CLASSIC CREAM SCONES

You're best off describing scones to a German by saying that they are like a cross between a Kuchen (cake), a Plaetzchen (cookie), and a Broetchen (roll), but are very unique and not really like anything else found in Germany. My German husband *loves* this recipe: Classic Cream Scones (from Simply Scones, by Leslie Weiner and Barbara Albright)

Number Of Ingredients 10

2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/8 teaspoon salt
1/3 cup unsalted butter, chilled
1/2 cup heavy cream (whipping)
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup currants or 1/2 cup raisins (optional)
1 egg, mixed with 1 teaspoon water for glaze (optional)

Steps:

  • Preheat oven to 425F.
  • Lightly butter a baking sheet. In a large bowl, stir together the flour, sugar, baking powder, and salt. Cut the butter into 1/2-inch cubes and distribute them over the flour mixture. With a pastry blender or two knives used scissors fashion, cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, stir together the cream, egg, and vanilla.
  • Add the cream mixture to the flour mixture and stir until combines.
  • Stir in the currents/raisins (optional). With lightly floured hands, pat the dough into a 1/2-inch thickness on a lightly floured cutting board.
  • Using a floured 2 1/2-inch-diameter round biscuit cutter or a glass, cut out rounds from the dough and place them on the prepared baking sheet. Gather the scraps together and repeat until all the dough is used.
  • Lightly brush the tops of the scones with the egg mixture, if desired.
  • Bake for 13-15 minutes, or until lightly browned.
  • Remove the baking sheet to a wire rack and cool for 5 minutes.
  • Using a spatula, transfer the scones to the wire rack to cool.
  • Serve warm or cool completely and store in an airtight container.
  • Makes about 14 scones.
  • Variation: Add about 1 1/2 teaspoons of grated lemon peel to the dry ingredients.
  • My variation: Classic Scones 280 grams all-purpose flour 65 g granulated sugar 2 teaspoons baking powder 1/8 teaspoon salt 110 g unsalted butter, chilled 6 tablespoons milk 1 large egg 1 teaspoon vanilla sugar 125 g raisins Preheat oven to 220C.

3 cups all-purpose flour
1 tablespoon baking powder
1/2 cup granulated sugar
1 teaspoon salt
1 teaspoon vanilla extract
1 3/4 cups heavy cream split into two portions 1 1/2 cups for the batter, 1/4 cup for brushing on top of scones

Steps:

  • *Preheat your oven to 425°
  • In a medium bowl whisk the flour, baking powder, sugar, and salt together.
  • In a measuring cup so it's easy to pour add 1 1/2 cups heavy cream and the vanilla.
  • Pour the heavy cream mixture into the flour mixture while whisking/stirring until all the flour mixture is absorbed.
  • Roll the dough into a ball on a floured work surface, then cut the ball in half and roll them smooth into two balls.
  • Gently roll each ball into a disk shape with a rolling pin about an inch thick, they'll be about 6 inches around, then cut with a large knife or pastry scraper into 6 triangles.
  • Repeat with the second ball of dough.
  • Place each scone onto a parchment-lined baking sheet ( you can separate the scones or bake them close together in the circle shape).
  • Brush the tops of the scones with the remaining 1/4 cup of heavy cream.
  • *Place the baking sheet in the freezer for 15 minutes.
  • Bake the scones for 15 minutes, they will start to get golden brown on the edges. Test with a toothpick, it should come out dry.

Classic cream scones are delightfully fluffy, not too sweet breakfast or tea time pastries that provide the perfect excuse to slather on clotted cream and jam.

3 cups all purpose flour
1 Tbsp baking powder
1 tsp salt
1/3 cup granulated sugar
1 Tbsp vanilla bean paste
1 1/3 cups plus 3 tablespoons heavy cream (and a bit more for brushing tops of scones)
coarse sugar for topping

Steps:

  • Line a baking sheet with parchment paper.
  • Put the flour, baking powder, salt, and sugar in a food processor or a big mixing bowl if doing by hand. Pulse or whisk to combine everything well.
  • Add the 1 1/3 cups cream and vanilla to the processor and pulse/process to bring together into a dough. If it seems dry or doesn't come together add the remaining 3 tablespoons of cream.
  • Turn the dough out onto a lightly floured surface and bring into one single mass. Divide in half and form 2 disks about 5 1/2 inches across.
  • Slice each disk into 6 triangluar scones.
  • Place the scones in 2 circles on the baking sheet, leaving about an inch or so between each one. Place the pan in the freezer for 15 minutes, while you preheat the oven to 425F.
  • When the oven has come to temperature, remove the scones from the freezer and brush the tops with a little bit of heavy cream. Sprinkle with the coarse sugar.
  • Bake the scones for about 15 minutes. They'll just be starting to turn a faint golden, and not feel 'squishy' or look wet on the sides. Mine started to form cracks on the surface as they got close to being done. Note: Your oven may vary, so check them on the early side, and don't be afraid to give them an extra minute or two if they don't seem done.
  • Serve the scones warm with clotted cream and jam. Store leftovers at room temperature covered with foil. Reheat in the microwave for 20 seconds.

140 grams plain flour
1 1/2 tablespoons caster sugar
1/2 tablespoon aluminium-free baking powder
1 teaspoon fleur de sel (or 3/4 teaspoon coarse salt or 1/2 teaspoon fine sea/table salt)
30 grams unsalted butter (melted (2 tablespoons))
155 grams cream (minimum 30% fat content)
Demerara sugar or any large sugar crystals (optional)
Jam
Butter
Clotted cream (or whipped cream)
Tea (or coffee)

Steps:

  • Preheat oven to 220C / 425F. Line a baking sheet with parchment paper / silpat.
  • Combine flour, baking powder and fleur de sel (or salt) in a mixing bowl. Mix well to evenly distribute the baking powder and salt.
  • Add in 1 tablespoon of melted butter and the cream. Mix with a spatula or a wooden spoon until a dough forms.
  • Dust the countertop lightly with flour and turn out the dough. Knead gently until the dough is almost evenly coloured. Don't do this too many times or the scones will become tough, about 5 or 6 kneads is all you need.
  • Dust a rolling pin lightly with flour and roll out the dough until it's about 3/4-inch (2-cm) thick. Use a 3-inch (7.5-cm) round cutter and cut out rounds. You should be able to get 2 scones. Gather the scraps together into a ball, roll it out again and cut out one more scone. Shape the remaining dough into a ball and pat it to flatten it slightly. You will end up with 4 scones.
  • Transfer the scones onto the baking sheet. Brush the top of the scones with the remaining butter and sprinkle with the demerara sugar if using.
  • Bake the scones for 10 minutes, turn the tray 180 degrees and bake for another 5 minutes until the top is golden brown and well-risen. While the scones are baking, make your whipped cream and tea (or coffee)!
  • Place the baking sheet on a wire rack to cool for 5 minutes, and serve immediately with jam, butter, cream and tea/coffee.

⅓ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda

½ cup raisins (or dried currants)
½ cup sour cream
1 large egg

Steps:

  • Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
  • In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
  • In a small bowl, whisk sour cream and egg until smooth.
  • Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
  • Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.
