PUMPKIN OAT BREAD

Steps:
- Preheat an oven to 350 degrees F (175 degrees C), and lightly grease 2 loaf pans, 8 1/2x4 1/2-inch size.
- Stir together the oil, eggs, and pumpkin in a large bowl. Stir in the white and brown sugar, baking powder, salt, cinnamon, cloves, and nutmeg, and stir to combine well. Beat in the flour and 1 1/2 cups of oats.
- Pour the batter into the prepared loaf pans, and sprinkle the tops with the remaining 1/4 cup of oats. Press the oats lightly into the top of the batter.
- Bake in the preheated oven until a toothpick inserted in the middle of a loaf comes out clean, 40 to 45 minutes. Let cool for 15 minutes before slicing.

Steps:
- Mix together oats and milk in a microwave-safe bowl. Cook on high for 1 to 2 minutes, stirring once. Add more milk or oats to achieve the desired consistency, and cook for another 30 seconds. Stir in pumpkin puree, pumpkin pie spice, and cinnamon sugar. Heat through, and serve.

PUMPKIN OATMEAL LOAF (FAT-FREE)
I had to get rid of some canned pumpkin, and I combined a few recipes to come up with this one! It's wonderful straight out of the oven. I used Quaker Organic for the oatmeal, and half all-purpose, half whole-wheat for the flour. I also used 8th Continent soymilk.

Steps:
- Preheat oven to 350.
- Combine dry ingredients in a bowl and set aside.
- Lightly beat the egg white in the mixing bowl of a Kitchen Aid (or similar) mixer.
- Alternately add dry ingredients and milk.
- Pour into an 8-inch loaf pan that has been sprayed with cooking spray.
- Bake for half an hour, or until a toothpick inserted into the center of the loaf comes out clean.

HEALTHY PUMPKIN OAT BREAD {LOW FAT} - THE BUSY BAKER

- Preheat your oven to 350 degrees Fahrenheit. Prepare a standard loaf tin by greasing it with oil or butter, and lining the bottom and sides with parchment paper (for easy removal).
- To a large bowl, add the pumpkin, applesauce, brown sugar, eggs, vanilla and canola oil. Whisk these ingredients together with a wire whisk until they're combined.
- To the wet ingredients, add the flour, oats, baking soda, salt and spices. Mix the dry ingredients together a little bit with your fingers before using a rubber spatula to fold the dry ingredients into the wet ingredients. Don't over-mix here, but stop as soon as you see the flour disappear.
- Spoon the batter into the loaf pan you've prepared. Sprinkle a few oats and a few pumpkin seeds onto the top of the loaf before putting it in the oven to bake.
