1 package frozen puff pastry (17.30 ounces), thawed
1 large egg
1 tablespoon water
RHUBARB TOPPING:
12 rhubarb ribs (1/2 inch x 7 inches)
1 cup orange juice
1/2 cup honey
2 tablespoons amaretto
FILLING:
1 package (8 ounces) mascarpone cheese
2 tablespoons amaretto
1 tablespoon honey

Steps:

  • Preheat oven to 400°. Unfold 1 pastry sheet and place on a parchment-lined baking sheet; repeat with remaining pastry sheet. Whisk egg and water; brush over pastries. Using a sharp knife, score a 1-in. border around edges of pastry sheets (do not cut through). With a fork, prick center of pastries. Bake until golden brown, about 15 minutes. With a spatula, press down center portion of pastries, leaving outer edges intact. Remove to wire racks to cool., Meanwhile, for topping, arrange rhubarb in a single layer in a 13x9-in. baking dish. Combine orange juice, honey and amaretto; pour over rhubarb. Bake at 400° until rhubarb is just tender but still holds its shape, about 10 minutes. Remove with a slotted spoon, reserving cooking liquid; let rhubarb cool. Transfer reserved cooking liquid to a small saucepan; bring to a boil over medium-high heat. Reduce heat; simmer until reduced to 1/2 cup, about 20 minutes. Cool., For filling, stir together mascarpone cheese, amaretto and honey until smooth. Spread mascarpone mixture over center of each pastry. Top with rhubarb ribs. Brush rhubarb with cooled cooking liquid. Refrigerate leftovers.

3 cups diced rhubarb (see Note)
1 Tbsp. cornstarch
3/4 cup granulated sugar
1/2 cup orange juice
Pinches each of ground cinnamon and clove (optional)
12 (3") frozen tart shells (see Note)
Whipped cream (optional)
Mint sprigs (optional)

Steps:

  • Combine the first 5 ingredients in a medium pot. Set over medium to medium-high heat, bring to a gentle simmer, and simmer until it thickens and the rhubarb is just tender, about 3 to 4 minutes. Cool this mixture to room temperature. Preheat the oven to 350 degrees F. Set the tart shells on a parchment paper-lined baking sheet. Fill the tarts with the rhubarb mixture. Bake 30 minutes, or until rims of the tarts are golden brown. Cool to room temperature. Serve as is or, if desired, top each with a little whipped cream and a mint sprig garnish. Note: 6 to 7 medium-sized rhubarb stalks should yield the 3 cups of diced rhubarb needed in this recipe. Diced means to cut into small 1/4" to 1/2" cubes. Ready to use frozen tart shells are available in the frozen foods aisle.

RHUBARB CREAM TART

You don't even need a tart pan to make this heavenly hazelnut-topped fruit dessert.

1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup packed brown sugar
1/2 cup butter or margarine, cut into small pieces
2 eggs
3/4 cup granulated sugar
2 tablespoons Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/2 cup half-and-half
2 cups 1/4-inch slices rhubarb
1/4 cup finely chopped hazelnuts or walnuts

Steps:

  • Heat oven to 350°F. Butter spingform pan, 9x3 inches, or 9-inch square pan. Mix 1 1/2 cups flour and the brown sugar in medium bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until crumbly. Reserve 1/2 cup mixture for topping. Press remaining mixture on bottom and 1 1/2 inches up side of pan. Bake 15 minutes or until golden brown and set.
  • Beat eggs with electric mixer on high speed 1 minute until lemon colored. Beat in sugar, 2 tablespoons flour, the salt and half-and-half. Sprinkle rhubarb over warm crust. Pour egg mixture over rhubarb. Add hazelnuts to reserved crumbly mixture; sprinkle over top.
  • Bake 40 to 45 minutes or until set and knife inserted in center comes out clean. Cool at least 2 hours before serving. Run metal spatula along side of tart to loosen; remove side of pan. Store covered in refrigerator.

RHUBARB MACAROON TART

Rhubarb makes any dessert a showstopper, but this tart has more than meets the eye. Under the fruit is a luscious vanilla custard nestled in a chewy macaroon shell. When shopping, look for rhubarb that is about 1/2- to 3/4-inch wide; any bigger and the stalks might start to fall apart in the poaching liquid before the center becomes tender, and any smaller and you'll need to keep a close eye, since they'll cook quickly. While the rhubarb topping is a show-stopper, freshly sliced fruit makes a great understudy if you can't find robust pink stalks.

2 cups/400 grams granulated sugar

1 3/4 pounds/800 grams medium rhubarb stalks, cut into 4-inch batons

Steps:

  • Prepare the crust: Heat the oven to 350 degrees. Spread the coconut in an even layer on a large rimmed baking sheet and toast until deep golden brown, 20 to 25 minutes, tossing occasionally and keeping a close eye in the last 5 minutes to avoid burning. Let cool completely. Using butter, grease an 8 1/2-by-12-inch fluted rectangle or a 10-inch fluted round pan with a removable bottom. Line the bottom with parchment and grease the parchment with butter.
  • In a large bowl, combine the coconut, egg whites, sugar and salt; press into the prepared tart pan. Bake on a rimmed baking sheet until set, 25 to 30 minutes. Transfer the baking sheet to a wire rack to cool completely.
  • Prepare the custard: Set a fine-mesh sieve over a medium bowl. In a separate medium bowl or a large glass measuring cup, whisk together milk, cream and egg yolks. Add sugar and cornstarch to a medium saucepan; gradually whisk in milk mixture until smooth. Add the 2 tablespoons butter and vanilla bean and seeds and cook mixture over medium heat, whisking constantly, until it has thickened and just come up to a low boil, 6 to 7 minutes. Continue to cook, stirring constantly, for another minute. Pour custard through sieve, using a spatula to scrape it through and discarding any solids. Stir rose water into custard, if using, then pour mixture into prepared crust. Let cool slightly, then cover with plastic wrap pressed against the surface of the custard and chill until firm, at least 4 hours.
  • Prepare the rhubarb: In a medium pot, combine sugar, 2 cups water and the vanilla bean and seeds, and bring to a boil. Simmer until the sugar dissolves, about 2 minutes. Stir in rhubarb, simmer for 1 minute, and remove from heat. Let cool completely.
  • Gently remove the rhubarb from the cooled pot, letting the syrup drip back into the pot. Top the chilled tart with the rhubarb in a decorative pattern. Lift the tart out of the rim to serve.

1 tablespoon fresh lemon juice

Steps:

  • Crust: Lightly beat yolk and 2 tablespoons ice water in a small bowl until combined.
  • Pulse flour, sugar, and salt in a food processor to combine. Add butter and process until mixture resembles coarse meal, about 15 seconds. With machine running, add yolk mixture in a slow, steady stream. Pulse until mixture holds together; if dough is still too dry, add additional ice water, 1 tablespoon at a time. Shape dough into a disk and wrap in plastic. Refrigerate until firm, at least 30 minutes and up to overnight.

1 tablespoon sugar
1/2 teaspoon salt
6 tablespoons unsalted butter, cold, cut up
3 -4 tablespoons ice water
1 lb fresh rhubarb, tops trimmed, cut into 1-inch pieces
1/2 cup sugar, plus
2 tablespoons sugar
1 1/2 tablespoons cornstarch
3/4 teaspoon grated orange zest
6 ounces raspberries
1 1/2 tablespoons finely chopped crystallized ginger
1 tablespoon unsalted butter, cut into small pieces

Steps:

  • Crust: In a food processor, combine flour, sugar, and salt. Pulse to mix. Add butter; pulse until coarse crumbs form. Pour 3 Tablespoon of the water over top of crumbs and pulse just until dough begins to come together. (If dough is dry, add the remaining water.) Gather dough into a ball; press into a disc and wrap in plastic wrap. Refrigerate 1 hour or overnight.
  • Filling: In a large bowl, toss rhubarb, 1/2 cup of the sugar, cornstarch, and 1/2 teaspoon of the grated orange zest until combined. Let stand 25 minutes, stirring occasionally. In a small cup, combine the remaining 2 Tablespoon sugar and the remaining 3/4 teaspoon grated zest.
  • Heat oven to 425 degrees F. Line a large baking sheet with parchment paper. On a lightly floured surface, with a floured rolling pin, roll dough into a 13-inch circle, pressing any cracks together at edges. Drape dough over rolling pin and transfer to baking sheet.
  • Gently stir raspberries and ginger into rhubarb mixture. Spoon filling onto dough circle, leaving a 2-inch border of dough uncovered. Fold edge of dough up onto filling, pleating dough and pressing any cracks. Dot filling with butter. Brush dough with water and sprinkle sugar-zest mixture over dough and filling.
  • Bake 15 minutes. Reduce temperature to 375 degrees F. Bake 25 to 30 minutes longer, or until crust is brown and filling is bubbly. Let tart cool on pan on wire rack 15 minutes. With a spatula, slide tart onto wire rack to cool completely.

4 to 5 tablespoons ice-cold water
1 pound rhubarb, halved lengthwise into 3/4-inch stalks if thick
1 1/4 cups sugar
1/3 cup unbleached all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt (we use Diamond Crystal)
2 large eggs
1/2 cup heavy cream
1 teaspoon pure vanilla paste or extract

Steps:

  • Dough: Pulse flour, sugar, and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal, with some pea-size pieces remaining. Drizzle 4 tablespoons ice water over mixture; pulse several times to combine. Add more water as needed, pulsing until mixture holds together when pinched. Shape dough into a rectangle and wrap in plastic. Refrigerate at least 1 hour and up to 1 day, or freeze up to 3 months; thaw completely in refrigerator before using.
  • Preheat oven to 375°F. On a lightly floured surface, roll dough into a 12-by-15-inch rectangle, about 1/8 inch thick. Transfer to a 9-by-12 1/2-inch rimmed baking sheet or a fluted tart pan with a removable bottom, fitting dough into corners and folding over extra to create a double-layered edge.   • Filling: Meanwhile, cut rhubarb into 11-inch lengths (if some are shorter, that's okay). Using a sharp knife, score rhubarb along rounded sides on a diagonal at 2-inch intervals (this helps heat penetrate and break up the fibers, so the tart is easier to slice once cooked).
  • In a medium bowl, whisk together 1 cup sugar, flour, salt, eggs, cream, and vanilla; pour mixture into cooled crust. Arrange rhubarb lengthwise over top, scored-sides up; sprinkle with remaining 1/4 cup sugar. Bake until tart is puffed, golden, and just set in center, 45 to 55 minutes.

Steps:

  • For crust:
  • Mix flour and salt in processor. Add butter and cut in, using off/on turns, until mixture resembles coarse meal. Add sugar and egg yolks and process briefly to blend. Add 2 tablespoons water and process just until moist clumps form. If dough is dry, add more water by teaspoonfuls to moisten. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate until dough is firm enough to roll, about 30 minutes. (Can be prepared 1 day ahead. Keep refrigerated. Let soften slightly at room temperature before rolling.)

Pastry dough for one-crust pie (about 12 ounces)
2 pounds rhubarb
8 pelargonium geranium leaves (scented geraniums), optional
5 tablespoons orange juice, preferably from blood oranges
1/2 cup sugar, approximately, plus heaping 1/3 cup
2 whole eggs
2 egg yolks
Grated rind of 1 orange, preferably blood orange
6 ounces goat-cheese curd (see note)
2 tablespoons slivered almonds
Creme fraiche for garnish

Steps:

  • Preheat oven to 375 degrees. Roll out pastry and use it to line a 10-inch fluted tart pan (the kind with a removable bottom). Cover pastry with foil or parchment paper and weigh down with dried beans, to keep it from shrinking during cooking. Bake in oven 20 minutes or until edges of pastry start to brown.
  • As pastry cooks, make filling. Trim and wash rhubarb and cut into 2-inch lengths. Put in a saucepan with geranium leaves, if desired, orange juice and the half-cup of sugar. Bring to boil and simmer, uncovered, about 10 minutes, stirring occasionally, or until rhubarb is thoroughly softened. Taste and add more sugar if necessary. Remove from heat and set aside to cool.
  • Beat whole eggs and the yolks with remaining sugar until thick and pale yellow. Beat in orange rind and cheese curd.
  • Set aside about 1/4 cup of rhubarb. Fold remaining rhubarb into curd mixture and pour into the pastry case. Use reserved rhubarb to swirl in a pattern over the top of the tart. Arrange slivered almonds on top. Bake 35 to 40 minutes; remove to cool to room temperature before serving. Tart will be slightly runny when it comes out of the oven but will firm a little as it cools. But it should not be tough and custardy.
  • Serve with dollops of creme fraiche.

Steps:

  • Press the pie crust into a tart pan.
  • In a bowl, toss the remaining ingredients together.
  • The flour will help thicken it a bit, while the sugar will add some sweetness and help draw the juices out.
  • Next pour the mixture in your pie crust and bake for about an hour at 450 degrees.
  • Once the tart has cooled, paint on some warmed red currant jelly and sift some powdered sugar over the top.

This is a riff on Jean-Georges's grandmother's rhubarb tart. It's not her recipe for the pastry or the streusel, but the notion of macerating the rhubarb before baking and adding the flan came from her. Mustard may not be a traditional ingredient for desserts, but it adds a definite edge to the jam and it's my nod to Alsace, from where Jean-Georges hails. You'll have leftover jam. Try pairing it with cheese or with a sizzling steak.

1 cinnamon stick
1 whole clove
1/2 teaspoon (1g) ground mace
1 tablespoon (9g) yellow mustard seeds, crushed
1 1/2 cups (357g) sweet Muscat wine
1/2 cup (120g) red wine vinegar
1 1/2 pounds (680g) ripe rhubarb, peeled and chopped
2 tablespoons (25g) sugar
1/2 teaspoon (0.85g) xanthan gum
(makes about 1 1/2 cups)
8 ounces (227g) ripe rhubarb
1/3 cup (65g) sugar
1/4 cup (60g) heavy cream
1/2 vanilla bean, split and scraped
3 tablespoons (37g) sugar
1 tablespoon (10g) cornstarch
1 large egg
Pâte Brisée (page 180)
Graham Streusel (page 214)
Confectioners' sugar

Steps:

  • Tie the cinnamon, clove, mace, and mustard seeds in a few layers of cheesecloth. Put the spice sachet in a saucepan with the wine and vinegar and bring to a boil over medium heat. Add the rhubarb, bring to a simmer, and simmer for 5 minutes. Remove from the heat and let cool to room temperature.
  • Drain to get rid of the excess liquid. Remove the spice sachet and puree the rhubarb in a food processor.
  • Set up an ice bath in a large bowl.
  • Bring the rhubarb back to a simmer. Mix the sugar and xanthan gum and whisk in, a few grains at a time (you don't want the xanthan gum to clump). Scrape out into a medium bowl and set into the ice bath, stirring often to chill down quickly. Once cool, refrigerate until ready to serve or for up to 1 week.
  • Peel the rhubarb and cut into tiny dice. Toss it with the sugar and macerate for at least 2 hours.
  • Set up an ice bath in a large bowl.
  • Put the cream and vanilla seeds (rinse, dry, and save the pod for another use) in a small saucepan and heat to just below a simmer.
  • Whisk the sugar and cornstarch together.
  • In a separate bowl, whisk the egg until smooth; gradually whisk in the dry ingredients, beating until smooth.
  • Slowly add half the warm cream to the egg mixture and whisk for about 1 minute to temper it. Off of the heat, scrape the egg mixture into the pan and mix well with an immersion blender. Strain into a small bowl and set into the ice bath to chill down quickly, stirring often. Refrigerate until ready to use or for up to 1 day.
  • Roll half the dough 1/16 inch thick on a lightly floured work surface. Transfer to a Silpat- or parchment-lined baking sheet and chill for 30 minutes. Cut out eight 2 1/4 x 4-inch rectangles and line eight 3/4 x 3 1/4-inch tart molds with the dough (or cut 3 1/2-inch circles and line 2 1/4-inch tart rings). Place them on the baking sheet and chill for 30 minutes.
  • Heat the oven to 375°F or 350°F on convection.
  • Strain the rhubarb filling and fill the tart shells to overflowing. Bake until the rhubarb is starting to brown, about 20 minutes.
  • Reduce the oven temperature to 325°F (300°F if you're using convection).
  • Pour some of the flan into each tart and top each with a generous amount of the graham streusel. Bake until the streusel is browned and the filling is bubbling, about 20 minutes.
  • Let cool for at least a few minutes before unmolding. You can serve the tarts warm or at room temperature.
  • Spoon some mustard-rhubarb jam onto dessert plates and spread it with the back of a spoon. Dust the tarts with confectioners' sugar, set them on the jam, and serve.
  • Try making this as a single large tart in a 9-inch tart pan. You could doctor some good all-fruit jam from the grocery store with crushed mustard seeds instead of making the jam.
