- Preheat oven to 375°. Cook rigatoni according to package directions., Meanwhile, in a large skillet, cook pancetta over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings; wipe skillet clean., In same pan, heat butter over medium-high heat. Add onion; cook and stir until tender. Stir in flour, salt and pepper until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Stir in cheese blend until melted., Stir in artichokes, spinach and pancetta. Drain rigatoni; add to cheese sauce. Transfer to a greased 13x9-in. baking dish; sprinkle with Parmesan cheese., Bake, uncovered, until golden brown and bubbly, 20-25 minutes.

SAUSAGE, SPINACH, TOMATO RIGATONI RECIPE BY TASTY
Here's what you need: olive oil, hot italian sausage, large yellow onion, garlic, salt, pepper, dried oregano, dried basil, dried parsley, tomato paste, diced tomato, grated parmesan cheese, spinach, rigatoni, ricotta cheese, fresh basil

Steps:
- To a large dutch oven on medium heat, add the olive oil and heat it until it shimmers.
- Add the hot Italian sausage, cook until the the first side browns deeply, flip and cook on the other side until the sausage is fully cooked, 15 minutes. Remove the sausages from the pan and slice when they cool down.
- To the leftover pan drippings, add the chopped yellow onion, minced garlic, salt, pepper, dried basil, dried oregano, and dried parsley. Cook until the onions are caramelized and soft. About 10 minutes.
- Add the tomato paste and cook until the tomato paste darkens slightly.
- Add in the diced tomatoes and the sausage slices into the pan, stir, and let the sauce come to a simmer.
- Add in half the grated parmesan, spinach, the cooked pasta, and stir to combine.
- Spoon in fresh dollaps of the ricotta cheese, garnish with fresh basil, more grated parmesan, and serve!

Steps:
- Bring a pot of water to a rolling boil over high heat. Remove creamed spinach pouch from the box and place pouch in boiling water. Boil until heated through, 35 to 40 minutes, rotating serving times during heating.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Combine garlic, olive oil, and tomatoes in a large bowl. Stir in the heated creamed spinach. Serve over rotini.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package except omit salt; keep warm.
- Spray 3-quart saucepan with cooking spray; heat over medium heat. Add onions to saucepan; cook and stir 1 minute. Add butter and flour; cook 2 minutes, stirring constantly, until mixture is smooth and bubbly; remove from heat. Gradually stir in milk with wire whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in ricotta cheese and spinach.
- In separate 3-quart heavy saucepan, heat oil over medium heat; add tomatoes to oil, crushing tomatoes with spoon. Stir in basil, salt and pepper; cook uncovered about 10 minutes, stirring occasionally, until mixture begins to simmer and basil wilts. Remove from heat; discard basil.
- Over bottom of baking dish, spread half of the tomato sauce (1 1/4 cups). Arrange half of the pasta, 7 rows lengthwise by 9 or 10 rows widthwise, over tomato sauce. Spread half of the ricotta mixture (2 cups) over pasta. Repeat layers, ending with ricotta mixture. Sprinkle with bread crumbs and Parmesan cheese.
- Bake uncovered 30 minutes or until hot and bubbly. Let stand 15 minutes before serving.

Steps:
- Fill up a a large pot of salted water to boil for pasta.
- In large saute pan, on low heat (large enough to hold cooked pasta) add olive oil, garlic, crushed red pepper and saute for about 3 minutes.
- Add spinach, chicken bouillon cube, salt and freshly ground pepper and butter. Saute for about 2 minutes. Remover from heat.
- Cook pasta according to package. While pasta is cooking, add the starchy pasta cooking water to spinach and garlic. Stir to combine.
- Drain pasta, toss with sauce.
RIGATONI SPINACH TORTE WITH TOMATO COULIS
Steps:
- Oil an 8-inch springform pan with 2 tablespoons of olive oil. Coat with bread crumbs and set aside. Cook rigatoni pasta according to package directions al dente. Drain and set aside. Preheat oven to 400 degree F. In a large frying pan heat 2 tablespoons olive oil. Sauté onions and garlic. Add spinach and cook until just wilted. Remove from heat. Combine mascarpone, feta cheese, eggs, salt, pepper and nutmeg. Add to spinach and mix together. Place a thin layer of pasta into the springform pan. Combine leftover pasta with spinach mixture and fill pan. Cover tightly with a greased piece of aluminum foil. Bake at 400 degree F. for 40-50 minutes. Meanwhile make tomato coulis. Place all ingredients into a blender or food processor and process until smooth. Strain through a sieve and heat until warm. Keep warm until ready to serve. When torte is baked let rest for 10 minutes before unmolding. Garnish torte with basil and serve with warm tomato coulis. Serves 8
RIGATONI WITH SPICY SAUSAGE-TOMATO SAUCE, ARUGULA AND PARMESAN
This is from Bon Appetit magazine, June 2008. This is exactly as written in the magazine, but when I made it I used spinach instead of arugula (the market was out of arugula and my husband doesn't like it anyway). We LOVED the fresh complex flavor of this dish!

Steps:
- Heat oil in heavy large pot over medium heat. Add onion; saute until translucent, about 4 minutes.
- Add garlic; stir 1 minute.
- Add sausage; cook until browned, breaking up with back of spoon, about 5 minutes.
- Drain drippings from pot.
- Add wine, diced tomatoes with juice, and crushed tomatoes. Increase heat and bring to a boil.
- Reduce heat to low and simmer 30 minutes to blend flavors, stirring occasionally.
- Can be made one day ahead up to this point: Cool and refrigerate, then reheat over medium heat before continuing.
- Cook pasta until al dente, drain.
- Stir pasta, arugula, basil and oregano into tomato sauce. Simmer until the arugula wilts, stirring often, about 2 minutes.
- Season with salt and pepper to taste.
- Transfer to serving bowl or dinner plates and sprinkle with parmesan.
