4 cherry peppers
1 onion, cut in bite-sized pieces
1 bell pepper, cut in bite-sized pieces
1 1/2 lbs boneless chicken breasts, cut in bite-sized pieces
2 garlic cloves, crushed
1 (28 ounce) jar tomato and roasted garlic pasta sauce
1 lb angel hair pasta
parmesan cheese

Steps:

  • Heat a large, deep frying pan over medium heat. Add olive oil, then add hot cherry peppers, onion and bell pepper. Saute 2 minutes. Add chicken pieces and crushed garlic. Saute 3 or 4 minutes until browned. Add pasta sauce, lower heat and simmer.
  • Meanwhile, cook pasta according to package directions. Drain and put in a serving bowl. Pour chicken and sauce over pasta. Serve with Parmesan cheese.

1 pound boneless skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil, divided
2 medium carrots, sliced diagonally
1-1/2 cups fresh broccoli florets
2 to 3 teaspoons minced garlic
1-1/3 cups chicken broth
1/2 cup grated Parmesan cheese
2 teaspoons dried basil
1/2 teaspoon salt
Additional grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil for 4-5 minutes or until no longer pink; drain. Remove and keep warm., In the same skillet over medium heat, cook carrots in remaining oil for 3 minutes, stirring occasionally. Add broccoli and garlic; cook 2 minutes longer. Stir in the chicken, broth, cheese, basil and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until vegetables are tender., Drain pasta; serve with chicken mixture. ⅓ cup all-purpose flour
¼ teaspoon fresh ground black pepper
¼ teaspoon paprika
1 pound skinless, boneless chicken breast halves, pounded thin and cut into 2-inch pieces
2 tablespoons olive oil
1 clove garlic, minced
¼ cup butter, divided
1 cup dry white wine
⅓ cup chicken broth
¼ cup fresh lemon juice
2 tablespoons capers
2 tablespoons chopped fresh parsley
1 (8 ounce) package angel hair pasta, cooked and drained

Steps:

  • Whisk together flour, black pepper, and paprika in a shallow dish. Dredge the chicken pieces in the flour mixture, coating evenly; set aside. Heat olive oil in a large skillet over medium-high heat; stir and cook the garlic until light brown, about 1 minute. Remove the garlic from the skillet and set aside.
  • Place 2 tablespoons of butter into the skillet with the olive oil. Cook the chicken pieces in the oil and butter over medium-high heat until brown, about 5 minutes per side. Remove the chicken from the pan and set aside.
  • Pour the wine into the hot skillet and bring to a boil over high heat, scraping the browned pieces from the bottom and sides of the pan. Boil the wine until it is reduced by half, about 5 minutes. Whisk in the chicken broth, reserved garlic, lemon juice and capers. Cook for 5 minutes over medium-high heat. Stir in the remaining 2 tablespoons butter and parsley. Return the chicken pieces to the skillet and continue cooking over medium heat until the sauce thickens, about 15 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
  • Remove the chicken pieces to a serving dish and drizzle with a few tablespoons of the sauce and capers. Place the cooked angel hair pasta into the skillet with the remaining piccata sauce and toss to coat.

Premio thin sweet sausage w basil, cut into 1 in. pieces
EVOO
1 large shallot diced
1 garlic clove diced
5 plum tomatoes cored and diced
2 cans tuttorosa crushed tomatoes
1 sm can tomato sauce
fresh basil
salt & pepper
1 tsp sugar
2 chicken cubes
splash of white wine
angel hair pasta
grated cheese

Steps:

  • Saute sausage till nice and browned, remove Saute chicken on high until white, remove Saute shallot and garlic about 5 minutes Add chopped tomatoes, simmer about 5 minutes Add remaining ingredients except pasta and cheese Simmer about 15 minutes Return sausage and chicken to sauce Add grated cheese and shut off Boil pasta 6 minutes Add a little sauce to pasta just to moisten Serve separately

This dish is so simple, maybe others have also thrown this together, but my husband and I really love this. I was searching through the pantry one night when "funds" were low and this is what I came up with. Hope you like it. Adjust measurements to your liking. UPDATE: I like to add some cooked chicken to this it is really good. I also add fresh spinach to the sauté pan (if I have it on hand) when the mushrooms have a minute or so left and put a lid on it until the spinach wilts. SO GOOD!:)

6 ounces angel hair pasta
2 (14 1/2 ounce) cans petite tomatoes, petite, drained
2 tablespoons olive oil
5 garlic cloves, minced
1 1/2 cups sliced mushrooms
1 -2 tablespoon italian seasoning
1 -2 cup sliced cooked chicken, heated (I use fully cooked frozen)
garlic salt

Steps:

  • Cook angel hair according to directions.
  • In sauté pan, heat oil and cook garlic and mushrooms.
  • Add tomatoes and Italian seasoning and garlic salt if you wish. Cook for about 5 minutes or so.
  • At this point you may put the chicken in with the sauce (I put it on at the end).
  • Put desired amount of pasta on plate and then desired amount of sauce on top (add chicken if you haven't done so). Sprinkle with Parmesan cheese if you wish.
  • Enjoy.
