RICE PILAF WITH RAISINS AND VEGGIES

Rice Pilaf with Raisins and Veggies image

Surprisingly easy and extremely flavorful. The curry powder does not add an actual curry taste, just a nice rich flavor, so give it a try even if you aren't a curry fan.

RICE PILAF WITH RAISINS AND TOMATOES

Rice Pilaf with Raisins and Tomatoes image

This ia a great recipe i adapted from 'Cooking for Dummies'. I love the sweet and sour taste. (A great side dish for this meal would be baked chicken drumlets seasoned with curry powder)

Provided by purpledino

Categories     Lunch/Snacks

Time 45m

Yield 4 serving(s)

Number Of Ingredients 14

2 cups chicken stock
1 tablespoon butter
1 tablespoon olive oil
1/2 cup chopped onion
1 clove garlic (peeled and minced)
1 cup long-grain white rice (uncooked)
1 teaspoon turmeric powder
1/4 cup raisins
1 slice lemon (thin)
1/4 teaspoon salt
1 tomatoes, chopped
1/4 teaspoon cinnamon
1/4 cup parsley, chopped (optional)
1 pinch pepper

Steps:

  • Prepare the chicken stock- let it simmer while you prepare the other ingredients.
  • Melt the butter in a frying pan and saute the garlic and onion for about 2 minutes.
  • Add the rice and tumeric powder to the garlic and onions, and lightly fry the mixture until the rice is yellowed (about 2 minutes).
  • Transfer the rice/onion/garlic mixture to a small pot, then add raisins, lemon slice, and salt to the mixture.
  • Add the chicken stock into the rice mixture, making sure that there isn't too much or too little liquid (the liquid level should be about 1 inch above the rice level) Bring mixture to a boil, then bring to low heat, allowing to simmer for about 20 minutes.
  • Stir occasionally to prevent the rice at the bottom from getting burnt.
  • Mix in remaining ingredients (cinammon, parsley, tomato, pepper).
  • Serve warm.

Categories     side-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 15

2 tablespoons extra-virgin olive oil
4 ounces sliced prosciutto, roughly chopped
1/4 cup 1/4-inch-diced carrot
1/4 cup 1/4-inch-diced red and green bell peppers, seeded and membrane removed
1 small onion, cut into 1/4-inch dice
1 cup orzo pasta
1 cup basmati rice
3 cups low-sodium chicken broth
Juice of 1/2 a lemon
1 cup canned garbanzo beans, drained and rinsed
1 bay leaf
Kosher salt and freshly cracked black pepper
1/4 cup sliced scallions
2 tablespoons torn fresh basil leaves
2 tablespoons torn fresh mint leaves

Steps:

  • Bring the oil to medium-high heat in a medium, heavy-bottomed pot with a tightly fitting lid. Add the prosciutto and crisp until it is lightly golden and the fat renders, about 1 minute. Add the carrots, peppers and onions and cook until softened, about 3 minutes. Stir in the orzo and rice. Toast until the grains are all evenly coated with oil, about 3 minutes.
  • Pour the broth and lemon juice into the same pot. Bring to a boil. Add the garbanzos and bay leaf and stir to combine. Cover, reduce the heat to medium-low and simmer until the orzo and rice are tender. Remove from the heat once the liquid is fully absorbed, 12 to 15 minutes.
  • Let the pilaf stand, covered, for 5 full minutes. Fluff with two forks, remove the bay leaf and season with salt and pepper. Stir in the scallions and serve garnished with the basil and mint leaves.

Yield Makes 8 to 10 (main course) servings

Number Of Ingredients 8

3 cups basmati rice (7 ounces)
1 medium onion, chopped
3 tablespoons olive oil
1 1/2 pounds boneless lamb shank (from 2 1/4 pounds bone-in shanks), cut into 1 1/2- to 2-inch pieces
4 1/2 to 5 cups water, divided
2 large carrots, cut into 1/8-inch-thick matchsticks
1 cup raisins (6 ounces)
Accompaniments: chicken kebabs and cilantro garlic yogurt sauce

Steps:

  • Wash rice in several changes of cold water in a bowl until water is almost clear. Soak rice in cold water 1 hour, then drain well in a sieve.
  • While rice soaks, cook onion in oil in a wide 5- to 6-quart heavy pot over medium-high heat, stirring occasionally, until pale golden, about 5 minutes. Pat lamb dry and sprinkle with 1 teaspoon salt. Add to onion and brown on all sides, about 8 minutes total. Add 1 cup water and bring to a simmer. Cover pot and reduce heat to low, then braise lamb, stirring occasionally, until meat is tender, about 45 minutes.

Wrap a kitchen towel around lid with ends of towel on top, then cover pot and boil over medium heat 10 minutes. Reduce heat to low and simmer, covered, until rice is tender and liquid has been absorbed, about 30 minutes.
  • Fluff rice with a fork and transfer pilaf to a large platter. Top with kebabs and serve with yogurt sauce.

ARMENIAN RICE PILAF WITH RAISINS AND ALMONDS

Armenian Rice Pilaf With Raisins and Almonds image

This traditional Armenian rice pilaf has been passed down through the generations of Christine Vartanian Datian's family. Peas, parsley and allspice have been added to the original for extra flavor and color.

Provided by Tara Parker-Pope

Time 45m

Yield Serves 4-6

Number Of Ingredients 11

5-6 tablespoons butter
4-5 ounces dried vermicelli or egg noodles
2 cups long-grain white rice
1 quart fat-skimmed vegetable, chicken or turkey broth
1 teaspoon sea salt and 1/2 teaspoon white or black pepper
1/2 teaspoon ground allspice
1/2 cup coarsely chopped almonds
1/2 cup coarsely chopped golden or black raisins
1/2 cup frozen petite peas (optional)
2 tablespoons chopped fresh parsley
1 teaspoon fresh lemon juice

Steps:

  • In a 5- to 6-quart pan over medium heat, melt 4 tablespoons butter. Break or crush the vermicelli into 1-inch lengths. Add the pasta and rice to the butter and stir often until golden, about 5-8 minutes, being careful not to burn the vermicelli.
  • Add the broth, allspice and salt and pepper. Bring to a full boil over high heat, then cover, reduce heat to low, and simmer until rice is tender to bite, about 20 minutes.
  • Meanwhile, in a sauté pan over medium heat, melt remaining 1 or 2 tablespoons butter. Add the almonds and stir often until golden, about 5 minutes. Add the raisins and stir until they puff, about 2 minutes. Remove from heat.
  • Stir peas if using, parsley and lemon juice into rice. Cover and simmer until peas are hot, about 3-4 minutes.
  • Pour pilaf into a serving bowl or on a platter and sprinkle with the raisin and nut mixture over the top. (Diced dried dates, figs, apricots or chopped walnuts may also be used in this topping.)
