Crab Cakes With Whole Grain Mustard Remoulade image

I had crab cakes at a local restaurant here (Shucks Oyster Bar) and tried desperately to get their recipe. After several email, phone, and in person attempts, I decided to try and recreate these fabulous cakes. With luck, I was able to perfect the cakes as well as the Remoulade. The pictures posted are before and after sautéing the cakes in olive oil. The after pictures were smaller cakes as I decided to make these as an appetizer for this Thanksgiving. I made them, cooled in the fridge, froze in freezer, then food savered them to have throughout the holidays.

1 lb crabmeat (fresh or canned)
1/3 cup breadcrumbs (I use Italian seasoned)
3 green onions (finely chopped both green and white parts)
1/2 cup red bell pepper (finely chopped)
1/4 cup mayonnaise
1 egg
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1 tablespoon lemon juice
1 dash cayenne pepper
flour, for dusting
1/2 cup olive oil
1 cup mayonnaise
1 tablespoon chili powder
1 tablespoon stone ground mustard
1 tablespoon lemon juice

Steps:

  • For Crab Cakes:.
  • Mix all ingredients, except flour and oil in a large bowl.
  • Shape into patties and dust with flour.
  • NOTE: Can be frozen at this point.
  • Heat oil in a large skillet over medium heat.
  • When oil is hot, carefully place crab cakes, in batches, and fry until browned.
  • About 4- 5 minutes.
  • Carefully flip crab cakes and fry on other side until golden brown, about 4 minutes.
  • Serve with Whole Grain Mustard Remoulade or favorite sauce.

2 tbsp Green Bell Pepper, finely chopped
1 1/2 tbsp Canola Mayonnaise
1/4 tsp Black Pepper

1 Egg, large, lightly beaten
1 cup Panko, divided
2 tbsp Canola Oil, divided
1/4 cup Canola Mayonnaise
2 tsp Shallots, minced
1 tsp Fresh Tarragon, chopped
1 tsp Fresh Parsley, chopped
1 1/2 tsp Dijon Mustard
3/4 tsp Capers, chopped
1/4 tsp Ground Red Pepper (optional)

Steps:

  • To prepare crab cakes, drain crabmeat on several layers of paper towels. Combine crabmeat, bell pepper, and the next 4 ingredients (through egg), tossing gently. Stir in 1/4 cup panko. Place remaining 3/4 cup panko in a shallow dish.
  • Divide crab mixture into 8 equal portions. Shape 4 portions into 3/4 inch-thick patties; dredge in panko. Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon oil. Add dredged patties; cook 3 minutes on each side or until golden. Remove from pan. Repeat procedure with the remaining crab mixture, panko, and oil.

1/2 cup panko breadcrumbs
2 tablespoons salted butter, melted, plus more for greasing the baking sheet

Steps:

Steps:

  • Add crab, 1 cup bread crumbs, seafood seasoning, salt, pepper, paprika and cayenne. Stir until combined; the mixture will be fairly loose and wet.

1/2 medium yellow onion, minced
2 teaspoons seafood seasoning, such as Old Bay
1 garlic clove, minced
1 pound jumbo lump crab meat
3 tablespoons mayonnaise

2 teaspoons Dijon mustard
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 slices bread, crusts removed, toasted and chopped into tiny pieces
1 large egg, lightly beaten

Remoulade Sauce, recipe follows
1/3 cup mayonnaise
1 tablespoon ketchup
1 tablespoon capers, chopped
