UPTOWN DOWN-HOME CHILI



Uptown Down-Home Chili image

3 tablespoons extra-virgin olive oil, divided
2 pounds ground sirloin
2 tablespoons grill seasoning (recommended: McCormick's Montreal Steak Seasoning) a palm full
1/2 pound baby Portobello mushrooms, chopped
1/4 pound shiitake mushroom caps, sliced
1 medium yellow skinned onion, chopped
3 ribs celery, chopped
1 large red bell pepper, seeded and chopped
4 to 6 cloves garlic, chopped
2 tablespoons Worcestershire sauce
2 canned chipotle peppers in adobo, chopped, with their juices or 1 generous palm full ground chipotle chili powder, about 2 tablespoons
1 tablespoon ground cumin, half a palm full
1 bottle imported beer (recommended: Stella Artois (...imported just 'cause we're Uptown and that's all they drink here.)
1 (15 ounce) can black beans, drained
1 (15 ounce) can crushed tomatoes
1 cup beef stock (8-ounce box)
2 to 3 tablespoons fresh thyme leaves
8-ounce piece smoked Gouda, shredded
1 small white onion, finely chopped

Steps:

  • Heat a deep, large skillet or a pot over high heat. Add 2 tablespoons extra-virgin olive oil and the meat. Season it with grill seasoning and sear it up, browning and crumbling it, for 3 to 5 minutes. Transfer meat to a plate and return pot to stove. Reduce heat to medium- high and add another tablespoon extra-virgin olive oil. Add the mushrooms and begin to brown them before adding the other veggies. After 2 or 3 minutes the mushrooms will begin to shirk and soften. Push the mushrooms off to one side of the pot and add all the remaining veggies to the opposite side of the pot surface. Once the onions, celery, peppers and garlic have been working for a few minutes as well, mix the veggies with the mushrooms. Add the meat back, season with Worcestershire sauce, chipotle in adobo or chipotle powder and cumin. Add in beer to deglaze the pot, scraping up all the pan drippings. Reduce the beer by half, about 2 minutes. Add the black beans, tomatoes, stock and thyme to chili and simmer 10 minutes for flavors to combine. Taste to adjust seasonings. Top bowls of the chili with shredded smoked Gouda and finely chopped raw onions.

This is my favorite chili, adapted from the River Run Cookbook. River Run is a wonderfully quirky restaurant in Vermont that I had the good fortune to visit many years ago. I didn't make many changes, but did reduce the recipe so that it would fit in my 6 quart dutch oven. You can serve this the day you make it, but it is better if you let it sit overnight.

1 lb 90% lean ground beef (chili grind if possible)
1 1/2 lbs pork shoulder or 1 1/2 lbs country-style boneless pork ribs, cubed
1 large onion, peeled and chopped
1 large green pepper, peeled and chopped
3 garlic cloves, finely chopped
2 tablespoons chili powder (I use Penzey's medium)
1/2 tablespoon ground cumin
1/2 tablespoon oregano (I use Penzey's Mexican)
salt and pepper (to taste)
1 (12 ounce) bottle beer (I use red or amber)
4 cups beef stock
1 (28 ounce) can whole canned tomatoes, drained and chopped
1 (6 ounce) can tomato paste
2 (15 ounce) cans beans (small red, black or great northern, or a combination)
1/4 cup masa harina (optional)

Steps:

  • Preheat the oven to 300 degrees F.
  • Brown the ground beef in a six-quart dutch oven over medium heat. If your beef is very lean, you may need to use a few tablespoons of oil. Remove browned beef with a slotted spoon and set aside.
  • Brown the cubed pork in batches in the drippings from the beef. Be sure to allow enough space between the cubes so that they brown instead of steam. Remove each batch of browned pork to the same dish as the beef as you go.
  • Once the last batch of pork has been removed, saute the onion and pepper in the drippings. If there is too much fat, drain some off so that a there is still about a tablespoon. Stir the onion and pepper until softened, about seven minutes. Stir in the garlic until it releases a scent. Add the chili powder, cumin and oregano and stir until the vegetables are evenly coated.
  • Pour in the beer and deglaze the pan. Add the meats back to the pot, along with the stock, tomatoes and tomato paste. Stir well to combine.
  • SLOWLY bring the mixture just to the boil. Do not let it boil hard. Put the pot in the oven and cook slowly for three hours. Add the beans (drained and rinsed) and return to the oven for 30 minutes.
  • Cool the chili and refrigerate it overnight. The next day, skim the fat off the top and discard. Stir in the masa harina and reheat on the stovetop over medium-low heat.
  • Serve topped with shredded cheddar cheese, sour cream and or minced onion and jalapeno with a side of corn bread.

4 lbs coarsely ground round steaks (, or chuck, well trimmed)
1 large onion, chopped
2 cloves garlic, chopped
1 teaspoon ground oregano
1 teaspoon cumin seed (the recipe calls for "comino seed" so I'm guessing that's cumin)
6 teaspoons chili powder
1 1/2 cups canned whole tomatoes
2 -6 dashes liquid hot pepper sauce
salt
2 cups hot water

Steps:

  • Place meat, onion and garlic in a large, heavy frying pan or Dutch oven; cook unti light coloured.
  • Add remaining ingredients.
  • Bring to a boil, lower heat, and simmer for about 1 hour; skim off fat during cooking.

¼ cup olive oil
6 cloves garlic, minced
1 large yellow onion, chopped
2 red bell peppers, diced
2 green bell peppers, diced
4 pounds ground beef*
6 (19 ounce) cans diced tomatoes
2 (10 ounce) cans RO*TEL Diced Tomatoes & Green Chilies
4 (15 ounce) cans kidney beans, drained and rinsed

Steps:

  • Saute garlic, onion and peppers in olive oil until onions are transparent.
  • Add meat and brown.
  • Stir in tomatoes and once mixture is very hot, add the packages of potatoes.
  • Mix thoroughly, add beans and simmer for at least one hour on medium heat.
  • Gather up your own buckaroos and serve the chili topped with a large dollop of Fiesta Dip.

1 cup water
1 cup uncooked white rice
1 ½ pounds ground beef
1 cup diced onion
½ cup chopped green bell pepper
1 (28 ounce) can diced tomatoes, undrained
1 (14 ounce) can tomato sauce
1 (4 ounce) can chopped green chile peppers
1 (1.25 ounce) package dry taco seasoning mix
1 tablespoon chili powder
½ teaspoon garlic powder
1 teaspoon cayenne pepper
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes. Set aside.
  • At the same time, heat a large pot over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Add diced tomatoes, tomato sauce, taco seasoning, chile peppers, chili powder, garlic powder, and cayenne pepper; bring to a boil. Reduce heat and let simmer for 20 minutes.
  • Add beans and corn, and simmer for 10 minutes longer. Add cooked rice and serve.
