WELSH GRANDMOTHER'S PUDDING (PWDIN MAMGU)



Welsh Grandmother's Pudding (Pwdin Mamgu) image

This pudding comes from the Gower Peninsula, South Wales. Bread crumbs mixed with milk and beef suet. Layered with blackberries, apples and sugar.

2 1/2 cups stale breadcrumbs
1 1/4 cups milk
2 ounces finely chopped beef suet (about 1/2 cup)
2 1/2 cups blackberries
3 medium sized apples, peeled cored and sliced (about 3/4 lb.)
1/3 cup sugar

Steps:

  • Soak the bread crumbs in the milk
  • add the suet and mix well.
  • Place a layer of the bread crumb mixture on the bottom of a well buttered 5 cup pie dish or shallow baking dish.
  • cover with a layer of blackberries, apples and sugar.
  • Continue to fill the dish with alternate layers of the bread crumb mixture and of the fruit and sugar, finishing with a thick layer of the bread crumb mixture.
  • Bake in a preheated 375°F oven for approximately one hour, or until the pudding is golden brown.

Yummy. I haven't made this myself yet, but I asked for the recipe from a friend after having it at her house. Posted for Zaar World Tour 05.

Number Of Ingredients 7

6 ounces breadcrumbs (12 tbsp.)
4 pints milk
2 tablespoons sugar
1 lemon
2 tablespoons butter
5 tablespoons raspberry jam
3 egg yolks

Steps:

  • Grate the rind of the lemon.
  • Add the lemon rind, sugar and butter to the milk and bring to the boil.
  • Pour over the breadcrumbs and leave to stand for 15 minutes.
  • Separate the egg whites and yolks.
  • Stir the yolks into the cool bread mixture. Melt the jam.
  • Pour half of the pudding mixture into a greased ovenproof dish.
  • Spread with half the jam.
  • Add the remainder of the pudding mixture and then the rest of the jam.
  • Bake in a warm oven (325/F. or Mark 3) for 40-45 minutes,.
