These wonderful cookies require a bit of extra effort to make and assemble. But the delight of family and friends when serving them makes them all worthwhile. And they are beautiful-looking!

2 cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cinnamon
¾ cup white sugar
½ cup butter at room temperature
¼ cup egg substitute
1 teaspoon vanilla extract
¼ cup seedless raspberry jam
1 tablespoon confectioners' sugar, or as needed

Steps:

  • Mix flour, baking soda, salt, and cinnamon together in a bowl using a whisk.
  • Beat white sugar and butter together with an electric mixer on high in a bowl until light and fluffy; add egg substitute and vanilla extract. Beat until well blended.
  • Gradually beat flour mixture into sugar-butter mixture until dough is soft. Divide dough into 2 equal balls and wrap each portion in plastic wrap. Chill dough in refrigerator for at least 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  • Roll 1 dough ball into a 1/8-inch thick rectangle on a lightly floured surface; cut into 32 cookies using a square, star, or circular cookie cutter. Repeat with the second dough ball. Cut out the center of 32 cookies using a 1-inch square cookie cutter. Arrange all 64 cookies on the prepared baking sheets about 1 inch apart.
  • Bake cookies in the preheated oven until edges are lightly browned, about 10 minutes. Cool on pans for 5 minutes before transferring cookies to wire racks to cool completely.
  • Spread about 1/2 teaspoon raspberry jam into the center of each whole cookie. Sprinkle the cut-out cookies with confectioners' sugar; place 1 cut-out cookie atop each raspberry jam-topped cookie.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup and 2 tbsp of your favourite becel margarine1 cup firmly packed light brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup toasted sliced almonds
1 tablespoon lemon peel
1/4 cup icing sugar
2/3 cup seedless raspberry jam

Steps:

  • Preheat oven to 375°F (190°C). Combine flour, baking soda and salt in a medium bowl; set aside.
  • Mix margarine with sugars in large bowl. Mix in eggs and vanilla until blended. Gradually add in flour mixture; mix just until blended. Stir in almonds and lemon peel. Drop by tablespoonfuls on ungreased baking sheets, 2 inches (5 cm) apart.
  • Bake 7 minutes or until edges are golden. Immediately make an indentation in centres of cookies with the back of a round measuring spoon. Cool cookies on sheets for 2 minutes on a wire rack; remove cookies from sheets and cool completely.
  • Sprinkle with icing sugar, then fill indentations evenly with jam; about a half teaspoon each.

1-1/3 cups sugar, divided
2 large eggs, separated
2-1/2 cups all-purpose flour

1 cup seedless raspberry or apricot preserves

Steps:

  • Cream butter, gradually adding 2/3 cup sugar; beat until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Combine flour and salt; gradually add to creamed mixture and mix well. Shape dough into a ball; cover and refrigerate until firm, 30-45 minutes., Preheat oven to 350°. On a surface dusted with confectioners' sugar, roll dough to 1/8-in. thickness; cut with a floured 2-1/2-in. round cookie cutter. Using a floured 1-in. cookie cutter, cut out centers of half of the cookies., Beat egg whites until frothy. Mix almonds and remaining sugar. Brush cookies with egg whites; sprinkle with almond mixture. Bake solid and window cookies 1 in. apart on greased baking sheets until lightly browned, 6-8 minutes. I got this from a pkg. of Betty Crocker Sugar Cookies. It is much easier than normal thumbprint cookies for when I am in a hurry and they taste great too. Thumbprint cookies have always been my favorite so I am all for making them easier! And, you still get that special taste using the sugar cookie dough.

1 (17 1/2 ounce) package betty crocker sugar cookie mix
1/2 cup butter, softened (I have tried margarine and the butter gives it a richer yummy taste)
1 egg
3 tablespoons flour
1/3 cup seedless raspberry jam (or any of your favorite flavors as long as they are seedless)
1 cup white chocolate chips (or you can use vanilla if you prefer)

Steps:

  • Heat oven to 375.
  • In large bowl, stir cookie mix, butter, egg and flour until soft dough forms.
  • Form dough into 3/4 inch balls.
  • Place on ungreased cookie sheet 2 inches apart.
  • Using thumb or handle of wooden spoon, make an indentation in the center of each cookie.
  • Spoon about 1/4 tsp of jam into each indentation.
  • Bake 8-10 minutes or until light golden brown.
  • Remove from oven and cool 5 minutes then remove from cookie sheet to wire rack and cool completely.
  • In small microwave safe bowl, melt chips on high until well melted. Stir until smooth. May need to do this in segments of 2 or 3 minutes until well melted.
  • Drizzle in little lines over the cooled cookies to decorate. Or, you can just add the chips to the dough before baking if you prefer.

1 cup raspberry
½ cup sugar
1 tablespoon lemon juice
1 cup all-purpose flour, plus more for dusting
1 cup almond flour
8 tablespoons unsalted butter, plus 2 tablespoons, softened
½ cup sugar
1 pinch of kosher salt
½ teaspoon lemon zest
1 teaspoon McCormick® vanilla extract
3 tablespoons McCormick® poppy seeds, optional
1 large egg

Steps:

  • Make the raspberry jam: In a medium pot over medium heat, combine the raspberries, sugar, and lemon juice. Cook for 10 minutes, stirring occasionally, until thickened. Remove from the heat and refrigerate for at least 2 hours before assembling the cookies.
  • Make the cookies: In a medium bowl, mix together the all-purpose flour and almond flour. Set aside.
  • In a large bowl, cream together the butter, sugar, salt, lemon zest, and vanilla with an electric hand mixer until fluffy, about 3 minutes.
  • Add the poppy seeds and beat for 1 minute to distribute evenly.
  • Add the egg and beat for 1-2 minutes, until well incorporated.
  • Pour in the flour mixture and fold with a spatula, just until no streaks of flour remain. Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour or until firm.
  • Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
  • Unwrap the dough on a floured surface and dust the top of the dough with more flour. Roll out the dough to ¼-inch (½ cm) thickness.
  • Using a 2½-inch (6 ⅓ cm) round cookie cutter with ridged edges, cut out cookies, chilling and re-rolling the dough as needed to cut out more cookies. You should have about 38 total.
  • Use a ½-inch (1 ¼ cm) cutter to cut out the centers of half of the cookies. Transfer cookies to the prepared baking sheet.
  • Bake the cookies for 12 minutes or until the edges are golden brown. Let cool completely.
  • To assemble, spread 1 teaspoon of jam onto the whole cookies. Top with the cut-out cookies.
