SUBGUM WITH PORK (VEGETABLES AND PORK)

This is a dish I used to to eat at my mom's on Sundays before she left us. It was my favorite meal at mom's and it's still my favorite today. It is unbelievable good and looks so pretty on the plate. It is low cal and low fat and so good.

Number Of Ingredients 12

1/4 cup oil
1 lb pork sirloin chops, cut in bite size pieces
salt
pepper
2 cups celery, sliced diagonally (thin, about 1/4-inch)
1 cup carrot, sliced diagonally
1 bell pepper, cut in strips
1 medium onion, sliced
1 plum tomato, quartered
1 (10 3/4 ounce) can cream of mushroom soup, plus
5 3/8 ounces water
2 green onions (optional) or 2 chives, for garnish (optional)

Steps:

  • In wok or large skillet, put oil and heat medium high,.
  • Stir fry pork about 5 minutes, till no longer pink; take out.
  • In same pan put vegetables and stir fry about 5 minutes.
  • Add the pork to the vegetables and add soup and water.
  • Cook 10 minutes more.
  • Serve over rice or noodles.
  • Garnish with chives or chopped green onions (optional).

Steps:

  • Separate rice with fork. In small bowl, with rotary beater, beat eggs slightly with 1/2 teaspoon salt. Heat 1 tablespoon oil in medium skillet. Pour in eggs. Over high heat, scramble eggs, pushing them with a flat metal spatula to keep from stick- ing. Cook just until set and no longer runny. Set aside. In remaining hot oil in large skillet, saute scal- lion 1 minute; add rice. Fry, stirring quickly with flat metal spatula, until heated through.. Add chicken, ham, peas, rest of salt, and the pepper. Heat; stir in eggs with fork. Sprinkle with soy sauce. Note: Cook 1 cup converted raw white rice as package label directs. Refrigerate overnight.Makes 6 to 8 servings.

2 cups rice
3 cups water
TOPPING:
1/4 pound white meat chicken
2 tomatoes
1 clove garlic
2 tablespoons oils
1/2 teaspoon salt
1/2 teaspoon sugar
dash pepper
1 stalk scallion

Steps:

  • TOPPING:Shred chicken. Peel and dice tomatoes. Crush garlic. Heat oil. Add garlic and stir-fry a few times. Add chicken and stir-fry until it loses its pinkness. Add tomatoes, salt, sugar and pepper. Simmer, covered, until tomatoes are reduced to a pulp. Chop scallion. RICE:1. Wash rice thoroughly (see HOW-TO, _Rice: To wash), then spread evenly along the bottom of a saucepan. 2. Add the desired quantity of cold water for each cup of rice. (Let rice and water sit covered in pan for 30 minutes before cooking. This softens the rice, but can be omitted.) 3. Bring rice to a boil over 3/4 flame. Boil covered 3 minutes. Reduce flame to 1/2. Boil 2 minutes more, or until most of the liquid is absorbed. (At this point, before the water is completely absorbed, some cooks stir the rice gently from the bottom up so that it will cook more evenly and have less tendency to burn on the bottom. If some rice sticks to the sides of the pot during this stirring, just scrape it down.) 4. Sprinkle scallion over rice. Top with stir-fried chicken mixture and cook, covered, over low heat until rice is done (15 to 20 minutes). Let stand, covered, 10 to 15 minutes more then serve. NOTE: The topping is cooked as the rice itself steams. Both rice and topping may be stirred together after, but not during, cooking. The rice will stick to the bottom of the pan if stirred too soon. 1 slice fresh ginger root
1/2 teaspoon sugar
1/2 teaspoon salt
1 teaspoon soy sauce
1 teaspoon sherry
1 teaspoon oil
dash pepper

Steps:

  • TOPPING:Mince or grind beef shred ginger root. Blend together with sugar, salt, soy sauce, sherry, oil and a dash of pepper. RICE:1. Wash rice thoroughly (see HOW-TO, _Rice: To wash), then spread evenly along the bottom of a saucepan. 2. Add the desired quantity of cold water for each cup of rice. (Let rice and water sit covered in pan for 30 minutes before cooking. This softens the rice, but can be omitted.) 3. Bring rice to a boil over 3/4 flame. Boil covered 3 minutes. Reduce flame to 1/2.
