QUICK SWEET PICKLES
Steps:
- Wash and dry the cucumbers. Using a sharp knife or a mandolin, slice the cucumbers thinly and place in a colander. Sprinkle with salt and toss to coat. Place the colander over a bowl and allow it to sit, covered, for about 1 hour. Rinse off the salt and dry the cucumber slices well. Place them into a sterilized quart jar.
- In a small saucepan add the remaining ingredients. Stir to dissolve sugar and bring to a boil. Remove from heat and allow it to cool. Pour the brine over the cucumbers in jar. Cover and refrigerate at least 4 hours, preferably overnight. Will keep, refrigerated, for about 2 weeks.
BEST EVER SWEET PICKLES
I pack away homegrown cucumbers every summer. This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. This method keeps them incredibly, refreshingly crunchy. -Ellie Martin Cliffe, Taste of Home Digital Deputy Editor

SWEET-AND-SOUR QUICK PICKLES
Inspired by classic bread-and-butter pickles, these sweet-and-sour pickles are a bit more sour than sweet with a hint of mustard and dill. Apple cider vinegar lends a fruitier flavor to the no-cook brine than white vinegar, which is often used for making cucumber pickles.

OH SO GOOD SWEET DILL PICKLES
from Bon Apetit and tweaked a bit. The pickles are dill but with a sweet taste. You can make these one week ahead of time, and they should keep for 2-3 weeks, but I bet you eat them before that! These are great for summer relish trays by the BBQ.

- Begin by sterilizing your glass jars. To do this, I simply boil water in my electric kettle and pour the hot water in and around the jars. Pour the water out and set jars on the counter, ready to fill.
- In the bottom of the jars, place fresh dill, garlic, and peppercorns (if using). Then slice cucumbers to desired thickness.
- Pack sliced cucumbers into the Mason jars. Really pack them in, because once the brine is added, any large gaps in the cucumber slices will be obvious, and you want to use up as much cucumber as you can.
- On the stovetop, combine vinegar, water, and salt. Bring the mixture to a boil and stir until the salt dissolves. Take pot off of heat and slowly pour the brine over your packed jars of cucumbers. Fill until the cucumbers are just covered, but don’t fill to the very top of the jar. Leave a little head room.
