1 (15 ounce) container ricotta cheese
2 eggs
2 tablespoons dried Italian seasoning
3 cups shredded mozzarella cheese
1 cup freshly grated Parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
salt and pepper to taste
1 (32 ounce) package frozen white bread dough, thawed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, Parmesan cheese and spinach. Set aside.
  • Divide the bread dough into 8 pieces and roll each piece out to about an 8 inch circle. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place onto a greased cookie sheet.
  • Bake for 30 minutes in the preheated oven, or until nicely browned on the tops and bottoms.

Cheeseburger Calzones image

1/2 lb lean (at least 80%) ground beef
3 tablespoons ketchup
1 teaspoon yellow mustard
1 teaspoon dried minced onion
2 cups Original Bisquick™ mix
1/2 cup boiling water
1 cup shredded Cheddar and American cheese blend (4 oz)
12 dill pickle slices
1 egg, beaten
1 teaspoon sesame seed

Steps:

  • Heat oven to 375°F. In 10-inch skillet, cook beef over medium-high heat 6 to 8 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in ketchup, mustard and onion.
  • In small bowl, stir Bisquick mix and boiling water with fork until dough forms. Divide dough into fourths. On surface sprinkled with Bisquick mix, roll dough pieces in Bisquick mix to coat. Press each piece into 6-inch round, 1/4 inch thick.
  • Spoon 1/4 cup beef mixture onto one side of each dough round to within 1/2 inch of edges. Top beef on each round with 1/4 cup cheese and 3 pickle slices. Fold dough in half, covering filling. Press edges with tines of fork to seal.
  • On ungreased cookie sheet, place calzones. Brush with egg; sprinkle with sesame seed. Bake 15 to 20 minutes or until golden brown.

Impress everyone with these delicious Calzones. The filling is what I enjoy, but just like a pizza it can be adapted to any taste.

1 package yeast
1 tablespoon sugar
2 tablespoons oil
1 teaspoon salt
2 3/4 cups flour
1 can mushroom, drained
1/4 green pepper
2 slices onions
1 jar Ragu pizza sauce (any flavor you like)
1 teaspoon italian seasoning
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon garlic salt
Italian sausage
pepperoni
1/2 cup mozzarella cheese

Steps:

  • Dough: Dissolve yeast in 1 Cup of warm water.
  • Mix sugar, oil, salt, and flour and then add to yeast and water.
  • Mix together until smooth.
  • Knead and cover for 30 min.
  • In a separate bowl, mix mushrooms, green pepper, onion, Ragu, Italian seasoning, oregano, basil, garlic salt, sausage, and pepperoni.
  • Roll out dough in an approximate 10" circle.
  • Place 1-2 cups of sauce mix in center of dough.
  • Add cheese to sauce in the calzones.
  • Fold over and crimp shut.
  • Place on greased cookie sheet.
  • After 15 minutes cooking brush with melted butter.
  • Cook for a total of 25 minutes at 375 degrees or until golden brown Cover with remaining sauce and cheese.

My Moosewood Cookbook pretty much falls open to the page with this recipe. These are cheesy and delicious. It's a bit of work if you make your own dough, but they always work out great (I have been known to use frozen bread dough). Prep time includes rising time.

1 1/2 teaspoons yeast
1 tablespoon honey
1 cup warm water
1 1/2 teaspoons salt
2 1/2-3 cups flour
1 lb ricotta cheese
2 minced garlic cloves
1/2 cup minced onion
1 lb fresh spinach (10 oz pkg of frozen spinach, thawed, works fine)
2 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
2 tablespoons butter
1 dash nutmeg
salt
pepper

Steps:

  • Filling:.
  • If using fresh spinach, wash, stem and finely chop, steam it quickly on medium high heat, adding no additional water. When wilted and deep green, remove to a bowl with a slotted spoon. (if using frozen - thaw and squeeze out as much moisture as you can).
  • Saute onion and garlic in butter till translucent and soft.
  • Combine all ingredients, mix well, salt and pepper to taste.
  • Dough:.
  • Soften together yeast, water and honey.
  • Add salt and flour to make a soft dough. Knead 10 minutes, or till smooth and elastic, adding flour if necessary to keep from being sticky.
  • Cover and let rise till doubled (about 1 hour - less if using rapid rise yeast).
  • Punch down. Divide into six sections and roll out in rounds 1/4 inch thick.
  • Fill with 1/2-3/4 cup filling, placing filling on one half of the circle, leaving a 1/2 inch rim.
  • Moisten the rim with a little water, fold the empty side over, and crimp the edges.
  • Prick here and there with a fork to allow steam to escape.
  • Bake on an oiled tray (I use a baking stone) in a preheated 450 oven for 15-20 minutes or till crisp and lightly browned.
  • Brush each pastry with a little butter as it comes from the oven.

These individual calzones are great to keep in the freezer for a quick meal at a moment's notice. Bake all 8 at once, or just a couple, depending on how many you need.

1 box (9 oz) frozen chopped spinach
1/2 lb ground Italian sausage, browned and drained
1 cup whole milk ricotta cheese
1 cup shredded mozzarella cheese (4 oz)
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
16 oz refrigerated pizza dough
1 egg, slightly beaten
Pizza sauce or marinara sauce, if desired

Steps:

  • Heat oven to 375°F. Spray cookie sheet with cooking spray.
  • Cook spinach as directed on box; allow to sit a few minutes until cool enough to handle. Squeeze cooked spinach between paper towels to remove excess moisture. Place spinach in large bowl. Add sausage, ricotta, mozzarella, 3 tablespoons of the Parmesan and the Italian seasoning to bowl; stir until well combined.
  • Divide pizza dough into 8 balls. Roll and press each ball into a circle 5 to 6 inches in diameter. Place meat mixture onto one half of each of the balls, leaving a 1/2 inch border around the edge. Fold dough over filling; pinch and roll edges to seal in filling.
  • Transfer to cookie sheet. Brush tops of calzones with egg. Prick tops of calzones with fork to allow steam to escape.
  • Bake 20 to 22 minutes or until dough is golden brown, topping with remaining 1 tablespoon Parmesan cheese during last 3 minutes of baking. Cool 10 minutes on cookie sheet. Serve warm with pizza sauce.
  • Freezer Directions: Make as directed through step 3. Place on cookie sheet, and freeze about 4 hours or until firm. Place frozen calzones in resealable plastic freezer bag, and freeze. When ready to cook, place calzones on cookie sheet, and brush with egg. Bake 25 to 30 minutes or until dough is golden brown, topping with remaining 1 tablespoon Parmesan during last 3 minutes of baking. Serve with pizza sauce.

Making a calzone from scratch might seem intimidating but this meat lover's calzone recipe makes it easy. Have fun kneading the dough, rolling it out, and stuffing it with a delicious sausage filling. If you aren't sharing these, freeze them and reheat later for a quick lunch or dinner.

¾ cup warm water
1 ½ teaspoons instant yeast, (1/2 packet)
2 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
1 tablespoon olive oil
3 links Italian sausage, casings removed and sausage crumbled
½ yellow onion, diced
½ teaspoon kosher salt, plus a pinch
½ teaspoon black pepper
½ cup marinara sauce, plus more for dipping
8 slices deli ham
20 slices pepperoni
1 cup shredded mozzarella cheese
1 large egg

Steps:

  • Make the dough: In a medium bowl, combine the warm water, yeast, flour, and salt. Mix with a rubber spatula until well-combined and the dough comes together into a ball.
  • Lightly flour a clean surface, then turn the dough out and knead for 1-2 minutes to smooth and encourage gluten development. Shape the dough into a ball.
  • Drizzle the olive oil in a clean large bowl. Add the dough ball and turn to coat in the oil. Cover with a kitchen towel and let rise for 1 hour, or until doubled in size.
  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • While the dough is rising, make the filling: Add the sausage to a medium nonstick pan over medium heat and cook until no longer pink, 5-6 minutes. Add the onion, salt, and pepper and continue to cook until the sausage is browned, about 5 minutes more. Remove from the heat and let cool.
  • After the dough has risen, turn it out onto a lightly floured surface. Divide the dough into 4 portions, then roll each into and round about ¼-inch (½ cm) thick.
  • Spread ¼ of the sauce over one half of each dough round, leaving a ½-inch (1 cm) border along the edge. Top each one with 2 slices of ham, 5 pepperoni, ¼ of the sausage and onion mixture, and ¼ cup (25 G) of mozzarella cheese.
  • Lightly beat the egg with a pinch of salt. Brush the egg wash on the border of the dough, fold the other half over, and press the edges together. Starting from one corner, fold the dough over itself in a twist. Tuck the other corner underneath. Transfer the calzones to the prepared baking sheet. Brush lightly with egg wash and score the tops with a knife to allow steam to escape.
  • Bake for 15-17 minutes, until golden brown. Let cool for 5 minutes.
  • Serve the calzones with marinara sauce for dipping, if desired.

This is a quick & dirty weeknight supper recipe that is very filling and takes little effort to pull together. I really enjoy the taste of hamburger and spinach together.

1 (10 ounce) package pillsbury pizza dough (sold in tubes in refrigerator section with biscuits and ready to bake cookies)
1/2 lb ground beef
onion powder, to taste
garlic powder, to taste
black pepper, to taste
1 cup frozen spinach, thawed
1 cup shredded mozzarella cheese or 1 cup cheddar cheese
tomato sauce (I recommend Classico brand)

Steps:

  • Preheat oven to 400 degrees F.
  • Season ground beef with onion powder, garlic powder, and black pepper to taste.
  • Brown beef.
  • Open pizza crust package and slice into 2 or 3 sections depending on how hungry you are!
  • Stretch dough sections a bit to thin them out and to make room for the filling.
  • Layer beef, cheese, and spinach on each dough section.
  • Wrap dough around filling.
  • Bake on a cookie sheet for 10-15 minutes until golden.
  • Serve with warm tomato sauce for dipping.
  • Tips: I like to wrap the crust around the filling so that all four sides overlap on top.
  • Then I flip them over so that they bake on the overlapping sections to prevent the bottom from falling out.
  • You can patch any thin spots before baking by pulling dough off the thick spots and pressing it over the thin area.

1 package rapid-rising dry yeast
3/4 cup warm water
1 tablespoon sugar
3 cups flour
1/4 cup olive oil
1 teaspoon salt
Egg wash
Cornmeal, for dusting
2 tablespoons olive oil
2 garlic cloves, minced
1 pound baby spinach, washed and dried
Salt and pepper
15 ounces ricotta
1 cup grated Parmesan
1/2 cup shredded fontina
1 egg
1/2 teaspoon red pepper flakes

Steps:

  • For Dough: In the bowl of a standing mixer fitted with a dough hook, bloom the yeast by combining it with warm water and sugar. Stir gently to dissolve, then let stand 5 minutes until foam appears. Turn mixer on low and slowly add the flour, 1 cup at a time. Pour in 1/4 cup olive oil and add salt. When the dough starts to come together, increase the speed to medium. Stop the machine periodically to scrape the dough off the hook. Mix until the dough pulls away from the sides of the bowl, about 10 minutes.
  • Turn the dough out onto a lightly floured work surface and fold over itself a few times. Form dough into a round and place in an oiled bowl, turn to coat the entire ball with oil so it doesn't form a skin. Cover with plastic wrap or damp towel and let rise in a warm place until doubled in size, about 45 minutes. Test the dough by pressing 2 fingers into it. If indents remain, the dough is adequately risen. When ready, knead the dough gently and divide in 4 balls. Sprinkle the rounds lightly with flour, cover, and let rest for 15 minutes. This will relax the dough, making it easier to stretch. In the meantime prepare filling.
  • For Calzones: Place a pizza stone in the oven and preheat to 400 degrees F. If you don't have a stone, simply grease a baking pan. Roll or spread the dough discs into 10-inch circles, leave the dough slightly thick so that the filling will not ooze out. Spoon a quarter of the filling onto 1 side of the dough round and brush the outer edge with egg wash to help form a seal. Fold dough over to enclose the filling and form a large turnover. Roll up the edges with your fingers to close tightly and prevent leaking. Cut a few slashes in the top to allow steam to escape during baking and brush with egg wash. Repeat with remaining rounds. Sprinkle a pizza peel (or prepared baking pan) with cornmeal and carefully transfer the calzones. Bake directly on pizza stone for 25 to 30 minutes until golden brown. Let the calzones rest 10 minutes before cutting to allow the cheese to set. Serve with basic tomato sauce if desired.
  • For Filling: In a saute pan, heat oil over medium heat. Add garlic and cook 2 minutes until lightly browned. Add the spinach, season, and continue to cook until wilted, about 5 minutes. Transfer to a colander and squeeze out the excess liquid. If necessary, drain the ricotta in a sieve to remove excess moisture also. Calzone filling should be fairly dry, because it may leak out or make the dough mushy. Combine spinach, cheeses, egg, and pepper in a large bowl.

BIG-BATCH HEALTHY BEEF, MUSHROOM AND SPINACH CALZONES



Big-Batch Healthy Beef, Mushroom and Spinach Calzones image

Set aside some extra time one weekend to make a dozen of these calzones. Then pack your freezer full of them and know you've got healthy lunches or dinners for those hectic days covered.

3 tablespoons extra-virgin olive oil
1 pound lean ground beef
Kosher salt
1/4 teaspoon crushed red pepper flakes
8 ounces cremini mushrooms, sliced (about 1 cup)
4 cloves garlic, finely minced
6 cups packed baby spinach (about 5 ounces)
One 28-ounce can crushed tomatoes
3 pounds whole-wheat or regular pizza dough
Cooking spray
Whole wheat or all-purpose flour, for the work surface
2 1/4 cups shredded part-skim mozzarella
1 large egg, beaten

Steps:

  • Set a pizza stone or baking sheet on an oven rack in the bottom third of the oven, and preheat to 425 degrees F.
  • Heat 1 1/2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the ground beef, 3/4 teaspoon salt and half the pepper flakes, and cook, breaking the beef up into large chunks with a wooden spoon, until the beef is browned all over, about 3 minutes. Add the mushrooms, 2/3 of the garlic and 3/4 teaspoon salt, and cook for 3 minutes more. Fold in the spinach, and cook until wilted, about 1 minute (the mixture should be relatively dry). Transfer the mixture to a large bowl, and let cool completely.
  • Reduce the heat to medium. Add the remaining oil, garlic and pepper flakes to the skillet, and cook, stirring, to lightly brown the garlic, about 1 minute. Add the tomatoes and 3/4 teaspoon salt, and simmer the sauce until thick, about 6 minutes; set aside.
  • Divide the pizza dough into 12 balls. Spray 2 baking sheets with cooking spray. On a well-floured surface, roll out each ball into a 6- or 7-inch circle 1/8 inch thick. On the bottom half of each circle, mound 1/4 cup of the cooled beef mixture and top with 3 tablespoons of the mozzarella. Fold over the top half of the dough to form a semicircle, and pinch the edges to seal. Carefully transfer the calzones with a spatula to the prepared baking sheets. Lightly brush with the beaten egg. Cut 2 small slits on top of each to vent steam.
  • Refrigerate half the calzones. With a spatula, transfer the rest of the calzones to the hot pizza stone or baking sheet and bake until golden brown, about 22 minutes. Repeat with the remaining calzones. Reheat the tomato sauce, and serve on the side.
  • To freeze: Let the baked calzones cool completely, then wrap each one tightly in plastic wrap and then aluminum foil. Place them in freezer bags, and freeze for up to a month. The sauce can be frozen in 12 small freezer bags for up to a month.
  • To reheat: Thaw the frozen calzones in the fridge for 1 to 2 hours. Unwrap the calzones, then microwave them on a microwave-safe plate in 1-minute increments, rotating them after each, until heated through, 2 to 4 minutes. To reheat the sauce, microwave it in a microwave-safe bowl in 30-second increments, stirring after each, until the sauce is hot.

1 1/4 teaspoons yeast (can use rapid rise)
1 teaspoon sugar
1/2 teaspoon salt
2 1/2-3 cups flour (can do half white and half wheat)
1 tablespoon olive oil
1 tablespoon minced garlic
1 -2 teaspoon dried Italian herb seasoning
5 ounces vegan mozzarella cheese (about a half block, I used I.M. Earthkind Vegan Gourmet Mozzarella Cheese, half a block is 5 ounces) or 5 ounces vegan mozzarella cheese, cut in 1/4 inch chunks (about a half block, I used I.M. Earthkind Vegan Gourmet Mozzarella Cheese, half a block is 5 ounces)
1 (12 1/3 ounce) package Mori-Nu firm tofu, plus
6 ounces Mori-Nu firm tofu (this is the kind that comes in the "juice box" and may be with the dry foods)
1 (10 ounce) package chopped spinach, defrosted and drained well
1/2 teaspoon garlic powder
1/4 teaspoon basil
1/2 teaspoon pizza seasoning
1/2 teaspoon italian seasoning
salt and pepper
1/3 small onion, peeled and cut into small dice
1 (8 ounce) can hunts tomato sauce with basil garlic and oregano, heated with
1/4 teaspoon sugar, to cut acidity

Steps:

  • Mix water with yeast and sugar in a large mixing bowl, set aside for 5 minutes to let it bloom.
  • Add the garlic, oil, salt and herbs.
  • Add about 1 1/2-2 cups flour, mix well.
  • Pour onto a floured board, add remaining flour as needed, and knead for about 5 minutes (this dough is really soft).
  • Cover with the mixing bowl.
  • Let rise about 20-30 minutes or until doubled in bulk.
  • Punch dough down, knead on lightly floured board, set aside.
  • Place the tofu, drained in a bowl and blend until smooth with hand blender.
  • Add remaining ingredients and mix well.
  • Divide your pizza dough into 4 equal pieces.
  • Roll out one piece of dough and place a fourth of the filling in the middle of the pizza dough.
  • Fold dough over the filling and seal.
  • Repeat with remaining ingredients.
  • Spray the calzones with cooking spray or and place on oiled baking sheet.
  • Bake at 400 degree F until brown on bottom, spray tops of calzones with cooking spray or rub with olive oil and flip, cooking until browned on other side.
  • Serve with warmed Hunt's Tomato Basil Oregano Sauce or your favorite.
  • If you are not a vegan, I have made another variation of this recipe, here are the changes: Instead of the vegan cheese 1 cup Veggie Mozzarella Shreds or 1/2 cup Veggie Shreds and 1/2 cup Low Fat Shredded Mozzarella 1/4 cup or so Reduced Fat Parmesan These are guestimates on the measurements, I made these today with stuff around the house and Mark and I loved them.

1 tube (13.8 ounces) refrigerated pizza crust

Steps:

  • Preheat oven to 400°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 4-6 minutes; drain. Add spinach; cook and stir until wilted. Remove from heat., On a lightly floured surface, unroll and pat dough into a 15x11-in. rectangle. Cut into 4 rectangles. Sprinkle mozzarella cheese on half of each rectangle to within 1 in. of edges., Stir ricotta cheese and pepper into sausage mixture; spoon over mozzarella cheese. 1 10-ounce package frozen chopped spinach, thawed, squeezed dry
3 green onions, chopped
1/2 cup part-skim ricotta cheese
1/2 cup crumbled Gorgonzola or blue cheese (about 2 ounces)
1 cup (packed) grated Fontina cheese (about 4 ounces)
All purpose flour
1 10-ounce tube refrigerated pizza dough

Steps:

  • Preheat oven to 425°F. Mix spinach, onions, ricotta, Gorgonzola and then Fontina in medium bowl to blend. Season with salt and pepper.
  • Sprinkle heavy large baking sheet with flour. Unfold dough on prepared sheet. Gently stretch and/or roll dough to 11-inch square; cut in half diagonally, forming 2 triangles. Place half of filling in center of each triangle. Fold 1 side of each triangle over filling, forming 2 triangular calzones. Press edges of dough to seal. Cut 3 slits in top of each to allow steam to escape.
  • Bake calzones until golden brown, about 15 minutes; serve hot.

This recipe is adapted from one published in Taste of Home magazine. It's delightful in that you can substitute, add or remove the filling ingredients to suit your particular tastes. Enjoy! Prep time doesn't include 1 hour dough rising time. My children (ages 5 & 4) LOVE this recipe - no complaints about the spinach! HOORAY!

1 (1/4 ounce) package active dry yeast
1/2 cup water (110-115 F)
3/4 cup warm milk (110-115 F)
2 tablespoons olive oil
1 1/2 teaspoons salt
1 teaspoon sugar
3 -3 1/4 cups flour (I make one of the three cups whole wheat flour)
1 lb bulk Italian sausage
10 ounces frozen chopped spinach, thawed & well drained
15 ounces low-fat small-curd cottage cheese
1/2 cup grated parmesan cheese
1 tablespoon fresh parsley, minced
1/8 teaspoon pepper
2 tablespoons cornmeal
mushroom, sliced or chopped (optional)
onion, chopped (optional)
additional olive oil or vegetable oil
1/2 teaspoon garlic salt
1 1/2 cups pizza sauce, warmed

Steps:

  • In large bowl, dissolve yeast in water& milk.
  • Add oil, salt, sugar and 2 cups of flour; beat until smooth.
  • Add enough remaining flour to form a soft dough.
  • Turn onto a floured surface& knead until smooth& elastic- approx.
  • 6-8 minutes.
  • Place in greased bowl, turning once to grease the top.
  • Cover& let rise in a warm place until doubled, about 1 hour.
  • Meanwhile, in a skillet, cook sausage until no longer pink; drain.
  • Add spinach, cheeses, parsley& pepper; mix well.
  • (mushrooms, onions, etc. can be added at this point) Punch down dough; divide into six pieces.
  • On floured surface, roll each piece into 8" circle.
  • Top each w/ 2/3 c.
  • filling.
  • Fold dough over filling; pinch to seal.
  • Place on greased baking sheets that have been sprinkled with cornmeal.
  • Brush tops lightly with oil; sprinkle with garlic salt.
  • Bake at 400 for 20-25 minutes or until golden brown.
  • Serve with pizza sauce.

16 tablespoons frozen spinach, thawed
8 tablespoons ricotta cheese
4 slices mozzarella cheese, cut in half
1 teaspoon garlic, chopped
3 tablespoons butter, melted
1 tablespoon parmesan cheese
1 teaspoon fresh parsley
1 egg
1 tablespoon water

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut pizza dough into 8 sections on a floured surface.
  • With one section, roll out dough until flat and circular.
  • Layer one slice mozzarella cheese, two tablespoons spinach, and 1 tablespoon ricotta.
  • Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together.
  • In a small bowl, mix together melted butter, parmesan, garlic, and parsley.
  • Place calzone on a parchment-lined baking sheet. Apply egg wash to outside of calzone and brush with garlic butter.
  • Bake calzones for 15-20 minutes or until golden brown.
  • Enjoy!

1 (15 ounce) container ricotta cheese
2 eggs
2 tablespoons dried Italian seasoning
3 cups shredded mozzarella cheese
1 cup freshly grated Parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
salt and pepper to taste
1 (32 ounce) package frozen white bread dough, thawed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, Parmesan cheese and spinach. Set aside.
  • Divide the bread dough into 8 pieces and roll each piece out to about an 8 inch circle. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place onto a greased cookie sheet.
  • Bake for 30 minutes in the preheated oven, or until nicely browned on the tops and bottoms.
