RICH AND DECADENT BUTTER PECAN BREAD PUDDING
This is over the top bread pudding, super sweet and best when warm. The recipe is courtesy of Paula Deen, but I have tweaked it to my liking. Yup, that's what I do.

Steps:
- Preheat oven to 350 degrees.
- Grease a 13x9x2 inch pan. Dump bread cubes inches.
- Mix together in a bowl sugar, eggs, cream, vanilla, raisins.
- Pour over bread in baking dish, making sure to push bread down into custard so it is soaked.
- In another bowl, mix brown sugar, softened butter and pecans. Spread over top of bread pudding evenly.
- Bake 35-40 minutes or until set. Remove from oven.
- To make sauce:.
- Mix sugar, butter, egg and vanilla in a saucepan over medium heat and stir until sugar is dissolved.
- Remove from heat and stir in brandy.
- Pour over the bread pudding and let it all soak in and firm up before serving. Tastes best warm.

- For butterscotch sauce:
- Bring brown sugar, corn syrup, butter, and salt to a boil in a medium saucepan over medium-high heat, whisking to dissolve sugar. Boil until mixture is syrupy and measures 1 1/3 cups, about 3 minutes. Remove from heat; add cream and bourbon, if desired, and stir until smooth. Let cool. DO AHEAD: Can be made 3 days ahead. Let cool completely, cover, and chill. Rewarm before serving.
- For pudding:
- Toss bread, melted butter, and 2 tablespoons sugar in a large bowl and set aside. Using an electric mixer, beat eggs and remaining 1 1/2 cups sugar in another large bowl until pale yellow and fluffy, about 3 minutes. Add cream, poppy seeds, and salt; beat to blend. Place bourbon in a small bowl; scrape in seeds from vanilla bean (reserve bean for another use). Whisk to distribute seeds, then add to egg mixture, whisking to blend well. Pour egg mixture over bread mixture in bowl. Add pecans and toss to coat well. Transfer mixture to a 13x9x2" glass or ceramic baking dish, spreading out in an even layer. Cover with plastic wrap and chill overnight.
- Preheat oven to 325°F. Remove plastic wrap and bake until top is browned in spots and a tester inserted into center comes out clean, 1 1/4-1 1/2 hours. Serve bread pudding with butterscotch sauce.

- Preheat oven to 350°. Whisk together the first 10 ingredients until blended. Gently stir in bread. Transfer to a greased 3-qt. or 13x9-in. baking dish. Sprinkle with brown sugar; let stand until bread is softened, about 15 minutes. Bake until puffed and a knife inserted in center comes out clean, 40-45 minutes., Meanwhile, for sauce, melt butter in a large heavy saucepan over medium heat. Add brown sugar; stir until dissolved. This simple bread pudding is an easy way to use up those bits and pieces that seem to lie around the pantry. Save a fortune and make this tasty pudding. I like to serve this with custard sauce but it goes well with whipped cream, ice cream, or also great on its own.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round pie dish or cake pan.
- Butter the bread on both sides and cut into triangles. Arrange a single layer of buttered bread in the bottom of the greased pan, slightly overlapping the triangles. Sprinkle with 1/2 of the sugar and all of the currants. Arrange the remaining bread on top, then sprinkle with remaining sugar.
- Beat milk, eggs, and nutmeg together. Pour over the bread and press down firmly to compress the pudding and help the bread absorb the milk mixture.
- Bake in the preheated oven until golden brown and set, about 30 minutes.

- Cut the bread into cubes and let sit out about an hour to dry out a bit. Using day-old bread is perfect; the drier the bread cubes, the more yumminess they soak up!
- Preheat oven to 350 degrees F.
- In a medium bowl, mix the eggs until they are combined. Add the milk, sugar, and vanilla and stir until combined.
- Place the bread cubes in a baking pan and pour the milk and egg mixture over them.
- Melt butter in a small microwave-proof bowl. Stir in the brown sugar until dissolved. Stir in the pecans.
- Pour this mixture over the bread and egg mixture, and gently fold. Don't mix it in thoroughly, just fold so the yummy pecan mixture forms into clumps throughout the bread pudding.
- Bake for 45 to 55 minutes, or until the top is slightly brown. The center will still be a little jiggly.
- Allow to cool at least 20 minutes before serving. The egg mixture will continue to cook, and the bread will soak up more yumminess.

- In a medium bowl, combine the butter, coconut, flour, pecans and sugar. Spread into an ungreased 15x10x1-in. baking pan. Bake at 325° for 30 minutes or until lightly browned, stirring occasionally. AUNT FREED'S BUTTER PECAN DESSERT
This is rich, but Good. I like that it's hard to do wrong, and that you can also make it with other puddings. Chocolate pudding is delicious in this, as is coconut cream pudding topped with toasted coconut just before serving. It's also good with pitachio pudding for St. Patrick's Day.

- Preheat oven to 350F. Grease a shallow baking dish about 9x13-ish-oval (or close, such as 8x11 rectangle etc.)
- Cut croissants in half. Place the bottoms of the croissants over the bottom of your pan, trying to fill as much of the bottom evenly as possible, overlapping just slightly, if necessary. Place the top halves of the croissants randomly overtop.
- Prepare the custard by combining all the custard ingredients in a medium bowl and whisking well to combine. Pour over croissants in pan. (Liquid should come up a little more than halfway, leaving most of the croissant tops exposed). Let stand 5-10 minutes, while you prepare the topping.
- Prepare the topping by combining the butter and brown sugar. Cut the butter into the brown sugar with a pastry cutter or just use your fingers to rub the butter into the brown sugar until you have a crumb mixture. Scatter the crumb mixture overtop of the croissants, focusing on the areas between the croissant tops. Scatter the pecan pieces overtop as well.
