This really good and easy cake recipe from Favorite Hometown Recipes from Temple Beth El Sisterhood, Bradford, PA 1983, I will post it as written by Betty Schecter, but I use vanilla pudding mix, not lemon.

18 1/2 ounces yellow cake mix, I usually use Duncan Hines
3 ounces instant lemon pudding mix
4 eggs
1/2 pint sour cream
1 tablespoon vegetable oil
1/2 cup chopped walnuts
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour either a 10 inch tube pan or bundt pan.
  • I use Bakers Joy spray,.
  • In a large bowl combine cake mix, pudding mix, eggs, sour cream and vegetable oil.
  • Blend well, then mix for 3 minutes at medium speed.
  • Stir in raisins and walnuts.
  • Pour into prepared pan.
  • Bake for 1 hour.
  • Cool in pan for 15 minutes.
  • Remove from pan and continue cooling on cake rack.
  • Sprinkle with powdered sugar.

These individual desserts are deliciously naughty, so make plenty or you might have a fight on your hands when it comes to seconds

200g dates
225ml hot milk
200g raisins
100ml rum
150ml sunflower oil , plus extra for greasing
3 eggs , beaten with a fork
1 tsp bicarbonate of soda
250g self-raising flour
175g soft light muscovado sugar
crème fraîche , to serve
140g salted butter
140g soft light muscovado sugar
300ml double cream
50ml rum
50g raisins

Steps:

  • Heat oven to 180C/160C fan/gas 4. Mix the dates with the hot milk and set aside for 20 mins. Mix the raisins with the rum and do the same. Grease 9 dariole or small pudding moulds and sit them in a deep roasting tin or baking dish. Put the kettle on.
  • Whizz the dates and milk together in a food processor until you have a smooth purée, then scrape into a large bowl and mix with the oil and eggs, before stirring in the bicarbonate of soda, flour and sugar. Finally fold in the rum-soaked raisins and any rum left in the bowl. Divide between the darioles, then carefully pour boiling water into the tin or dish so it comes two-thirds to halfway up the sides of the darioles. Bake for 20-25 mins on a low shelf in the oven.
  • Check the puds are done with a skewer, then lift out and cool a little. For the sauce melt the butter, sugar and cream together, then turn up the heat until it bubbles and comes together into a smooth, shiny sauce. Stir in the rum and raisins and cool. Turn out the puddings from the moulds, scraping around the sides of each with a blunt cutlery knife first. Line up in a shallow baking dish and cover with cling film. Keep the puds and sauce somewhere cool for up to 24 hrs.
  • To serve spoon a little sauce and raisins over each pud, then pour the rest around (if the sauce has separated a little just gently reheat and stir back together). Cover the whole dish with a tent of foil. When the Christmas dinner is ready turn the oven down to 120C/100C fan/gas ¼ and reheat puddings for about 30-40 mins until hot. Serve with crème fraîche.

  • Preheat oven to 350°. In a small bow combine flour, baking powder and salt; cut in butter until crumbly. Stir in raisins and milk. , Spread into a greased 8-in. square baking pan. Combine brown sugar and boiling water; pour over batter. Bake until golden brown, 35-40 minutes. Serve warm.

My Mom used to make this and I still make this pudding-like cake. During the baking the batter rises to the top and a pudding like sauce forms underneath the crust. There is also a lemon version.

⅓ cup white sugar
1 teaspoon baking powder
½ cup raisins
½ cup milk
1 cup packed brown sugar
2 cups boiling water
1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 2 quart casserole dish.
  • Sift the flour, white sugar and baking powder together. Add the raisins and stir in the milk. Spoon batter into the prepared dish.
  • Combine the brown sugar, boiling water, butter and vanilla. Gently pour over the batter. Do not stir.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve warm.

1 cup(s) sifted powdered sugar

Steps:

  • Take out 1/4 cup cake flour mix. Set aside.Combine remaining cake mix, pudding , eggs, sour cream and oil in a large mixer bowl. Blend well, then beat at medium speed for 2 minutes. Stir together the raisins and reserved cake flour and add this mixture to the batter.Stir well. Pour into a greased and floured 10 inch bundt pan or a 9x13 inch baking pan. Bake at 350^ for 1 hour. Check after 30 minutes and turn bundt cake. If using 9x13-inch pad it should be done after 35 minutes. Cool 15 minutes. If using bundt pan remove from pan; finish cooling on rack and glaze. --- Glaze: Blend ingredients and spread over cake.
