This is a great way to use left over rhubarb sauce. Your kids may not even know rhubarb is a key ingredient. Excellent salad with poultry. Another serving suggestion: Make in 9x13 cut in squares and serve topped with your favorite chicken salad.

3 cups chopped fresh rhubarb
½ cup white sugar, or to taste
2 tablespoons water
1 (3 ounce) package raspberry flavored Jell-O® mix
1 cup cold water
1 cup chopped apple
½ cup chopped walnuts

Steps:

  • In a saucepan over medium heat, combine the rhubarb, sugar, and 2 tablespoons water. Bring to a boil, and cook for about 15 minutes, or until rhubarb is mushy. Mix well to form a sauce. Taste, and adjust sugar if needed. Reserve 1 cup. Save any extra for other uses.
  • In a medium bowl, stir together the raspberry flavored gelatin and 1 cup of the boiling hot rhubarb mixture until completely dissolved. Stir in 1 cup cold water, then mix in the apples and walnuts. Pour into a serving bowl, and refrigerate for 2 to 4 hours, or until set. Garnish with whipped topping or creamy salad dressing before serving if you like.

a little sunflower oil , for greasing
700g rhubarb , chopped
175g golden caster sugar
6 gelatine leaves
pink food colouring (optional)
350ml whole milk
300ml pot double cream
1 vanilla pod , split lengthways and seeds scraped out
5 gelatine leaves
140g golden caster sugar
4 large egg yolks
2 tbsp custard powder

Steps:

  • Very lightly grease a 1-litre jelly mould with oil, then make the rhubarb layer. Put the rhubarb and caster sugar in a pan with 250ml water, cover with a lid and simmer for 5-8 mins until the rhubarb is really soft, then remove from the heat. Put the gelatine in a small bowl of very cold water to soften.
  • Line a large sieve with muslin or a J-cloth, place over a bowl and pour in the rhubarb liquid, then leave to drip through. Once all the liquid has dripped through, return the juice to the pan over a low heat. If your rhubarb juice isn't very pink, you can add a drop of food colouring. Once soft, remove the gelatine from the water and squeeze out any excess, then add to the warm rhubarb juice, stirring until the gelatine dissolves. Pour half the rhubarb liquid into your jelly mould and put in the fridge to set for 3 hrs. Leave the remaining rhubarb juice at room temperature.
  • Meanwhile, make the custard layer. Put the milk, cream, and vanilla pod and seeds in a pan, heat gently until just simmering, then remove from the heat. Soak the gelatine in a bowl of very cold water. In a large bowl, whisk the sugar, egg yolks and custard powder until smooth and pale. Pour over the warmed milk, whisking to combine. Pour the hot mixture into the pan and heat gently until thickened slightly, then remove from the heat. Remove the gelatine leaves from the water, squeeze out any excess liquid, add to the custard and stir well. Leave to cool.
  • Once the first layer of jelly has set, pour over half the cooled custard layer. Chill for a further 3 hrs.
  • Repeat the process with the remaining jelly, making sure each layer is well set before you add the next. If the jelly starts to set at room temperature, you can reheat it very gently on the hob - just make sure it doesn't boil, as this will stop the gelatine from setting. Once the jelly has had its total setting time, ease the edges away with your fingers, then turn out onto a plate (you may have to give a little jiggle to dislodge the jelly) and serve.

1 stick unsalted butter, melted, plus more, room temperature, for pan
18 graham-cracker sheets
2 cups plus 2 tablespoons sugar
16 ounces cream cheese, room temperature
1/2 cup sour cream, room temperature
1/2 teaspoon pure vanilla extract
Pinch of coarse salt
2 large eggs, room temperature, lightly beaten
1 1/2 pounds rhubarb stalks, 5 stalks trimmed and halved lengthwise, the rest chopped (1 3/4 cups)
6 ounces fresh raspberries
1 tablespoon fresh lemon juice
1 packet (1/4 ounce) unflavored powdered gelatin

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-13-inch baking pan; line with parchment, leaving a 2-inch overhang on long sides. Pulse graham crackers and 2 tablespoons sugar in a food processor until fine crumbs form. Transfer to a bowl; stir in melted butter.
  • Press crumbs into bottom of pan. Bake crust until firm, about 15 minutes. Let cool on a wire rack. Reduce oven to 325 degrees.
  • Beat cream cheese and sour cream on medium until smooth. Beat in 3/4 cup sugar, then beat in vanilla and salt. Add eggs and beat until smooth, scraping down bowl as needed. Pour mixture into crust; smooth top. Bake until just set, 25 to 35 minutes. Let cool completely. Chill until firm, 1 hour.
  • Meanwhile, bring chopped rhubarb, raspberries, 1/4 cup sugar, lemon juice, and 1/4 cup water to a simmer, covered, in a small pot. Cook, stirring occasionally, just until rhubarb is softened, about 10 minutes. Pass mixture through a fine sieve into a bowl, pressing gently on solids. Skim foam from top of liquid (you should have a little more than 1 cup; add water, if needed).
  • Bring 4 cups water and remaining 1 cup sugar to a boil in a large straight-sided skillet, stirring, until sugar is dissolved. Reduce heat to low; add rhubarb stalks (in 2 batches, if necessary). Simmer until slightly soft, 2 to 3 minutes. With 2 spatulas, carefully transfer stalks to a paper-towel-lined rimmed baking sheet; let drain.
  • Arrange 4 rhubarb strips in a parallel fashion on cooled cheesecake, spacing evenly. Cut remaining strips in half lengthwise and fit in empty spaces.
  • Sprinkle gelatin over 1/4 cup water; let soften 1 minute. Reheat raspberry syrup until simmering. Stir in gelatin until dissolved; gently pour over rhubarb strips. Refrigerate cake until set, at least 2 hours and preferably overnight.
  • Cut into pieces, using a sawing motion to slice through rhubarb layer; wipe knife between cuts.

1 (6 ounce) package strawberry gelatin
1/2 cup whipped cream

Steps:

  • Mix rhubarb, sugar and ½ cup water in saucepan.
  • Stir occasionally and bring to a boil.
  • Cover saucepan and cook for 8 ­ 10 minutes.
  • Continue cooking, and add strawberry gelatin,continuously stirring until gelatin dissolves.
  • Remove from heat and add 1-cup cold water.
  • Allow to cool, then place in refrigerator to chill until partially set.
  • Remove from refrigerator and whip mixture with electric beater until fluffy.
  • Fold in whipped cream.

1 cup all-purpose flour
1/4 cup sugar
1/2 cup cold butter
RHUBARB LAYER:
3 cups sliced fresh rhubarb (1/2-inch pieces)

1 tablespoon all-purpose flour
CREAM LAYER:
12 ounces cream cheese, softened
1/2 cup sugar
2 large eggs
TOPPING:
1 cup sour cream
2 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • For crust, combine the flour and sugar; cut in the butter until the mixture resembles coarse crumbs. Pat into 10-in. pie plate; set aside. , For rhubarb layer, combine the rhubarb, sugar and flour; toss lightly and pour into crust. Bake at 375° for 15 minutes. Meanwhile, prepare cream layer by beating together cream cheese and sugar until light and fluffy. Beat in eggs, one at a time. Pour over hot rhubarb layer. Bake at 350° for 25-30 minutes or until almost set. Remove to a wire rack. Combine topping ingredients; spread over hot cream layer. Cool completely. Chill.

With it's slightly sweet graham cracker crust, it's delectable cream cheese filling, and the yummy rhubarb-strawberry-gelatin topping, it's one of those desserts you just can't resist. I look forward every Summer to make this dessert. Note: Prep time is 2 hours & 55 minutes, which includes cooling and chilling.

1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
1 tablespoon granulated sugar
9 tablespoons melted butter
2 eggs, beaten well
8 ounces cream cheese, softened

1 1/2 lbs thinly sliced rhubarb (5 cups)
1/2 cup sugar

Steps:

  • To make the crumb mixture: In a bowl, add the graham cracker crumbs, the 1/2 cup of sugar, plus the 1 tablespoon of sugar, and the butter; mix well. (I used a fork to mix the ingredients together.) Press the crumb mixture in the bottom of a greased 11x7-inch glass baking dish. Set baking dish aside.
  • At this point, preheat the oven to 350ºF.
  • To make the cream cheese filling: In a bowl, beat the cream cheese until smooth. Gradually beat in the eggs. Finally beat in the sugar and extract, until mixture is creamy and smooth. Pour the filling over the crumb mixture, and bake in the oven for 20 minutes.
  • After removing the baking dish from oven, allow to cool at room temperature for 2 hours. (But, after cooling for 30 minutes, start preparing the rhubarb topping.).
  • To make the rhubarb topping: In a 3-quart saucepan, add the rhubarb, sugar, and water. (You may not think a 1/4 cup of water is not enough to cook the rhubarb, but trust me it is.) Cook over medium heat for 10 minutes; stirring continuously. Lower the heat to a simmer, and continue cooking for 5 minutes; stirring continuously. Add the gelatin powder, and stir for 1 minute. Remove from heat, and allow to cool at room temperature for 30 minutes.
  • Once the rhubarb mixture has cooled, place the saucepan in the refrigerator to chill for 20 minutes, then pour the mixture over the cream cheese filling.
  • Place the baking dish back in the refrigerator, and chill the dessert for 3 hours before slicing and serving.
  • Note: This is one dessert that doesn't need to be covered while stored in the refrigerator. (Refrigerate any leftovers.).

1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 stick (4 tablespoons) unsalted butter, softened
1/2 cup sugar
1 large egg, at room temperature 30 minutes
1 teaspoon vanilla
1/3 cup whole milk
1/2 cup strawberry or strawberry-rhubarb jam
Rhubarb-mascarpone mousse:
2 pounds rhubarb, cut into 1-inch pieces (8 cups)
1 1/2 cups sugar, divided
1/2 cup water, divided
3 teaspoons unflavored gelatin (less than 2 packages)
1 cup (8 ounces) mascarpone
3/4 cup chilled heavy cream
1 teaspoon vanilla
Vegetable oil for greasing pan
Glaze:
1 1/2 teaspoons unflavored gelatin
3 tablespoons water
1 cup rhubarb syrup (see below)
Accompaniment:
a few small strawberries, such as tri-star or wild strawberries with their leaves (optional)
Special Equipment
1 (9-inch) round cake pan; 1 (10-inch) round spring-form pan with removable bottom

Steps:

  • Make cake:
  • Preheat oven to 350°F and place rack in center.
  • Butter 9-inch cake pan and line bottom with a round of parchment.
  • Butter paper, then dust pan with flour, knocking out excess.
  • Sift together flour, baking powder, and salt into a bowl.
  • Beat butter and sugar together at medium-high speed until pale and fluffy, about 2 minutes.
  • Beat in egg and vanilla until fluffy and combined well, about 2 minutes.
  • Reduce speed to low and add flour mixture and milk alternately in 3 batches, beginning and ending with flour. Mix until batter is just combined. Do not overmix.
  • Spread batter evenly in pan and bake until cake begins to pull away from sides of pan and a wooden pick or skewer inserted in center comes out clean, 20 to 25 minutes (cake will still be pale in color, not golden brown).
  • Cool for 10 minutes in pan on a rack, then invert onto rack and reinvert to cool completely right side up.
  • Make mousse while cake is baking:
  • Combine rhubarb, 1 1/4 cups sugar, and 1/4 cup water in a large heavy saucepan and cook over medium-high heat, stirring occasionally, until rhubarb releases enough juice to almost cover rhubarb, 5 to 8 minutes.
  • Reduce heat and simmer mixture, stirring occasionally, until rhubarb falls apart and is reduced to about 4 cups, 25 to 30 minutes. Remove from heat.
  • Pour mixture into a large fine-mesh sieve set over a bowl and collect 1 cup syrup and set aside. Transfer rhubarb pulp to another bowl.
  • Soften gelatin in remaining 1/4 cup water 1 minute, then stir into hot rhubarb mixture until dissolved.
  • Set bowl inside a larger bowl of ice water and stir rhubarb mixture until cooled to room temperature (do not let set on ice).
  • Beat together mascarpone, heavy cream, and vanilla with remaining 1/4 cup sugar until it just holds stiff peaks.
  • Fold cooled rhubarb mixture into mascarpone mixture.
  • Assemble mousse cake:
  • Carefully halve cooled cake horizontally, then spread jam on bottom half and reassemble.
  • Invert bottom of spring-form pan (to make it easier to slide cake off bottom), then lock on side. Lightly oil bottom and sides of pan with some vegetable oil.
  • Arrange cake in center of spring-form pan. Spoon rhubarb mousse into pan over cake. Smooth top. Rap pan on counter twice to release any air bubbles and chill cake, uncovered, until mousse is set, at least 2 hours.
  • Make glaze:
  • Sprinkle gelatin over water in a small heavy saucepan to soften, 1 minute. Heat gelatin over low heat until it has dissolved. Remove from heat then stir in reserved rhubarb syrup.
  • Pour glaze over chilled mousse, tilting pan slightly to cover it completely in an even layer. Chill, uncovered, until glaze is set, at least 1 hour.
  • To serve:
  • Let cake stand at room temperature 30 minutes to soften slightly. Wrap a kitchen towel dampened in hot water around the side of the pan for about 15 seconds. Run the tip of a thin knife around the edge of the pan, then gently unlock and remove sides of spring-form pan.
