A delicious breakfast/brunch recipe using hash browns, diced ham, eggs, etc. Easy to make and everyone loves it!

3 cups shredded hash brown potatoes
⅓ cup butter, melted
seasoning salt to taste
1 cup diced cooked ham
¼ cup chopped onion
1 cup shredded Cheddar cheese
2 eggs
½ cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown.
  • In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture.
  • Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown.

3 cups raw potatoes, grated (5-6 med )
1/3 cup butter or 1/3 cup margarine, melted
1/2 cup sausage, cooked OR
1/2 cup ham, cooked and diced OR
6 slices bacon, fried and crumbled
5 eggs
1/4 cup onion, diced
1/2 cup cheddar cheese, grated
1/4 cup swiss cheese, grated OR
1/4 cup monterey jack cheese
1 teaspoon chives, chopped
1 teaspoon dried basil
3/4 cup milk
salt and pepper, to taste

Steps:

  • Preheat oven to 425 degrees.
  • Crust: Coat a large pie plate with vegetable spay.
  • Press in potatoes to an even half inch depth on bottom and up sides.
  • Pour the butter evenly over the potatoes.
  • Bake for 30 minutes.
  • Filling: Perpare your choice of meats and set aside.
  • In a large mixing bowl, beat the eggs; add the onion, cheeses, basil, chives and salt and pepper.
  • Stir in the milk and meat.
  • Pour gently over the partially baked crust and return to the oven with the temperature lowered to 350 degrees.
  • Bake for 40 - 45 minutes, or until the centre is set and the knife inserted come out clean.
  • Serve immediately.
  • Note: you can also substitute commercial frozen hash browns, but be sure they are not dusted with wheat flour for gluten free.

3 cups Simply Potatoes® Shredded Hash Browns
1 cup bacon, diced
1/2 cup red pepper, chopped
1/3 cup green onion, chopped
6 whole eggs, beaten
3/4 cup swiss cheese, shredded
3/4 cup cheddar cheese, shredded
2 cups heavy whipping cream
4 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a deep pie pan (9-inch) and set to the side.
  • Use 1 1/2 cups of hash brown potatoes and mix with salt and pepper to taste. Put hash brown potatoes in pie dish and flatten down around the dish. Transfer pie pan to the oven for 15-20 minutes. Take out and let cool. Brown bacon and discard remaining oil and continue to sautee with red peppers, green onions, remaining potatoes, salt and pepper until potatoes are lightly browned. Set to the side and let cool.
  • In a separate bowl mix eggs, cheeses, heavy whipping cream, melted butter and blend together. Combine sauteed ingredients with egg mixture and pour in the cooled pie dish. Bake for 35 - 45 minutes until egg mixture is set and lightly browned on top.
