MULLED WINE
Mulled Wine is better to make when you're just about to enjoy it. You only need to warm the wine, so be careful to not overheat it to the point that it starts evaporating. Since this recipe is a stovetop version, it is easier to keep an eye on the heat level (there are longer versions of this recipe that use a slow cooker).

Steps:
- Place the water, sugar, orange & lemon peels, whole cloves, and a pinch of nutmeg in a saucepan. Turn the heat to medium and allow the sugar to dissolve; this will let the spices' flavors and aromas to blend together. Once it comes to a boil and the sugar has dissolved, reduce the heat and gently simmer for 5 minutes.
- Strain this syrup and return it to the saucepan. Add the wine and turn the heat to low. Warm the wine mixture for a couple of minutes, but do not allow it to simmer.
- Serve in cups/glasses and enjoy!

MULLED WINE
Steps:
- Put sugar and water in a 5 quart heavy pot over medium-high heat and stir until all of the sugar dissolves. Scrape the vanilla seeds from the pod and add it to the pot along with the vanilla bean and rosemary. Slowly simmer for an additional 5 minutes at very low heat.
- Meanwhile, in a piece of cheesecloth place the cinnamon, cardamom and cloves in the center. Pull the four ends together and tie kitchen string around it to make a small pouch. Make sure to leave enough string to tie around the outside handle on the pot for easy removal. Add the spice pouch, wine, brandy and cut fruit. Let it simmer on low for about 1 hour. Never let it boil. Serve warm.
QUICK MULLED WINE
On a cold, bleak day, this is ideal as a pre-dinner drink. This quantity makes 2 generous serves, or 4 small serves. Freshly squeezed orange juice, of course, is ideal - but you can get away with bottled orange juice.
