Cold Sesame Noodles with Spicy Peanut Sauce image

Spicy Asian-style sesame noodles that are delicious served cold or hot.

1 (12 ounce) package linguine pasta
¼ cup peanut butter
¼ cup sesame oil
3 tablespoons soy sauce
2 teaspoons white sugar
2 cloves garlic, minced
½ teaspoon crushed red pepper flakes
1 tablespoon sesame seeds, or to taste
1 tablespoon chopped green onion, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes.
  • While the pasta is cooking, combine peanut butter, sesame oil, soy sauce, sugar, and garlic in a large bowl; mix well.
  • Drain pasta and rinse under cold water. Add to the sauce and toss to coat. Sprinkle with sesame seeds and green onion.
  • Refrigerate until cold, at least 30 minutes.

Purple Cheese Noodles Sauce Mix image

There used to be several flavors of mix you could buy that you mixed up with butter and milk to make a pasta/rice sauce. My daughter's favorite was in a purple container, thus the family used to request Purple Cheese Noodles! The mix is no longer sold but this is a close match. Good mixed with bowtie pasta and some french fried onion rings. (For one pound of pasta I use 1 cup mix, 8 tbl butter and 1 cup milk)

1 cup nonfat dry milk powder
4 tablespoons parmesan cheese or 4 tablespoons romano cheese, dry grated
1/4-1/2 teaspoon onion powder
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • Mix all ingredients and store in a tightly closed container. Keeps for 4 months in the pantry.
  • TO USE: combine 1/4 cup mix with 2 tablespoons melted butter and 1/4 cup milk.
