Subtly sweet white balsamic and sharp black pepper make wonderful foils for ripe summer berries and stone fruit in this jewel-like salad.

2 red plums, sliced
1 pint fresh raspberries
1 cup sliced fresh strawberries
1/2 cup fresh sweet cherries, pitted and halved
3/4 cup red grapes, halved (or sliced, if large)
1/4 cup white balsamic vinegar
Freshly ground black pepper

Steps:

  • Arrange plums on a platter. Scatter raspberries, strawberries, cherries, and grapes around them.
  • In a small pot, boil vinegar until reduced by half, about 5 minutes. Stir in 1 teaspoon water. Drizzle over fruit; sprinkle with pepper. Serve immediately, or wrap in plastic and refrigerate up to 4 hours.

Oil, for rubbing grill or cooking spray to prepare surface of grill or grill pan
6 pieces stone fruit, plums, peaches or nectarines, apricots cut around the pit and separated in halves
1/2 cup balsamic vinegar
1 small, peeled chunk ginger root, 1/2-inch
2 tablespoons brown sugar
1/2 teaspoon coarse black pepper

Steps:

  • Heat grill or grill pan to high. Coat the surface of the grill with oil or spray to avoid sticking. Place fruits cut side down on grill and cook 3 to 4 minutes until warmed through and evenly marked.
  • Heat the remaining ingredients (for the glaze) in small pot over medium-high heat or place on grill next to fruit. When the sauce reduces, it will become syrup-like in no time - less than a minute. If you burn food often or get distracted easily, cook it over lower heat. Otherwise, let it rip. When the balsamic sauce coats the back of a spoon and reduces by half, remove the pan from the heat and discard the ginger chunk.
  • Arrange fruits on a platter and drizzle liberally with the glaze.

Great for a summer picnic or packed in a lunch, this colorful fruit salad has a tropical touch thanks to the ginger, lime and toasted coconut. Save the watermelon juice for a refreshing treat!

1 cup sliced fresh ginger (from one 4-inch piece)
4 tablespoons honey
Zest of 1 lime plus 2 tablespoons fresh lime juice
8 cups 1-inch watermelon cubes (about 1/2 small seedless watermelon)
1/2 cup shredded and sweetened coconut
1 cup blueberries

Steps:

  • Combine the ginger, honey and 1 cup water in a small saucepan. Bring to a boil, remove from the heat and let sit until cooled to room temperature. Drain, discarding the ginger, and stir in the lime juice.
  • Put the watermelon in a large bowl, and add the ginger-honey syrup. Cover and refrigerate to chill, at least 1 hour up to 4 hours, tossing the watermelon occasionally.
  • Meanwhile, preheat the oven to 350 degrees F. Spread the coconut out on a baking sheet, and bake until lightly golden, 6 to 8 minutes; let cool.
  • When ready to serve, drain most of the liquid off the watermelon. Add the blueberries and lime zest, and toss to combine. Sprinkle with the toasted coconut.

2 each large sweet yellow, red and green peppers
1 small red onion, thinly sliced
6 tablespoons olive oil
3 tablespoons balsamic vinegar
1 tablespoon each minced fresh oregano, rosemary, basil and parsley
1 garlic clove, minced
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup cherry tomatoes, halved
1 carton (8 ounces) fresh mozzarella cheese pearls
5 fresh basil leaves

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a large bowl; cover and let stand for 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Cut peppers into thin strips; place in a large bowl. Some time ago I bought white balsamic vinegar. I use a lot of dark balsamic vinegar and thought it would be nice to see what I could make with the white. Somewhere I read that fruit goes well with this. Tried it and this is the result. Quite nice if I may say so myself.

3 ounces pitted dates
1 medium carrot, thinly sliced
1 orange, peeled and sliced
1 banana, peeled and sliced

1 teaspoon lime zest

Steps:

  • Combine pineapple, dates, carrot, orange and in a large bowl.
  • Combine honey,balsamic vinegar, lime juice and zest in a jar with a tight-fitting lid.

1 (15 ounce) can kidney beans, drained and rinsed
1 (7 ounce) jar roasted red peppers, drained
12 cherry tomatoes, halved
2 tablespoons chopped fresh parsley
3 tablespoons balsamic vinegar
1 tablespoon vegetarian Worcestershire sauce
1 teaspoon white sugar
1 teaspoon dried basil
1 teaspoon chopped garlic
½ head lettuce

Steps:

  • In large bowl combine yellow pepper, beans, roasted red peppers and tomatoes.
  • In jar with tight-fitting lid combine parsley, vinegar, Worcestershire sauce, sugar, basil and garlic; shake well. Pour over vegetables; toss gently. Cover and let stand at room temperature for 30 minutes or refrigerate for 2 hours.
  • To serve, place leaves of lettuce on individual salad plates and top with bean mixture.

3 pounds small boiling potatoes (white, red, or fingerling)
2 red bell peppers
3 1/2 tablespoons extra-virgin olive oil

1/2 cup small fresh basil leaves
Suggested additions: olives, pine nuts, goat cheese, grilled chicken, tuna, or prosciutto

Steps:

  • Preheat oven to 450° F.
  • Wrap garlic cloves together in foil. Halve potatoes and cut bell peppers into 1/2-inch pieces. In a large bowl toss potatoes, bell peppers, and 3 tablespoons oil with salt and pepper to taste. Arrange potatoes and bell peppers in one layer in 2 large shallow baking pans and roast in middle and lower thirds of oven (simultaneously, roast wrapped garlic on either rack), stirring occasionally and switching position of pans halfway through roasting time, until potatoes are tender and golden brown, about 35 minutes.
  • In a bowl immediately toss potatoes and peppers with 2 tablespoons vinegar and cool. Remove garlic from foil and squeeze pulp into a small bowl. With a fork mash garlic with remaining 1/2 tablespoon oil and tablespoon vinegar and toss together with potatoes and peppers and salt and pepper to taste. Just before serving, add basil. Serve potato salad at room temperature.
