Time 9h

Yield 8 servings

Number Of Ingredients 29

1 (10 to 12-pound) turkey
Brine, recipe follows
4 tablespoons unsalted butter at room temperature
1 stalk celery, cut into 1-inch pieces
1 large carrot, cut into 1-inch pieces
2 bay leaves
2 sprigs thyme
1 1/2 to 2 cups chicken or turkey stock, for basting
1 tablespoon vegetable oil
Reserved turkey neck and giblets
1 large yellow onion, cut into 8ths
1 large orange, cut into 8ths
1 large carrot, coarsely chopped
1 onion, coarsely chopped
1 large celery stalk, coarsely chopped
1 small bay leaf
3 cups turkey stock, chicken stock, or canned low-salt chicken broth
3 cups water
4 cups turkey broth
1 cup dry white wine
4 tablespoons unsalted butter
1/4 cup flour
Salt and freshly ground black pepper
1 cup salt
1 cup brown sugar
2 oranges, quartered
2 lemons, quartered
6 sprigs thyme
4 sprigs rosemary

Steps:

  • Remove the neck, giblets, and liver from the cavity of the turkey and reserve for the gravy. Rinse the turkey inside and out under cold running water.
  • Soak the turkey in the brine, covered and refrigerated, for at least 4 hours and up to 24 hours.
  • Preheat the oven to 325 degrees F.
  • Remove the turkey from the brine and rinse well under cold running water. Pat dry with paper towels, inside and out. Place breast side down in a large, heavy roasting pan, and rub on all sides with the butter. Season lightly inside and out with salt and pepper. Stuff the turkey with the onion, orange, celery, carrot, bay leaves, and thyme. Loosely tie the drumsticks together with kitchen string.
  • For the turkey broth: Heat the oil in a large heavy saucepan over medium high heat. Add the turkey neck, heart, and gizzard to the pan and saute until just beginning to brown, about 1 minute. Add the chopped vegetables and bay leaf to the pan and saute until soft, about 2 minutes. Pour the stock and 3 cups of water into the pan and bring to a boil. Lower the heat to medium-low and simmer until the stock is reduced to 4 cups, about 1 hour, adding the chopped liver to the pan during the last 15 minutes of cooking.
  • Strain the stock into a clean pot or large measuring cup. Pull the meat off the neck, chop the neck meat and giblets, and set aside.
  • Roast the turkey, uncovered, breast side down for 1 hour. Remove from the oven, turn, and baste with 1/2 cup stock. Continue roasting with the breast side up until an instant-read meat thermometer registers 165 degrees F when inserted into the largest section of thigh (avoiding the bone), about 2 3/4 to 3 hours total cooking time. Baste the turkey once every hour with 1/2 to 3/4 cup chicken or turkey stock.
  • Remove from the oven and place on a platter. Tent with aluminum foil and let rest for 20 minutes before carving.
  • For the pan gravy: Pour the reserved turkey pan juices into a glass-measuring cup and skim off the fat. Place the roasting pan on 2 stovetop burners over medium heat add the pan juice and 1 cup turkey broth and the white wine to the pan, and deglaze the pan, stirring to scrape any brown bits from the bottom of the pan. Add the remaining 3 cup of broth and bring to a simmer, then transfer to a measuring cup.
  • In a large heavy saucepan, melt the butter over medium high heat. Stir in the flour and cook, stirring constantly, to make a light roux. Add the hot stock, whisking constantly, then simmer until thickened, about 10 minutes. Add the reserved neck meat and giblets to the pan and adjust seasoning, to taste, with salt and black pepper. Pour into a gravy boat and serve.
  • To make the brining solution, dissolve the salt and sugar in 2 gallons of cold water in a non-reactive container (such as a clean bucket or large stockpot, or a clean, heavy-duty, plastic garbage bag.) Add the oranges, lemons, thyme, and rosemary.

Categories     Entree

Time 5h50m

Yield 16

Number Of Ingredients 15

1/2 cup butter or margarine
3 medium celery stalks, chopped (1 1/2 cups)
3/4 cup chopped onion
9 cups 1/2-inch cubes cornbread or soft bread
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried sage leaves, crumbled
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/8 teaspoon pepper
1 whole turkey (12 lb), thawed if frozen
1 tablespoon chopped fresh or 2 teaspoons dried rosemary leaves, crumbled
1 tablespoon chopped fresh or 2 teaspoons dried sage leaves, crumbled
1 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
1/4 cup butter or margarine, melted

Steps:

  • Heat oven to 325°F. In 10-inch skillet, melt butter over medium heat. Cook celery and onion in butter about 2 minutes, stirring occasionally, until crisp-tender; remove from heat. In large bowl, mix celery mixture and remaining stuffing ingredients until well blended.
  • Stuff turkey just before roasting, not ahead of time. Fill wishbone area lightly with stuffing. Fasten neck skin to back with skewer. Fold wings across back with tips touching. Fill body cavity lightly. (Do not pack--stuffing will expand while cooking.) Tuck drumsticks under band of skin at tail, or tie together with heavy string, then tie to tail.
  • In small bowl, mix rosemary, 1 tablespoon sage, 1 teaspoon salt, 1/4 teaspoon pepper and the garlic; rub into turkey skin. Place turkey, breast side up, on rack in shallow roasting pan. Brush with 1/4 cup butter. Do not add water. Place meat thermometer in thickest part of inside thigh muscle so thermometer does not touch bone.
  • Roast uncovered 4 to 5 hours, brushing with pan juices every 30 minutes, until thermometer reads 165°F and drumsticks move easily when lifted or twisted. Thermometer placed in center of stuffing should read 165°F.
  • Place foil loosely over turkey when it begins to turns golden. When turkey is two-thirds done, cut band of skin, or remove string or skewer holding legs. When turkey is done, place on warm platter and cover with foil to keep warm. Let stand about 20 minutes for easiest carving. While turkey is standing, prepare Foolproof Gravy if desired.
  • To serve, garnish turkey with fresh herb sprigs, if desired.

BRINED AND ROASTED WHOLE TURKEY

Brined and Roasted Whole Turkey image

No dish has more riding on its success than the holiday turkey. Brining locks in a turkey's natural juices, so it won't dry out during the roasting process, ensuring the perfect centerpiece for a flavorful feast.

Provided by Morton

Categories     Trusted Brands: Recipes and Tips

Time 13h20m

Yield 10

Number Of Ingredients 8

1 cup Morton® Coarse Kosher Salt
1 cup sugar
2 gallons cool water
1 (12 pound) fresh, whole, bone-in skin-on turkey, rinsed and patted dry
5 tablespoons unsalted butter, softened
½ teaspoon ground black pepper
3 tablespoons unsalted butter, melted
1 cup white wine, chicken broth or water

Steps:

  • Overnight Brine: Combine Morton®Kosher Salt and sugar in cool water in a large, clean stockpot until completely dissolved. Place the whole turkey in the brine until completely submerged. Cover and refrigerate overnight, up to 14 hours. Remove the turkey from the brine, rinse inside and out under cool running water for several minutes to remove all traces of salt; pat dry with paper towel.
  • 4-5 hour Brine: To brine your turkey in less time (4-5 hours), use 2 cups of Morton®Coarse Kosher Salt and two cups of sugar. Cover and refrigerate for 4 to 5 hours.
  • To Roast: Mix the softened butter with the pepper. Place turkey on rack in roasting pan. Rub the seasoned butter under the skin. Brush the skin with the melted butter. Pour the 1 cup liquid (wine, broth or water) over the pan bottom to prevent drippings from burning. Roast turkey at 450 degrees F for 25 minutes, baste and then rotate the roasting pan. Continue roasting until the skin turns golden brown, an additional 25 minutes; baste again. Reduce oven temperature to 325 degrees F; continue to roast, basting and rotating the pan once about halfway through cooking, until the minimum internal temperature reaches 165 degrees F. Remove the turkey from the oven. Let stand 20 minutes before carving.

CARRY ME BACK CORNBREAD DRESSED TURKEY

Carry Me Back Cornbread Dressed Turkey image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 3h10m

Yield 6 servings

Number Of Ingredients 25

2 3/4 cups cornmeal
3 3/4 cups all-purpose flour
1 tablespoon baking powder
1 1/2 cups sour cream
3/4 cup milk
4 eggs
2 teaspoons salt
1/2 cup melted butter
1 (2 1/2 to 3-pound) boneless turkey breast, skin on
4 tablespoons butter, cut into chunks
1 tablespoon garlic powder
Salt and freshly ground black pepper
1 tablespoon canola oil
1/2 pound andouille sausage, casings removed
6 tablespoons butter
1 large white onion, chopped
1 large garlic clove, lightly crushed with the side of a knife blade and minced
3 stalks celery, chopped
1/2 cup minced fresh parsley leaves
6 fresh sage leaves, minced
3 large sprigs fresh thyme, leaves stripped from stem and chopped
1/3 cup to 1 cup chicken stock, as needed to moisten dressing
1 cup dry white wine
1/3 cup all-purpose flour
1 cup chicken stock

Steps:

  • Preheat oven to 425 degrees F.
  • Mix cornmeal, flour, baking powder, sour cream, milk, eggs, salt and melted butter. Bake in a greased loaf pan for 20 to 25 minutes until golden brown and when a toothpick inserted into center comes out clean. Let cool in pan.
  • Let oven temperature reduce to 400 degrees F.
  • For the Turkey:
  • Rinse turkey breast and pat dry with paper towels. Slip chunks of butter under the skin. Season turkey breast with garlic powder, salt and pepper, to taste, and roast in 400 degrees F oven until it reaches an internal temperature of about 160 degrees F on an instant-read thermometer, about 1 1/2 to 2 hours.
  • For the Dressing:
  • Heat oil in a large skillet over medium heat. Saute sausage until browned. Remove to a utility platter with a slotted spoon and pour most of the fat from the pan leaving about 1 tablespoon. Melt butter in the skillet over medium heat. Saute onion, garlic, celery, parsley, sage and thyme until onion is translucent, being careful not to burn them. Remove from heat and set aside briefly. Cut cornbread into cubes or break it up with your hands into a large bowl (depending on the texture you like). Spoon the sauteed vegetables and herbs over the cornbread. Stir or use your hands to combine well and add enough chicken stock to moisten. Transfer to a baking pan and place in the oven until crispy on the outside, for approximately the last 25 minutes of the turkey's roasting time. Remove from oven and transfer to a serving dish in a warm place.
  • For the Gravy:
  • When turkey is done, remove breast to a platter to let rest for 20 minutes before slicing. Skim most of the fat from the pan juices, reserving 1/3 cup of the fat. Add wine to the remaining pan juices and cook over medium-high heat until reduced by half. In a separate saucepan, heat reserved 1/3 cup of fat and whisk in flour over moderately-low heat for a few minutes to make a roux. Add chicken stock and reduced wine, continuing to cook until gravy simmers.
  • Slice turkey and arrange on plate. Serve with cornbread dressing and gravy.

Add carrots, onion and celery to pot. Sauté until vegetables brown, about 10 minutes. Add water, wine, neck and giblets to vegetables; bring to boil.
  • Add all remaining ingredients to pot. Reduce heat to medium-low; partially cover and simmer until giblets are very tender, about 11/2 hours. Using slotted spoon, transfer neck and giblets to plate. Cool. Carefully remove all meat from turkey neck. Chop neck meat and giblets; reserve for gravy. Strain broth into bowl, pressing on solids. (Broth and giblets can be made 1 day ahead. Cover separately and chill.) Makes about 3 1/2 cups.

BARDED TURKEY WITH CORN BREAD STUFFING

Barded Turkey with Corn Bread Stuffing image

As a newlywed, I didn't know much about roasting a turkey. Then our pastor, an excellent cook, told me about barding - placing or tying bacon on the turkey to prevent drying during roasting. The fat bastes the turkey while it cooks, keeping it moist and adding flavor.

Provided by Taste of Home

Categories     Dinner

Time 4h50m

Yield 16 servings (12 cups stuffing).

Number Of Ingredients 11

3/4 pound bulk pork sausage
1 medium red onion, chopped
1 package (14 ounces) crushed corn bread stuffing
2 medium apples, peeled and chopped
1 cup raisins
1/2 cup butter, melted
1 to 2 tablespoons poultry seasoning
1/2 teaspoon crushed red pepper flakes
2-1/2 to 3 cups chicken broth
1 turkey (16 pounds)
1 pound sliced bacon, divided

Steps:

  • In a large skillet, cook sausage and onion until meat is no longer pink; drain. Transfer to a large bowl; add the stuffing, apples, raisins, butter, poultry seasoning and pepper flakes. Add broth; toss to combine., Just before baking, loosely stuff turkey. Skewer turkey openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Place several bacon strips over the turkey. , Bake, uncovered, at 325° for 1 hour; replace bacon with new bacon strips (discard cooked bacon or save for another use). Bake 3-1/2 to 4 hours longer or until a thermometer reads 165° when inserted in center of stuffing and the thigh reaches at least 170°, replacing bacon each hour and basting occasionally with pan drippings. BRINED AND ROASTED TURKEY

Brined and Roasted Turkey image

Serve up a succulent turkey that has a balance of moist white and dark meat using chef Chris Schlesinger's technique for preparing and roasting a bird.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes

Number Of Ingredients 14

2 gallons cold water
2 cups bourbon
2 cups plus 2 tablespoons coarse salt
1 cup sugar
1 twelve- to fifteen-pound turkey, giblets removed and rinsed
1 tablespoon freshly ground white pepper
1 tablespoon freshly ground black pepper
Cornbread, Apple, and Sausage Stuffing
4 cups Homemade Chicken Stock, or low-sodium canned
2 medium onions, roughly chopped
2 carrots, roughly chopped
2 celery stalks, roughly chopped
1/2 cup coarsely chopped fresh flat-leaf parsley stems (about 1 bunch)
Thanksgiving Gravy, for serving (optional)

Steps:

  • In a pot large enough to accommodate the turkey, combine 2 gallons water, the bourbon, 2 cups salt, and the sugar. Stir to dissolve salt and sugar. Add turkey, and refrigerate for 18 to 36 hours.
  • Remove turkey from the brine, and dry well with paper towels. Let stand, covered, at room temperature for 1 to 2 hours.
  • Preheat the oven to 325 degrees. In a small bowl, combine the remaining 2 tablespoons salt and the white and black pepper. Rub the inside and outside of the turkey with the salt-and-pepper mixture. Fill the large cavity and neck cavity with as much stuffing as they hold comfortably. Do not pack tightly, or the stuffing will not cook through. (If all the stuffing does not fit, simply transfer the extra to a buttered baking dish, and bake covered, for 30 minutes and uncovered for 15 minutes more in a 375 degree oven.) Tie the legs together loosely with kitchen twine. Fold the neck flap under, and secure with toothpicks. Place the turkey, breast side up, on a roasting rack in a heavy metal roasting pan. Fold the wing tips under the turkey.
  • Soak a clean kitchen towel in the chicken stock. Lift the towel out of the stock, and squeeze it slightly, leaving it very damp. Spread it evenly over the turkey. Place the turkey in the oven so breast is facing the front of the oven. Roast for 3 hours, basting every 30 minutes.
  • Carefully remove the towel. Turn roasting pan so the breast is facing the back of the oven. Baste turkey with pan juices. The skin gets fragile as it browns, so baste carefully. Add onions, carrots, celery, and parsley stems to the roasting pan around the turkey. Roast 1 hour more, basting after 30 minutes.
  • Insert an instant-read thermometer into the thickest part of the thigh. Do not poke into a bone. The temperature should reach 165 degrees and the turkey should be golden brown. The breast does not need to be checked for temperature. If the legs are not fully cooked, baste the turkey, return to the oven, and cook for 15 to 20 minutes.
  • When fully cooked, remove the turkey from the oven, and let it rest, covered, for at least 20 minutes. Transfer to a carving board. Make the gravy, and serve with turkey.

Yield 10 serving(s)

Number Of Ingredients 28

1 (14 lb) fresh turkey, preferably organic, neck, heart, gizzard removed
3 cups kosher salt
1/2 cup sugar
1 small yellow onion, chopped
1 bunch fresh thyme
1 tablespoon peppercorn, cracked
4 tablespoons unsalted butter, room temperature
4 tablespoons unsalted butter, melted
1 bunch fresh sage
fresh ground pepper
1/2 cup olive oil
cornbread, day old crumbled (8-inch pan)
2 tablespoons unsalted butter
2 tablespoons olive oil
3 sweet Italian sausages, casings removed
1 small yellow onion, finely chopped
3 stalks celery & leaves, finely chopped
3 large eggs, beaten
1 teaspoon dried thyme, crumbled
fine sea salt
fresh ground pepper
2 tablespoons minced fresh flat leaf parsley
1 1/2 cups turkey stock
1/3 cup all-purpose flour
1/2 cup dry white vermouth
1 1/2 cups turkey stock
fine sea salt
fresh ground black pepper

Steps:

  • Rinse the turkey inside and out under cold running water.
  • Pull out and discard the excess fat and any feather ends.
  • Choose a stockpot large enough to hold the turkey and fit inside your refrigerator.
  • Fill the pot one-third full with cold water.
  • Stir in the kosher salt, sugar, onion, thyme, and peppercorns.
  • Add the turkey, breast side down, and fill with more water so it reaches as far above the turkey as possible.
  • Cover with the lid and refrigerate for 24 hours.
  • Two hours before roasting, remove the turkey and discard the brine.
  • Rinse the turkey inside and out under cold running water.
  • Return the turkey to the pot and add cold water to cover.
  • Let stand at room temperature to remove some of the brine from the bird.
  • To roast the turkey, position a rack in the lower third of the oven and preheat to 425 degrees.
  • Drain the turkey and pat dry with paper towels inside and out.
  • Slide your fingers between the skin and breast to loosen.
  • Spread half of the softened butter under the skin over the breast, then insert 12 large sage leaves under the skin, spacing them evenly.
  • Season the neck and body cavities with pepper (do not salt, as the bird was brined).
  • Place the remaining sage sprigs in the body cavity.
  • Truss the turkey, if desired.
  • Turn the bird on its back and rub all over with the remaining softened butter.
  • Place the bird, breast side up, on a rack in a large flameproof roasting pan.
  • In a large bowl, combine the melted butter and oil to use for basting.
  • Pour 1 inch of water into the bottom of the pan.
  • Decrease oven temperature to 325 degrees and roast the turkey for 3-3 ½ hours, basting the turkey every hour with the butter mixture and adding water to the pan if needed.
  • Begin testing for doneness after 2 ½ hours.
  • An instant read thermometer inserted into the thickest part of the thigh (but not touching the bone) should register 165 degrees, and the juices should run clear when the thigh is pierced with a knife.
  • Transfer the turkey to a carving board, cover loosely with foil, and let rest for 30 minutes.
  • While the turkey is roasting, make the dressing.
  • Dressing: butter a 13 x 9 inch baking dish.
  • In a large frying pan, melt the butter with the oil over medium heat.
  • Add the sausages and cook, stirring occasionally, until lightly browned, about 5 minutes.
  • Add the onion and cook until translucent, 2-3 minutes.
  • Add the sausage mixture and celery to the cornbread and toss well.
  • Stir in the eggs, thyme, ½ tsp sea salt, ½ teaspoon pepper, and the parsley.
  • Stir in as much of the stock as needed to make a moist mixture.
  • Transfer to the prepared dish and cover with foil.
  • About 45 minutes before the turkey is done, place the dressing in the oven and bake for 45 minutes.
  • Remove the foil and bake until lightly browned and crisp on top, about 20 minutes.
  • Gravy: pour the drippings from the turkey roasting pan into a large glass measuring pitcher.
  • Let the fat rise to the surface, then pour or spoon off all the fat, reserving ¼ cup.
  • Return the reserved fat to the pan.
  • Place the pan over 2 burners and turn the heat to medium.
  • Stir in the flour and cook, stirring constantly, for 2-3 minutes.
  • Add the vermouth and stir to scrape up the browned bits from the pan bottom.
  • Add enough stock to the drippings to make 2 cups and add to the pan.
  • Cook, stirring frequently, until the gravy thickens, about 5 minutes.
  • Add more stock, if needed, and sea salt and pepper to taste.
  • Carve turkey and serve with gravy and dressing.
