1 lb carrots
1 clove garlic (minced)
5 Tablespoon olive oil
2 Tablespoon apple cider vinegar
1 Tablespoon honey
1/2 teaspoon ground coriander
salt and black pepper (to taste)
chopped fresh parsley

Steps:

  • Peel and shred carrots using the large shredding holes on a grater. Add minced garlic to the carrots.
  • Mix all salad dressing ingredients in a small bowl and stir until well combined. Pour dressing over the salad and toss everything. Add more salt and pepper if necessary.
  • Top with chopped fresh parsley and serve cold. If you have time, you can let it sit in the fridge for 1 hour to let all the flavors meld.

5 cups shredded carrots ((a little less than 2 pounds, depending on thickness))
1 bunch green onions, (sliced (around 3/4 cup))
1/3 cup olive oil
3 Tablespoons white wine vinegar ((you can also use red wine vinegar))
1 Tablespoon maple syrup
1 Tablespoon prepared Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 teaspoon Herbes de Provence

Steps:

  • Place shredded carrots and sliced green onions into a large bowl. Set aside.
  • In a smaller bowl, whisk oil, vinegar, maple syrup, mustard, salt, pepper and Herbes de Provence until well combined.
  • Toss salad in half the dressing. If making in advance cover and refrigerate until ready to serve.
  • When ready to serve, toss with remaining dressing.

1 tablespoon sugar
1 teaspoon salt
1/3 cup olive oil
1/3 cup canola oil
1 tablespoon spicy brown mustard
1/4 teaspoon fresh ground black pepper
4 carrots, peeled and grated
1 medium red onion, thinly sliced
3 tablespoons Dressing
Salt and freshly ground black pepper

Steps:

  • For Dressing: In a glass jar with a tight fitting lid combine the vinegar, sugar and salt. Screw on lid and shake vigorously until the salt and sugar has dissolved. Add the remaining dressing ingredients and shake vigorously until emulsified. Dressing will last up to 3 weeks in the refrigerator.
  • In a medium serving bowl, combine the carrots, onion, and dressing; toss to coat. Taste and season with salt and pepper, if needed.
