1 lb boneless, skinless chicken breasts, cooked and shredded
1 can black beans, drained and rinsed
1 can Northern beans (any white bean will do except Garbanzos), drained and rinsed
1 can corn, drained
1 packet dry Ranch dressing
1 packet taco seasoning
1 can petite diced tomatoes with green chiles
32 oz chicken broth
Fritos
Sour cream
Sliced jalapenos
Shredded cheese

Steps:

  • Combine everything in a large stockpot and bring to a slow boil, cover and reduce heat to medium low. Simmer for 30 minutes. Serve with Fritos, sour cream, jalapeños and shredded cheese!

We love Ranch Chicken Chili straight from the pot on a cold winter's day. This is one of those easy dump and go soup recipes that's prepped in mere minutes, friends!

1.5 boneless, skinless chicken breasts
½ cup onion, chopped
10 ounces diced tomato with chiles (Rotel)
12 ounce can black beans, rinsed and drained
1 packed dry ranch dressing mix
1 tablespoon taco seasoning (include link)
1 cup corn
12 ounces chicken broth (check amount)
8 ounces cream cheese
Chopped cilantro and lime for garnish (optional)

Steps:

  • In a slow cooker, combine all ingredients except cream cheese, cilantro and lime. Stir to combine.
  • Cook over low heat for 6-7 hours or high heat for 4-5 hours, until chicken is cooked through to a temperature of 165 degrees.
  • Using tongs, remove the chicken from the slow cooker and cut it into cubes or use two forks to shred it. Add the block of cream cheese and stir. Allow to cook another 30 minutes until the cream cheese is melted, stirring occasionally.
  • Ladle into bowl and serve with choice of toppings, including cilantro and lime wedges.

1 tbsp. extra-virgin olive oil
1 large onion, chopped
2 garlic cloves, minced
2 tsp. oregano
2 tsp. ranch seasoning mix
2 c. shredded rotisserie chicken
3 c. chicken broth
cans Great Northern beans, drained
cans chopped green chilies
kosher salt
Freshly ground black pepper
Lime wedges, for serving
Sour cream, for serving
Shredded cheddar cheese, for serving
Cilantro leaves, for serving

Steps:

  • Heat olive oil in a large pot or dutch oven over medium heat. Add onion and sauté until soft, about 5 minutes. Stir in garlic, oregano and ranch dressing mix and cook until fragrant, about 1 minute. Add chicken and toss until evenly combined with the onion mixture then pour in chicken broth. Bring to boil then reduce to simmer.
  • In a medium bowl, mash about half of the beans with a potato masher (or two forks) until chunky. Add to pot along with the chile. Simmer for 20 minutes, stirring occasionally, until the chili has thickened. Season to taste with salt and pepper.
  • Ladle into bowls and squeeze lime juice over the chili. Top with sour cream, cheese and cilantro if desired.

1 lb chicken breast
1 medium onion (finely diced)
