2-by-4 1/2-inch (6-cup) loaf pans (see note, below); set aside. In a large bowl, whisk together flour, baking powder, ginger, and salt. In a medium bowl, whisk together sugars, pumpkin, melted butter, and eggs; add flour mixture, and stir until just combined.

PUMPKIN GINGERBREAD

- In a large bowl, combine 1/2 cup flour, brown sugar, baking powder, cinnamon, ginger and baking soda. Add the pumpkin, molasses, egg, butter and milk. Beat on low speed for 30 seconds, then on high for 2 minutes. , Add the remaining flour; beat on high for 2 minutes. Pour into two greased 4-1/2x2-1/2x1-1/2-in. loaf pans. (There will be a small amount of dough in each pan.) Combine topping ingredients; sprinkle over batter. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

GINGER SNAPPY PUMPKIN BREAD
This is a knock off of MEAN CHEF's Pumpkin Muffins with Crystalized Ginger (#61662) But I didn't have any crystalized ginger, and I only had one teaspoon of ground ginger, so thus this recipe was created. This makes a pretty good muffin; I like mine spicey but I put the more tame ingredients here. To make it even spicier, add another teaspoon or two of ginger, and another teaspoon of nutmeg. Serve with your favorite apple cider.

- Preheat oven to 350F.
- Cream pumpkin and sugar.
- Add butter and eggs; mix thoroughly.
- Add juice and milk; mix thoroughly.
- In seperate bowl, sift together all dry ingredients.
- Add dry to wet in thirds, mixing thoroughly each time.
- Batter will be very thick.
- Fill muffin cups 1/2 way.
- These puppies rise like crazy.
- Bake 20 minutes; remove from oven and allow to rest for at least 5 mins, then tip out of pan to cool on cooling rack for another 5 minutes.

- Preheat the oven to 180C/gas 4/ fan 160C. Butter and line the base and two long sides of a 1.5kg loaf tin with a strip of baking paper.
- Mix the butter, honey and egg and stir in the pumpkin or squash. Then mix in the sugar, flour and ginger.
- Pour into the prepared tin and sprinkle the top with the demerara sugar. Bake for 50-60 minutes, until risen and golden brown. Leave in the tin for 5 minutes, then turn out and cool on a wire rack. Serve thickly sliced and buttered.

PUMPKIN 3-GINGER BREAD
This was inspired by Pumpkin Gingerbread to give credit where it's due. In an effort to make this a healthier snack, I use applesauce, egg whites, and whole wheat flour instead of oil, eggs, and regular flour. It's moist and delicious and hard to eat just one slice!
