RASPBERRY JAM WITHOUT PECTIN

Raspberry Jam without Pectin image

This is another 'lucky' situation when things turn for better. While making my raspberry jam, I totally forgot to add pectin. The result: exactly the same that if I did add some. Easier, simpler, and less risky than adding pectin to it.

Yield Makes 4 cups (1 L)

Number Of Ingredients 2

4 cups (1 liter) granulated sugar
4 cups (1 liter) raspberries

Steps:

  • 1. Place sugar in an ovenproof shallow pan and warm in a 250°F (120°C) oven for 15 minutes. (Warm sugar dissolves better.)
  • 2. Place berries in a large stainless steel or enamel saucepan. Bring to a full boil over high heat, mashing berries with a potato masher as they heat. Boil hard for 1 minute, stirring constantly.
  • 3. Add warm sugar, return to a boil, and boil until mixture will form a gel (see tips, below), about 5 minutes.
  • 4. Ladle into sterilized jars and process as directed for Shorter Time Processing Procedure .
  • Tip: To make a small boiling-water canner, tie several screw bands together with string or use a small round cake rack in the bottom of a large covered Dutch oven. Be sure the pan is high enough for 2 inches (5 cm) of water to cover the jars when they are sitting on the rack.

Provided by Becky Hardin - Easy Dessert Recipes

Categories     Dessert

Time 50m

Number Of Ingredients 8

½ cup granulated sugar (100 grams)
1½ cups all-purpose flour (180 grams)
½ teaspoon baking powder (2 grams)
¼ teaspoon kosher salt
1 large egg (50 grams, room temperature)
1 teaspoon pure vanilla extract (4 grams)
½ cup unsalted butter (113 grams, room temperature (1 stick))
¾ cup raspberry preserves or jam (255 grams)

Steps:

  • Preheat oven to 375°F. Spray an 8x8-inch baking pan with nonstick baking spray or line the pan with foil and spray the foil for easier removal of the bars. Set aside.
  • In a large bowl, mix together the sugar, flour, baking powder, and salt until combined. Add in the egg and vanilla and mix again until combined. Slice the stick of butter into tablespoon sizes, add them to the mixture, and cut the butter in with a fork or pastry cutter. You want this mixture to have big crumbles in it.
  • Pour half of the mixture into the prepared pan and pack it down into the bottom while spreading to the edges. Pour the raspberry jam or preserves onto the crust and spread it to the edges. Pour the remaining flour and butter mixture all over the top of the raspberries.
  • Bake for 35-40 minutes, until the top begins to turn a golden brown color. Cool completely at room temperature before cutting. This will take a couple of hours.

  • In a large enameled dutch oven or stainless steel pan, combine berries, honey, lemon juice and zest. Bring to a boil and let cook for 20-30 minutes, until sauce has reduced and berries have broken down.
  • Ladle jam into sterilized jars. Cover with lid, and gently screw down the metal rim with two fingers, just until resistance is met (do not close jars tightly - the air should be able to escape between the lid and the rim for the jar to seal properly). Process in a hot water bath for 10 minutes. Leave closed jars on the counter for 24 hours, until the lid has popped in and sealed properly (you should see a dip in the middle of the lid where the vacuum has sealed it).
